1 cup freshly squeezed orange juice
1/2 cup freshly squeezed lemon juice
3 to 4 green onions, thinly sliced
3 cloves garlic, chopped
1/2 cup plus 1 tablespoon olive oil
1/2 teaspoon red pepper flakes
Four 6-ounce pieces cod
8 ounces string beans, trimmed
8 ounces cremini mushrooms, thinly sliced
1/2 sweet onion, cut in half lengthwise and then crosswise into 1/4-inch slices
1 cup grape tomatoes, halved lengthwise
2 to 3 tablespoons olive oil
Kosher salt and freshly ground black pepper

Steps:

  • For the marinade: In a small bowl, combine the orange juice, lemon juice, green onions, garlic, olive oil and red pepper flakes.
  • For the fish packets: Cut four 12-by-17-inch pieces of aluminum foil; place one piece of fish in the center of each. Sprinkle the fish with salt and pepper. Divide the marinade evenly among the packets (about 1/2 cup for each).
  • In a large bowl, toss the string beans, mushrooms, onions and tomatoes with the olive oil. Season the vegetables with salt and pepper, then divide evenly among the packets. For each packet, fold the foil over at the top to close, and then close up the sides to seal completely. Chill in the refrigerator for 30 minutes before cooking, to give the fish time to marinate.
  • Preheat the oven to 400 degrees F.
  • Transfer the packets to a baking sheet. Bake until the fish flakes, 12 to 15 minutes. Serve immediately.

This Easy Lemon Butter Fish only takes 15 minutes and a handful of ingredients. It's a delicious and nutritious. Pair with rice and vegetables for a healthy weeknight dinner.

4 good-sized firm white fish fillets (about 6 inches long, 1-inch thickness (cod, halibut, or mahi would work well.))
3 TB melted butter (I use salted, but unsalted is fine)
Juice and zest from 1 medium lemon
1/2 tsp kosher salt (plus extra to taste)
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1/4 tsp freshly ground black pepper
3 TB olive oil
freshly chopped basil or parsley leaves (for garnish and flavor)
extra lemon slices for serving

Steps:

  • Use paper towels to thoroughly pat-dry excess moisture from fish fillets - this step is crucial for fish to brown nicely in pan. Set aside.
  • In a bowl, combine melted butter, lemon juice and zest, and 1/2 tsp kosher salt. Stir to combine well. Taste and add a bit more kosher salt, if desired.
  • In a separate bowl, combine the remaining 1/2 tsp kosher salt, paprika, garlic powder, onion powder, and black pepper. Evenly press spice mixture onto all sides of fish fillets.
  • In a large, heavy pan over medium high heat, heat up the olive oil until hot. Once your oil is sizzling, Cook 2 fish fillets at a time to avoid overcrowding (allows for even browning.) Cook each side just until fish becomes opaque, feels somewhat firm in the center, and is browned - lightly drizzle some of the lemon butter sauce as you cook, reserving the rest for serving. Take care not to over-cook, as that will result in a tougher texture. Season with extra kosher salt and freshly ground black pepper to taste.
  • Serve fish with with remaining lemon butter sauce, basil or parsley, and lemon wedges.

2 tablespoons margarine or butter
2 cups water
1/2 teaspoon grated lemon peel
1 bag (1 pound) frozen corn, broccoli and red peppers
1 pound mild-flavored fish fillets, about 1/2 inch thick
1/2 teaspoon lemon-pepper seasoning
1 tablespoon lemon juice
2 tablespoons chopped fresh parsley

Steps:

  • In 12-inch nonstick skillet, cook rice and margarine over medium heat 2 to 3 minutes, stirring occasionally, until rice is golden brown. Stir in water, seasoning packet from rice mix and lemon peel. Heat to boiling; reduce heat. Cover and simmer 10 minutes.
  • Stir in vegetables. Heat to boiling, stirring occasionally. Cut fish into 4 serving pieces; arrange on rice mixture. Sprinkle fish with lemon-pepper seasoning; drizzle with lemon juice. Reduce heat. Cover and simmer 8 to 10 minutes or until fish flakes easily with fork and vegetables are tender. Sprinkle with parsley.

Roasted Lemony Fish With Brown Butter, Capers and Nori image

Drizzling a mild, white fish with a caper-spiked browned butter is classic for a reason. The butter adds richness to the lean fish, and the tanginess of capers and lemon perks up any mellowness. In this version, adapted from the chef Danielle Alvarez's cookbook "Always Add Lemon" (Hardie Grant, 2020), nori oil adds another layer of umami flavor. It's both bright and deep, with a silky texture that's easy to achieve. Serve it with rice or bread to mop up all the saline, buttery juices.

