LUSCIOUS LEMON BARS



Luscious Lemon Bars image

A buttery shortbread crust, luscious lemon filling, and dusting of powdered sugar make these lemon bars as pretty as they are delicious!

Number Of Ingredients 10

1¾ cup all-purpose flour, spooned into measuring cup and leveled-off
¼ cup cornstarch
1 teaspoon salt
1 cup Confectioners' sugar, plus more to decorate finished bars
2 sticks (1 cup) cold unsalted butter, cut into ½-inch pieces
6 large eggs
3 cups granulated sugar
2 tablespoons lemon zest (be sure to zest the lemons before juicing)
⅔ cup freshly squeezed lemon juice, from 5 to 6 lemons
⅔ cup all-purpose flour

Steps:

  • Adjust an oven rack to the middle position and preheat the oven to 350°F.
  • Cover a 9x13-in metal baking pan with heavy-duty aluminum foil (see note below). Push the foil neatly into the corners and up the sides of the pan, using two pieces if necessary to ensure that the foil overlaps all edges (the overhang will help removal from the pan). Spray the foiled pan with nonstick cooking spray.
  • Place the flour, corn starch, salt and Confectioners' sugar in the bowl of a food processor fitted with the blade attachment and mix for a few seconds. Add the butter and mix to blend until the mixture resembles coarse meal, 10 to 15 seconds. Sprinkle the mixture into the prepared pan and press firmly with your fingers into an even layer, building up a thin ¾-inch edge around the sides (this keeps the filling from spilling beneath the crust). Refrigerate for 30 minutes or freeze for 15 minutes.
  • Bake the crust until lightly golden, 15 to 20 minutes.
  • In a large bowl, whisk together the eggs, sugar, lemon juice, lemon zest, and flour. Be sure no lumps of flour remain.
  • When the crust is ready, give lemon mixture a quick final stir and then pour over top. Immediately return the pan to the oven and bake another 30 to 35 minutes, or until the topping is set and firm. Let the bars cool on a rack to room temperature; it will take several hours.
  • To cut, use the foil overhang to lift the baked square out of pan and onto a cutting board. Carefully loosen the foil from the edges of the crust, using a knife if necessary. Using a sharp knife, cut into squares or triangles. Use a fine sieve to dust the squares with Confectioners' sugar. Store the bars in a covered container in the refrigerator for up to 4 days. Serve chilled or room temperature.
  • Freezer-Friendly Instructions: The bars can be frozen for up to 3 months. After they are completely cooled, freeze the batch whole, covered tightly with aluminum foil or plastic freezer wrap. Before serving, remove them from the freezer and let them thaw overnight in the refrigerator. Cut the bars and then sprinkle with Confectioners' sugar before serving.
  • Note: Be sure to use heavy-duty aluminum foil; regular aluminum foil may stick. Parchment paper can also be used to line the pan.

1/2 cup butter, softened
3/4 cup sugar
2 eggs
2 tablespoons flour
1/4 teaspoon baking powder
3 tablespoons lemon juice
powdered sugar, for sprinkling optional

Steps:

  • For crust, combine 1 1/3 cups flour, 1/4 cup sugar, and 1/2 cup butter. Beat at low speed, 2 to 3 minutes.
  • Press on bottom of ungreased 8 inch square baking pan.
  • Bake at 350 degrees for 15 to 20 minutes.
  • For filling, combine 3/4 cup sugar, eggs, 2 tbsps. flour, baking powder and lemon juice. Beat at low speed 1 to 2 minutes.
  • Pour over hot crust.
  • Continue baking for 18 to 20 minutes or until filling is set.
  • Sprinkle with powdered sugar; cool.
  • Cut into bars.

These Classic Lemon Bars feature an easy homemade shortbread crust and a sweet and tangy lemon filling. These bars are so easy to make and perfect for lemon lovers!

Number Of Ingredients 9

1 and 3/4 cups (220 grams) all-purpose flour
1/4 cup (32 grams) cornstarch
1/2 cup (100 grams) granulated sugar
1/4 teaspoon salt
1 cup (230 grams) unsalted butter (, softened)
1 1/2 cups (300 grams) granulated sugar
1/4 cup (32 grams) all-purpose flour
4 large eggs (, room temperature)
1/2 cup (120ml) fresh lemon juice

Steps:

  • Preheat the oven to 350°F (177°C). Line a 9x13-inch baking pan with aluminum foil or parchment paper, making sure to leave some overhang for easy removal, and spray with nonstick cooking spray. Set aside.
  • In a large mixing bowl, whisk together the flour, cornstarch, sugar, and salt.
  • Cube the butter into smaller pieces and add to the dry ingredients. Using a pastry cutter (or your hands) cut the butter into the mixture until it's crumbly and starts to come together.
  • Scoop the mixture into the prepared baking pan and press it down into one even layer.
  • Bake at 350°F (177°C) for 20-25 minutes, or just until the top is set and edges are lightly golden brown. Remove from the oven and set aside while you prepare the filling. Keep oven temperature at 350°F (177°C).
  • In a large mixing bowl, whisk together the granulated sugar and flour. Add in the eggs and lemon juice and mix until fully combined. Pour the lemon filling over the warm crust and return to the oven.
  • Bake for 18-22 minutes or until the lemon filling is set and no longer jiggles.
  • Remove from the oven and transfer to a wire rack to cool completely for 1-2 hours, then cover tightly, and refrigerate for at least two hours. Sift powdered sugar on top, slice into bars, and enjoy!

