1/4 cup low fat cottage cheese
1 dash hot pepper sauce
1 dash crushed red pepper flakes
1 dash salt
1 dash black pepper

1 package (10 ounces) fresh spinach, torn
1-1/2 cups 4% cottage cheese
1/2 cup chopped pecans, toasted
1/2 cup sugar
3 tablespoons white vinegar
2 teaspoons prepared horseradish
1/2 teaspoon salt
1/2 teaspoon ground mustard

Steps:

  • In a large serving bowl, layer half of the spinach, cottage cheese and pecans. Repeat layers. In a small bowl, combine the remaining ingredients. Drizzle over salad; toss to coat.

  • Put 3⁄4 cup 1% cottage cheese into a bowl. Add 1⁄4 to 1⁄3 cup black beans. Add 1⁄3 cup salsa. Mix well and either dump onto a bed of salad greens or toss with 2-3 cups of salad greens.