2 1/4 pounds/6 (6-ounce) fillets white fish, such as hake or cod
Salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
2 lemons
4 tablespoons unsalted butter
1 cup parsley leaves and tender stems, coarsely chopped
2 tablespoons capers, drained
10 nori seaweed snack sheets, crumbled (about 1/3 cup)
1/4 cup extra-virgin olive oil
Salt and freshly ground black pepper

Steps:

  • Heat oven to 475 degrees. Put fish on a rimmed baking sheet and season with salt and pepper; set aside.
  • Make the nori oil: Place crumbled seaweed snacks in a blender or mini food processor. With the motor running, drizzle in 1/4 cup of the olive oil and continue to blend until the oil is black, 1 to 3 minutes, scraping down the sides if needed. (Because there's such a small amount of liquid, you may need to stir a lot in between pulses. If you like, you can double the ingredients and save some for next time; it will keep for at least a few weeks in the fridge.) When the oil is well blended, stir in a pinch each of salt and pepper and set aside.
  • Pour the remaining 1/4 cup olive oil all over fish. Thinly slice 1 1/2 lemons. (Save the other lemon half for serving.) Arrange lemon slices on top of the fish. Roast until the fish is opaque and just cooked through but not yet flaky, about 10 to 15 minutes, depending on the thickness of fish. Remove from oven and brush two-thirds of the nori oil on top of fish; set aside to rest while preparing the butter.
  • In a small saucepan, melt the butter over medium heat. Cook, swirling occasionally, until the foam subsides, the milk solids turn golden-brown and it smells nutty and toasty, 3 to 5 minutes. Add parsley and capers, and cook for another minute. (Be careful when adding capers, as they may splatter once they hit the hot butter.) Pour the sizzling butter mixture over the fish and squeeze a little lemon juice from the reserved half on top. Serve immediately with remaining nori oil on the side for more drizzling.

1 lemon, sliced very thin
24 ounces salmon fillets (4 fillets, can substitute white fish)
12 ounces asparagus, chopped (can sub other veggies like zucchini, red bell pepper, mushrooms, or combine all of these for variety)
1 tablespoon extra virgin olive oil
2 tablespoons lemon juice
1/2 teaspoon salt

Steps:

  • Heat oven to 425 degrees. Tear four lengths of parchment paper or foil, each about 18 inches long. Fold each length across in half; unfold. Divide lemon slices among parchment pieces, piecing them in a row; top with fish. Place vegetables beside the fish.
  • Whisk together the olive oil, lemon juice and salt; drizzle over the fish. Crimp or fold over the edges to form sealed packets. Place packets on two baking sheets.
  • Bake until the packets are puffed and fish is cooked through, 12-15 minutes. transfer packets to serving plates. Cut the top of the packets open carefully (to avoid the escaping steam). Serve.

A light supper of white fish with a breadcrumb coating and ratatouille-inspired roast vegetable mix of peppers, courgettes and onions

3 mixed peppers , deseeded and sliced
2 red onions , cut into wedges
3 courgettes , cut into rounds
2 garlic cloves , finely chopped
2 tsp dried oregano
50g black olive
1 tbsp vegetable oil
4 tbsp dried breadcrumb
zest ½ lemon , plus wedges to serve
1 tsp crushed black peppercorn
3 frozen white fish fillets (such as cod, haddock or pollack)
2 tbsp plain flour
1 medium egg , beaten

Steps:

  • Toss the vegetables with the garlic, herbs, olives and oil. Season and tip onto a tray lined with baking parchment. Open-freeze the veg until solid, then transfer to a large freezer bag and put in the freezer.
  • Whizz the breadcrumbs until fine, then toast for a few secs in a dry frying pan, shaking to prevent them burning. Tip into a bowl and mix with the lemon zest, pepper and a large pinch of salt. Tip into a small freezer bag and pop in the freezer. Both the vegetables and crumbs can be frozen for up to 3 months.
  • To cook from frozen, heat oven to 200C/220C fan/gas 7. Tip the vegetables into a roasting tin and cook for 15 mins. Meanwhile, dust the frozen fish in flour, brush lightly with the egg and cover with the frozen breadcrumbs. Pop the fish onto a grill rack and sit above the veg. Bake for 25 mins until the fish is cooked. Serve with lemon wedges.
