Steps:

  • 1. 1 cup Amish friendship batter 2 eggs 1-1/2 c. milk 2 tsp sugar 1/2 cup flour 1-1/2 c. cornmeal Combine in large bowl. Beat at medium speed for 2 minutes. Add: 1/4 cup oil 3/4 tsp baking soda 1/2 tsp salt 1 tsp baking powder Mix well. Pour in well-greased 9" pan. Bake at 425 degreesF 25-30 minutes.

We've perfected this Amish Friendship Bread cornbread so you could make a meal of it! Add corn kernels, chopped jalapeños, black beans, or a side of chili.

½ cup flour
1½ cups cornmeal
2 teaspoons sugar
1½ teaspoons baking soda
1 teaspoon salt
1 cup Amish Friendship Bread Starter
2 eggs
1 tablespoon oil
1½ cups milk or buttermilk
¼ cup butter (melted)

Steps:

  • Preheat oven 400° F (205° C). Oil a 9" cast-iron skillet or round pan. Place in over to preheat.
  • In a large bowl, combine flour, cornmeal, sugar, baking soda, and salt.
  • In a small bowl, combine starter, eggs, oil milk, and butter. Mix well.
  • Create a well in the center of the dry ingredients. Add wet ingredients to center of well and gently incorporate. Do not overmix.
  • Carefully remove the hot pan from the oven. Pour cornbread batter into pan and return to oven.
  • Bake for 25 minutes or until the top browns and the edges begin to pull away from the sides of the skillet..
  • ENJOY!

1 cup amish batter (use Amish Friendship Starter or your own recipe)
2 eggs
1 1/2 cups milk
2 teaspoons sugar
1/2 cup flour
1 1/2 cups cornmeal
1/4 cup oil
3/4 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon baking powder

Steps:

  • Combine all above in large bowl and beat at medium speed for 2 minutes.
  • Add: oil, baking soda, salt, and baking powder Mix well and pour in well greased 9" pan.
  • Bake at 425*F 25-30 minutes.

3 cups sugar, divided
3 cups milk, divided
3 cups flour, divided
1 cup oil
1/2 cup milk
3 whole eggs
1 teaspoon vanilla extract
2 cups flour
1 cup sugar
1 1/2 teaspoons baking powder
2 teaspoons cinnamon
1/2 teaspoon salt
1/2 teaspoon baking soda
1 (5 1/8 ounce) box instant vanilla pudding
1 cup chopped nuts
1 tablespoon cinnamon, combined with
1/2 cup sugar

Steps:

  • Place ONE cup each sugar, milk, and flour in large glass or plastic bowl.
  • Cover lightly with plastic wrap and set on your counter at room temperature. Stir with a wooden spoon everyday for 17 days.
  • On day 18 do nothing.
  • On days 19, 20, and 21, stir.
  • On day 22, add 1 cup sugar, 1 cup milk, and 1 cup flour, and stir again.
  • On days 23, 24, 25, and 26 stir.
  • On day 27, add 1 cup milk, 1 cup flour, and 1 cup sugar and stir.
  • It's now ready to use to make the bread.
  • Give away two cups of the starter to two friends, use one to make the bread, and keep one to keep the starter going. When you give away a cup of the starter, give these directions for keeping it going: Do not refrigerate; Do not use metal spoon or metal bowl; Do not cover tightly, cover loosely with plastic wrap.
  • AMISH FRIENDSHIP BREAD: Mix oil, eggs, and vanilla with the starter mix.
  • In a separate bowl, mix flour, sugar, baking powder, cinnamon, salt, baking soda, vanilla pudding mix, and nuts.
  • Add to liquid mixture and stir thoroughly.
  • Pour into two large well-greased 9x5 inch loaf pans, or one Bundt pan, that have been sprinkled with a mixture of cinnamon, sugar, and flour.
  • Sprinkle more cinnamon and sugar on the tops of the unbaked loaves (or cake). Bake at 325F for one hour or until done.

⅔ cup vegetable oil
3 eggs
2 cups all-purpose flour
1 cup white sugar
1 teaspoon ground cinnamon
½ teaspoon salt
½ teaspoon baking soda
1 ¼ teaspoons baking powder
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 2 (9x5 inch) loaf pans.
  • In a large bowl, combine the Amish bread starter with oil, eggs, 2 cups flour, 1 cup sugar, 1 teaspoon ground cinnamon, 1/2 teaspoon salt, 1/2 teaspoon baking soda, 1 1/4 teaspoons baking powder, and 1 teaspoon vanilla. Mix well. Pour into prepared loaf pans.
  • Bake in preheated oven for 50 to 60 minutes.

Always save 1 cup of starter for your next cakes, then start with day 2 of the starter instructions instead of having to start a new starter each time. You can also give some starter to friends, or sourdough starter can be used in place of the Friendship Starter.

½ teaspoon active dry yeast
1 fluid ounce warm water
1 tablespoon white sugar
1 tablespoon distilled white vinegar
½ teaspoon salt
3 cups all-purpose flour
3 cups milk
1 cup sourdough starter
⅔ cup vegetable oil
1 ½ teaspoons baking powder
¼ teaspoon baking soda
3 eggs
1 cup white sugar
2 cups all-purpose flour
¼ teaspoon salt
2 teaspoons vanilla extract
1 cup chopped walnuts

Steps:

  • To Make Starter: Dissolve yeast in warm water. Add 1 tablespoon white sugar, 1 tablespoon vinegar, 1/2 teaspoon salt, 1 cup of the flour, and 1 cup of the milk in a non-metal bowl and stir with a non-metal spoon until creamy. Cover bowl with plastic wrap and let stand in a warm place for two days to ferment. It will become bubbly and have a sour odor. Do not place in refrigerator. On second day, third day, and fourth day: stir. On fifth day, add 1 cup flour, 1 cup sugar, 1 cup milk, and stir. On sixth, seventh, eighth, and ninth day: stir. On tenth day add 1 cup flour, 1 cup sugar, and 1 cup milk. Reserve 1 cup starter; pour remaining starter, 1 cup each, into 3 containers to give away to friends if desired. Starter is enough for 8 loaves.
  • To Make Cakes: Preheat oven to 350 degrees F (175 degrees C). Grease two 8 or 9 inch loaf pans.
  • Mix 1 cup of the starter, oil, baking powder, eggs, 1 cup of the sugar, 2 cups of the flour, 1/4 teaspoon of the salt, vanilla, and chopped nuts. Stir in the baking soda just before pouring the batter into the prepared pans.
  • Bake at 350 degrees F (175 degrees C) for 45 minutes to 1 hour. Bananas, dates, or raisins can be added for variety.

1 cup all-purpose flour
1/4 cup sugar
3/4 teaspoon salt
3 1/2 teaspoons baking powder
1 cup milk or 1 cup buttermilk
1 egg, beaten
1/4 cup vegetable oil

Steps:

  • Preheat oven to 400 degrees F.
  • Grease 8' square pan.
  • Stir together dry ingredients.
  • Mix liquid ingredients together.
  • Make a well in the dry ingredients, then add liquid all at once.
  • Mix thoroughly.
  • Pour into pan and bake for 25-30 minutes.
  • Serve warm.
  • Note: I recommend using buttermilk, I have found the flavour and texture to be better than when using milk.
