LEMON HERB MARINADE

Lemon Herb Marinade image

This easy Lemon Herb Marinade can be whipped up in 10 minutes. Zesty herbs and simple ingredients work together to elevate chicken, fish or pork. Feel free to switch up the herbs you use in this Lemon Herb Marinade. For example, for a lemon-rosemary marinade, consider substituting parsley for the basil and rosemary for the thyme. A good rule of thumb when mixing up marinades is, for fish, chicken and pork, light herbal notes tend to work well. This lemon and herb marinade is not to be missed.

EASY NO-FAIL LEMON CHICKEN MARINADE

Easy No-Fail Lemon Chicken Marinade image

This just might be the best chicken marinade, ever. It's incredibly versatile. Use for marinating chicken, turkey, pork, fish, shrimp, tofu or vegetables. When marinating meats and poultry, marinate at least 1 hour or overnight. When marinating something more delicate like fish, you only need to marinate 1 to 2 hours. You can also use this to baste while cooking or grilling, if you plan to do this, simply set a portion of the prepared marinade aside for basting. **This makes enough to marinate 2 to 2 ½ pounds of chicken.

Time 10m

Yield Makes approximately 1/2 cup

Number Of Ingredients 9

Zest of 1 lemon, peeled or finely grated
1/4 cup fresh lemon juice, 1 to 2 lemons
2 tablespoons olive oil
1 tablespoon Dijon mustard
1/2 teaspoon fine sea salt
1/4 teaspoon to 1/2 teaspoon red pepper flakes, depending on how spicy you like things
1/2 teaspoon fresh ground pepper
3 cloves garlic, crushed with the side of a large knife or minced
1/4 cup chopped fresh dill, parsley, cilantro, basil or a combination, optional

Steps:

  • Whisk lemon juice, olive oil, mustard, salt, red pepper flakes and black pepper together until the salt has dissolved. Stir in the garlic, lemon zest and herbs (if using). Refrigerate and use within 1 to 2 hours.
  • To marinate chicken, add the marinade and chicken to a resealable food-safe bag or container and marinate in the refrigerator. Since this is so flavorful, even 20 minutes will work wonders. We don't recommend marinating more than a day in advance since the lemon in the marinade can cause the chicken to toughen.

CHICKEN WITH A LEMON HERB SAUCE

Chicken with a Lemon Herb Sauce image

Provided by Food Network Kitchen

Categories     main-dish

Time 25m

Yield 4 servings

Number Of Ingredients 10

2 tablespoons extra-virgin olive oil
4 boneless skinless chicken breast halves
Kosher salt and freshly ground black pepper
1 clove garlic, peeled
1/4 teaspoon salt
1/2 cup chopped fresh parsley leaves
1/3 cup chopped fresh mint leaves
1 1/2 teaspoons freshly ground black pepper
1 lemon, zested and juiced
1/3 cup extra-virgin olive oil

Steps:

  • For the Chicken: Preheat an oven to 450 degrees F.
  • Heat a large ovenproof skillet over medium-high heat. Add the olive oil and swirl to coat the skillet. Season the chicken breast with salt and pepper on the smooth side of each breast. Place in the skillet seasoned side down and cook without disturbing until brown and crisp, about 3 to 4 minutes. Season the top side of the chicken and flip. Cook 1 minute over the burner; then transfer the skillet to the oven until chicken registers 165 degrees F on an instant-read thermometer, about 6 to 8 minutes more. Place on a cutting board and let rest for 5 minutes before slicing.
  • For the sauce: smash the garlic clove, sprinkle with the salt, and with the side of a large knife, mash and smear the mixture to a coarse paste. Transfer to a blender with the parsley, mint, pepper, lemon zest, and juice. Pulse until coarsely chopped and then slowly drizzle in the olive oil. Pour into a small bowl and adjust seasoning. Deglaze pan with the sauce, if desired, and serve with the chicken.

LEMON HERB MARINADE / PASTE FOR CHICKEN, PORK AND FISH

Lemon Herb Marinade / Paste for Chicken, Pork and Fish image

This is an awesome and simple, universal marinade that can be used for nearly anything. I've used it on many different cuts of pork and chicken, including whole rotisserie chickens and pork shoulders! It will likely work on beef too and I'll update the recipe after I try it on beef.

Time 10m

Yield 1 Batch, 1 serving(s)

Number Of Ingredients 8

2 lemons
8 garlic cloves
8 sprigs fresh rosemary
1 tablespoon dried thyme
2 tablespoons Dijon mustard
1 tablespoon kosher salt
2 tablespoons fresh ground black pepper
1/3 cup olive oil

Steps:

  • Drop everything into a food processor as is. Rind on lemon and all. The finished product is a thick paste. If you want to thin it out, you can add more olive oil, or omit the rind of the lemons. I prefer the paste and dip each piece of meat in the food processor by hand before transferring to the Ziploc bag to make sure it's well coated. Depending on what I'm marinating, I will let it sit in the mixture for 24-72 hours. I've used it in as few as 6 hours and it's still excellent.
  • Because this is more of a paste than a marinade, you can stretch it a long way. While this only yields a few cups, it is more than enough for a pack of boneless skinless breasts and family pack of pork chops.

LEMON, HERB & GARLIC MARINADE

Lemon, Herb & Garlic Marinade image

I've adapted this from a Jamie Oliver recipe. Jamie makes it with his 'flavour shaker' but as most people probably don't have one - you can use a mortar and pestle. Use this marinade for steak, chicken or fish. It imparts a wonderful flavour. We had it with steak and it made it beautifully moist and tender and lemony - quite a different taste for steak but absolutely delicious! Quantities given should make enough to marinade 2-3 steaks or 2 large chicken breasts or 4 fillets of fish.
