LEMON VERBENA SYRUP

Yield Makes about 3 cups

Number Of Ingredients 3

2 cups water
1 2/3 cups sugar
20 to 30 large fresh lemon verbena leaves

Steps:

  • In a medium saucepan set over medium heat, bring the water and sugar to a boil. Add the lemon verbena leaves and cover the pan. Steep for 15 minutes.
  • Strain the syrup through a fine-mesh strainer, discard the leaves, and let cool. Store the syrup in an airtight container in the refrigerator for up to 4 days.
  • Cherry Verbena Soda
  • For one drink, fill a tall glass with ice. Add 1 tablespoon of the Lemon Verbena Syrup, 2 tablespoons of Sour Cherry Syrup , and a few dashes of acid phosphate or lemon juice or citric acid solution. Top with seltzer and mix gently. Garnish with lemon verbena leaves and maraschino cherries, if desired.

4 cups chilled club soda or seltzer

Steps:

  • In heavy medium saucepan over medium heat, stir together water and sugar until sugar dissolves. Simmer 3 minutes. Remove from heat, and add lemon verbena. Let steep 10 minutes, then strain. Fill 4 tall glasses with ice. Divide syrup among them, pour in club soda, stir, and serve.

Steps:

  • Combine water, sugar, and lemon verbena leaves in a small saucepan. Bring to a boil, stirring until sugar dissolves. Simmer for 1 minute. Remove from heat and let syrup steep, about 30 minutes.
  • Pour syrup into a sterilized glass jar through a mesh strainer to remove lemon verbena leaves; let cool.

1/2 cup sugar
3/4 ounce fresh herbs, such as basil, lemon verbena, mint, tarragon, or thyme
1 teaspoon freshly squeezed lemon juice
Ice, for serving
Sparkling water or club soda, for serving

Steps:

  • Put sugar and 1 cup water into a medium saucepan over medium heat. Bring to a simmer, stirring until the sugar has dissolved. Remove from heat; add herbs. Cover; let cool completely.
  • Pour syrup through a fine sieve into a small bowl; discard herbs. Stir in lemon juice. Refrigerate at least 30 minutes.
  • Fill glasses with ice. Add 2 to 4 tablespoons syrup; top with sparkling water or club soda, and stir.

This is a simple detox tea. Lemon verbena is delicious! I came across it while I was picking up my summer herb plants last spring. I had never heard of it before but learned it is good for cooking and tea. Little did I know this little herb has some amazing detox and medicinal benefits. I love lemon but hate what the acid does to my teeth. With lemon verbena you get the flavor of lemon without the acid.

VERBENA SPRITZ

A stunning summer cocktail, create this dazzling verbena spritz ideally when lemon verbena is in season, or buy the dried leaves from a tea specialist

35g fresh lemon verbena leaves (or 10g dried if you can't get fresh ones)
250g caster sugar
ice
25ml fino sherry (we used Tio Pepe)
1-2 dash lemon bitters
prosecco to mix
strip of rolled lemon zest skewered with a cocktail stick and a sprig of mint

Steps:

  • Start by making the lemon verbena cordial. Pour 350ml water into a saucepan and bring to a rolling boil. Add the lemon verbena and let steep for a few moments until the leaves have wilted a little, then add the caster sugar. Mix well until the sugar has dissolved. Turn the heat off and allow to cool. Once cool, transfer to a sealable container and place in the fridge for a minimum of 12hrs - or overnight. Then simply strain off and discard the leaves and bottle the cordial in a steralised bottle - it will keep for a week in the fridge.
  • To make the cocktail fill a wine glass two-thirds full with ice. Pour in the sherry, 25ml of the lemon verbena cordial and bitters and a splash of prosecco.
  • Stir to mix, adding a few more ice cubes and another dash of the prosecco. Finally, top with the remaining prosecco and give it a last mix before garnishing with a strip of lemon zest on a cocktail stick and a sprig of fresh mint.
