LEMON LIME WHITE CHOCOLATE CHIP COOKIES

2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon kosher salt
2 sticks (1 cup) unsalted butter, at room temperature
3/4 cup light brown sugar
3/4 cup granulated sugar
1 large egg, at room temperature
2 tablespoons lemon zest
2 tablespoons lime zest
1 tablespoon vanilla extract
2 cups white chocolate chips, preferably Ghirardelli

Steps:

  • Preheat the oven to 375 degrees F and line two rimmed baking sheets with parchment paper.
  • Add the flour, baking soda and salt to a medium bowl and whisk to combine. Set aside.
  • Add the butter and sugars to the bowl of a stand mixer fitted with the paddle attachment. Cream the butter and sugar together until lighter in color and fluffy, 1 to 2 minutes, scraping down the bowl as needed. Add the egg and beat until incorporated. Add the lemon zest, lime zest and vanilla extract. Beat until evenly combined. Add the dry ingredients to the butter-sugar mixture and mix until just incorporated. Remove the bowl from the stand mixer and fold the chocolate chips in with a rubber spatula.
  • Use a 1-tablespoon cookie scoop to scoop the cookie dough onto the prepared baking sheets, keeping them 2 inches apart. Fill each tray with 12 to 16 cookies, then bake until the edges are golden brown and the centers are still soft, 8 to 10 minutes.
  • Allow the cookies to cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.
  • Repeat the process with the remaining dough. Alternatively, the cookie dough can be wrapped in plastic wrap and frozen for up to 1 month.

1 cup confectioners' sugar
3 tablespoons grated lime zest
1 tablespoon grated lemon zest
1/4 cup lemon juice
2 cups all-purpose flour

Steps:

  • In a small bowl, beat butter and confectioners' sugar until blended. Beat in citrus zest and lemon juice. Gradually beat in flour., Shape into a disk; wrap. Refrigerate 2 hours or until firm enough to roll., Preheat oven to 325°. On a lightly floured surface, roll dough to 1/8-in. thickness. Cut with a floured 2-in. round cookie cutter. Place 1 in. apart on ungreased baking sheets., Bake 16-19 minutes or until edges are light brown. Remove from pans to wire racks to cool.

1 teaspoon lemon extract
1 teaspoon lime rind (finely grated)
2 tablespoons milk
1/4 teaspoon salt
2 1/2 cups flour
1/2 cup icing sugar
2 teaspoons lemon juice

Steps:

  • Cream butter and sugar together.
  • Add egg, lemon extract and lime rind.
  • Mix in milk and salt, then add 1 cup of flour at a time, mixing well.
  • Let stand for 5 minutes.
  • Roll dough into 10 inch long ropes.
  • Fold rope in two and twist to make a braid like cookie.
  • Bake 10-12 minutes.
  • Mix icing sugar with lemon juice.
  • Brush over cookies while still warm.

1 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
¼ cup fresh lime juice
1 ½ teaspoons grated lime zest
½ cup confectioners' sugar for decoration

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, cream butter, sugar, egg, and egg yolk until smooth. Stir in lime juice and lime zest. Combine the flour, baking powder, and salt; blend into the creamed mixture. Form dough into 1/2 inch balls, and arrange on the prepared cookie sheet.
  • Bake 8 to 10 minutes in the preheated oven, or until lightly browned. Cool on wire racks. Sift confectioners' sugar over cookies while still warm.

1 1/2 cups sugar
1/2 teaspoon double strength vanilla extract (or 1 tsp. regular strength vanilla)
1/2 teaspoon lemon extract
2 large eggs
2 1/2 cups all-purpose flour
4 -5 key limes, juice and grated peel (about 8 Tablespoons juice and 1 Tablespoon peel)
powdered sugar, for dusting

Steps:

  • 1. Preheat oven to 375.
  • 2. Cream together the butter, sugar, and extracts. Add the eggs and mix well. Gradually add the flour and mix well. Lastly, mix in the grated lime peel and juice (save the squeezed limes.) Drop the dough onto greased cookie sheets by rounded tablespoons. Bake at 375 for 10-12 minutes.
  • 3. As soon as you have removed the cookies from the oven, pat the top of each cookie with squeezed lime to get a drop of juice on top of each cookie. Then immediately dust well with powdered sugar.

1 cup butter, softened
1/2 cup confectioners' sugar
2 teaspoons grated lime zest
1-3/4 cups all-purpose flour

FILLING:
4 large eggs
1-1/2 cups sugar
1/4 cup all-purpose flour
1/2 teaspoon baking powder
1/3 cup lemon juice
2 teaspoons grated lemon zest
Confectioners' sugar

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and confectioners' sugar until light and fluffy, 5-7 minutes. Beat in lime zest. Combine flour and salt; gradually add to creamed mixture and mix well. , Press into a greased 13x9-in. baking dish. Bake just until edges are lightly browned, 13-15 minutes., Meanwhile, in another large bowl, beat eggs and sugar. Combine flour and baking powder. Gradually add to egg mixture. Stir in lemon juice and zest; beat until frothy. Pour over hot crust. , Bake until light golden brown, 20-25 minutes. Cool on a wire rack. Dust with confectioners' sugar. Cut into squares. ¼ teaspoon baking powder

1 egg

1 drop yellow food coloring, or as desired

Steps:

  • Sift flour, baking powder, salt, and baking soda together in a medium bowl. Set aside.
  • Beat sugar and butter together in a large bowl using a handheld electric mixer or a stand mixer with the paddle attachment until creamy. This is a cookie recipe I got from my mother's cookie book. You can also use the same recipe to make orange cookies by substituting 2 tbs of grated orange peel for the lemon and lime peels and 1/4 cup orange juice for lemon and lime juices in the dough. Substitute 1 tsp grated orange peel for the lime peel and about 2tbs orange juice for the lemon juice and water in the frosting.