This recipes was given to me in the 80"s by my friend Ardy. My family has loved it ever since. Ardy moved away and we have lost touch with one another but when I make these I remember her with a smile on my lips.

1 1/3 cup(s) flour sifted

2 - eggs beaten

  • Preheat oven to 350. Line an 8 inch square pan with foil, making sure to fold up and over the sides.
  • Mix together 1st 3 ingredients to form a crust. It may be a bit crumbly. Press down with fingers tips pressing the edges slightly up.

  • Prepare filling using the rest of the ingredients, mix well. Pour over slightly baked crust. Bake 18 to 20 mins or until set. Sprinkle with powdered sugar.

2 c. sugar, divided
2-2/3 c. plus 1/4 c. all-purpose flour, divided
1 c. butter, softened
4 eggs, beaten
6 T. lemon juice
Garnish: powdered sugar

Steps:

  • Stir 1/2 cup sugar and 2-2/3 cups flour together. Cut in butter; mix until crumbly. Pat into the bottom of a greased 13"x9" baking pan. Bake at 350 degrees for 15 to 20 minutes; remove from oven. In a separate bowl, mix together eggs, lemon juice and remaining sugar and flour, blending well. Pour over baked crust and return to oven for an additional 20 minutes. Cool. While still slightly warm, dust with powdered sugar. Makes about 1-1/2 dozen.

1/4 cup lemon juice
1 tablespoon grated lemon zest
1-3/4 cups all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon cream of tartar
1/4 teaspoon salt
1/2 cup finely chopped almonds
Confectioners' sugar

Steps:

  • In a bowl, cream butter, sugar and egg until well blended. Add lemon juice and zest. Combine flour, baking soda, cream of tartar and salt; stir into creamed mixture. Add almonds. Cover and refrigerate the dough for at least 1 hour or overnight. , Roll into 1-in. balls. Place on ungreased baking sheet. Bake at 350° for 10-12 minutes or until bottoms are lightly browned (cookies will not brown on top). , Remove immediately to wire racks; cool for 5 minutes, then roll in confectioners' sugar.

I love this recipe! I've made them for friends, neighbors, parties and everyone loves them. They turn out great every time, and the flavor is light, sweet, slightly tart...and super delicious! Its' a really recipe to double and use a 13x9" pan. I also will make these and cut them into smaller squares to add to my Christmas cookie trays. It's a "win-win" any time of the year.

CRUST:
1/2 cup(s) butter
1 1/3 cup(s) flour
1/4 cup(s) sugar
FILLING:
2 - eggs
3/4 cup(s) sugar
2 tablespoon(s) flour
1/4 teaspoon(s) baking powder
3 tablespoon(s) lemon juice

Steps:

  • Preheat oven to 350'F.
  • In mixing bowl, combine all crust ingredients. Mix on low speed until blended, and will stick together when pressed.
  • Pat crust into a greased (I use Pam) 8" square pan. Build up the sides about 1/2" around pan. Bake near the center of the oven for 12-14 minutes or until edges turn lightly browned.
  • Meanwhile, prepare filling by whisking all filling ingredients together. When crust is ready, pour the filling over it while still hot, and return to the oven for about 20 minutes or until set. I run a sharp knife all around the edges before it cools off, it loosens it up.
  • Dust with confectioner's sugar, and let cool completely. Cut into squares. You may want to dust them again...I do!

1/4 c powdered sugar
1/2 c butter, softened
2 eggs
3/4 c granulated sugar
3 Tbsp lemon juice
2 Tbsp all purpose flour
1/4 tsp baking powder
additional powdered sugar for dusting

Steps:

  • 1. Stir together flour and powdered sugar; cut in butter until mixture clings together. Pat into 8-inch square pan. Bake for 10-12 minutes until just golden brown.
  • 2. Beat eggs; add sugar and lemon juice. Beat until thick and smooth. Add 2 Tbsp. flour and baking powder. Pour over baked layer. Bake at 350° for 20-25 minutes. Sift powdered sugar over.
  • 3. Cool, cut into bars. Makes 16 (2x2") squares.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.
  • Shape dough into 1-inch balls and roll in reserved 1/2 cup lemon sugar. Place 2 inches apart on prepared baking sheet. Press cookies down slightly to flatten and sprinkle each cookie with about 1/8 teaspoon of the remaining lemon sugar.
  • Bake in the preheated oven until cookies are firm on bottoms, 10 to 12 minutes.
