This vibrant lemongrass ginger sauce recipe uses ginger, lemongrass and just a touch of celery leaves to add freshness to seafood or chicken.

3 tablespoons olive oil
3 shallots (finely chopped)
1 inch lemongrass (finely chopped)
3 garlic cloves (chopped)
1 cup white wine
2 inches of fresh ginger (grated or finely chopped)
Juice of 1/2 lemon
2 tablespoons celery leaves (finely chopped)
Salt (to taste)

Steps:

  • In a large pan, heat the olive oil over medium-high heat until hot, about 2 to 3 minutes. Add the shallots and lemongrass and cook for 2 minutes, stirring often. Add the garlic and cook for another minute, stirring well.
  • Add the wine, the grated or finely chopped ginger and a little salt, then turn the heat up to high. Boil off the wine by half, about 5 minutes. Turn off the heat, add the lemon juice, one tablespoon of celery leaves, and taste for salt-add some if you need it.
  • Pour the sauce into a food processor and blitz it until it becomes a thick puree; it should look a bit like a light green mayo, as everything will emulsify.

From an Asian website featuring Laotian, Cambodian and Thai recipes and cookbooks. It is a Cambodian recipe. Cook time does not apply to step 3, as your choice of vegetables or meat will dictate how long it will cook.

1/3 cup lemongrass (sliced )
4 garlic cloves
1 teaspoon galangal (dried )
1 teaspoon ground turmeric
1 jalapeno chile (stemmed & seeded )
3 shallots
3 1/2 cups coconut milk
3 kaffir lime leaves
1 pinch salt or 1 pinch shrimp paste

Steps:

  • Puree together the lemon grass, garlic, galangal, turmeric, Jalape and shallots.
  • Bring the coconut milk to a boil and add the pureed ingredients, lime leaves, and salt and boil gently, stirring constantly, for about 5 minutes. Reduce the heat to low and simmer, stirring often, for about 30 minutes, or until lime leaves are tender and the sauce is creamy. Remove the leaves before serving.
  • To prepare one portion, pour 1/2 cup of this curry sauce into a shallow vessel or a wok. Add 1/2 cup of meat or vegetables, bring to a medium boil and cook to desired degree.

1 teaspoon olive oil
2 tablespoons finely chopped leeks, white part only
1 large shallot, finely chopped
1 clove garlic, minced
4 mushrooms, finely chopped
1 large stalk lemongrass, trimmed and soft bulb finely sliced
1 makrut lime leaf
1/4 cup dry white wine
6 tablespoons fish stock
1 cup heavy cream
1/2 pound unsalted butter
Few sprinkles of cayenne

Steps:

  • Heat oil in nonstick pan. Over low heat, saute leek, shallots, garlic, mushrooms, lemon grass and lime leaf. Cook for a few minutes, stopping before ingredients begin to take on color. Add wine, bring to a boil and reduce by two-thirds. Add fish stock and reduce by two-thirds.
  • Add cream, and simmer for 10 minutes; strain sauce. Clean pot or use fresh one. Return strained sauce to pot, and return to heat. Add a tablespoon of butter at a time to lightly boiling sauce, whisking until butter is incorporated. Season with cayenne, and serve over won tons.

This marinade is wonderful for any meat, but I use it on chicken then grill it. It's wonderful. The smell of the fish sauce is awful, but the end result is delicious.

3 stalks lemongrass, chopped, bottom white part only (yields 2/3 cup)
2 garlic cloves, sliced
1 tablespoon chili sauce (optional)
2 tablespoons soy sauce
2 tablespoons fish sauce
2 tablespoons sugar
1/4 teaspoon salt
3 tablespoons soya oil (I couldn't find this, so I used olive oil)

Steps:

  • Process lemon grass, garlic and chili sauce until it turns into a fine paste.
  • Combine paste and all other ingredients and mix well.
  • Marinade is ready to use after sitting for about 1 minutes.
  • Recipe yields enough marinade for 1-2 pounds of meat.
  • You can save the tops of the lemon grass to season soups and stocks or you can steep it with your tea to make lemon tea.
  • Simply put in zip-lock bag and freeze until needed.

10 mint leaves
15 cilantro leaves
2 ounces garlic
4 ounces red fresno bell peppers, seeded
1/4 cup fish sauce
1/4 cup corn syrup
3/4 cup lime juice
1/2 cup distilled vinegar
1 cup granulated sugar

Steps:

  • Combine all of the lemongrass sauce ingredients into a blender. Puree the ingredients until the garlic and lemongrass are finely chopped.

12 ounces green Chinese long beans or green beans, trimmed, cut into 1 1/2-inch pieces
2 tablespoons peanut oil
1 1/2 pounds skinless boneless chicken breast halves, cut crosswise into 1/2-inch-wide strips
1 medium onion, sliced
4 garlic cloves, minced
1/3 cup minced lemongrass*
3 tablespoons Thai fish sauce (nam pla)*
3 tablespoons sugar
2 teaspoons ground coriander
1 teaspoon turmeric
1/2 cup chicken stock or canned low-salt chicken broth
2 tablespoons spicy oyster sauce*

Steps:

  • Cook beans in large saucepan of boiling salted water just until crisp-tender, about 2 minutes. Drain.
  • Heat oil in heavy large skillet over high heat. Add chicken, onion and garlic; stir-fry until chicken is partially cooked, about 4 minutes. Add lemongrass and next 4 ingredients; stir 2 minutes. Add beans, stock and oyster sauce; reduce heat and simmer until sauce thickens and chicken is cooked through, about 4 minutes longer. Season with salt and pepper.
  • *Available at Asian markets and in some supermarkets.

Let sit, stirring often to keep aromatics from burning, 5 minutes (scallions will sizzle, turn bright green, and wilt almost immediately). Mix in Aji-No-Moto seasoning (if using) and season with salt.
  • Toast coriander seeds and cumin seeds in a dry small skillet over medium heat, shaking often, until spices are very fragrant and slightly darkened in color, about 3 minutes. Transfer to a spice mill or mortar and pestle and let cool. Finely grind, then transfer spice mix to a small bowl.
  • Place chicken, skin side up, on a cutting board. Using your palms, press firmly on breastbone to flatten breast; you may hear a crack. This means you’re doing it right. Set chicken, skin side up, on a large rimmed baking sheet. Season generously on both sides with salt, then sprinkle spice mix all over, getting in every nook and cranny.
