1 cup butter, softened
1/3 cup confectioners' sugar
1 teaspoon vanilla extract
1 2/3 cups all-purpose flour
2/3 cup granulated sugar
1 1/2 teaspoons cornstarch
1 teaspoon grated lemon peel
1/4 teaspoon salt
1 egg, beaten
3 tablespoons lemon juice
1 tablespoon butter, melted

Steps:

  • In a small mixing bowl, cream butter and confectioners' sugar.
  • Beat in vanilla.
  • Gradually add flour.
  • Cover and refrigerate for 30 minutes or until easy to handle.
  • Preheat oven to 350 degrees.
  • Roll into 1-in. balls.
  • Place 1 in. apart on ungreased baking sheets.
  • Using the end of a wooden spoon handle, make an indentation in the center of each.
  • Bake for 12-14 minutes or until lightly browned.
  • Remove to wire racks to cool.
  • Combine the sugar, cornstarch, lemon peel and salt in a saucepan.
  • Stir in egg, lemon juice and butter until smooth.
  • Cook over medium-high heat until thickened.
  • Reduce heat; cook and stir 2 minutes longer.
  • Cool and spoon 1/2 teaspoon into each cookie.

The shortbread-like cookies practically melt in your mouth.

Number Of Ingredients 14

1 stick unsalted butter
1 cup plus 2 tablespoons sugar
1/3 cup vegetable oil
2 teaspoons lemon juice
2 tablespoons lemon zest
2 teaspoons baking powder
1 ⅔ cups all-purpose flour
1/2 teaspoon kosher salt
1 cup confectioners' sugar
1 tablespoon honey
2 teaspoons lemon juice
1 tablespoon whole milk
1 tablespoon lemon zest
for garnish

Steps:

  • Preheat oven to 300˚F
  • For the cookies, in a stand mixer with a paddle attachment, cream butter and sugar on medium speed until light and fluffy, 2 to 3 minutes
  • Add oil, lemon juice and lemon zest and beat to evenly combine
  • In a medium bowl, mix together baking powder, flour and salt and slowly add into the butter mixture until dough comes together, scraping down sides if needed
  • Dough should be airy and not stick to the sides of the bowl
  • Roll dough into thirty 1 ½-inch balls and place on an ungreased baking sheet
  • Bake until cookies show cracks in their surface, about 20 minutes
  • Let cool completely on baking sheet
  • Meanwhile, for the glaze, in a small bowl, whisk together confectioners' sugar, honey, lemon juice and milk until smooth
  • Drizzle and gently spread about 1/2 teaspoon glaze over each cookie and top each with a pinch of lemon zest
  • Cookies can be stored in an airtight container for up to 5 days

This is a recipe I have had for about thirty years. It has stood the test of time and is as good today as it was then.

⅓ cup butter
1 cup all-purpose flour
2 tablespoons white sugar
2 eggs, beaten
½ cup packed brown sugar
¾ cup flaked coconut
½ cup chopped walnuts
¼ teaspoon salt
¼ teaspoon baking powder
½ teaspoon vanilla extract
2 teaspoons lemon zest
2 tablespoons lemon juice
1 cup sifted confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees).
  • In a medium bowl, stir together the 2 tablespoons of sugar with the 1 cup of flour. Cut in the 1/3 cup of butter until mixture is coarse crumbs. Press firmly into the bottom of a 9x9 inch baking pan. Bake for 10 to 15 minutes in the preheated oven. Set aside to cool.
  • In the same bowl, stir together the sugar, salt, and baking powder. Add the eggs and vanilla, mix well. Stir in the coconut and chopped nuts until everything is coated. Spread the mixture evenly over the baked crust. Return to the oven to bake for an additional 25 to 30 minutes.
  • To make the icing, combine the lemon zest, lemon juice and confectioners' sugar. Beat until smooth. Pour and spread over the top of the bars as soon as they come out of the oven. Cool for 15 minutes before cutting into bars.

2 cups graham cracker crumbs
6 tablespoons butter, melted
1/4 cup sugar
FILLING:
4 packages (8 ounces each) cream cheese, softened
1 cup sugar
1/2 cup heavy whipping cream
1/4 cup lemon juice
2 tablespoons all-purpose flour
1 tablespoon grated lemon zest
2-1/2 teaspoons vanilla extract
1 teaspoon lemon extract
10 drops yellow food coloring, optional
5 large eggs, lightly beaten

Steps:

  • Preheat oven to 325°. In a small bowl, combine cracker crumbs, butter and sugar. Press onto bottom and 2 in. up the inside of a greased 10-in. springform pan. Place pan on a baking sheet. Bake 10 minutes. Cool on a wire rack., In a large bowl, beat cream cheese and sugar until smooth. Beat in cream, lemon juice, flour, lemon zest, extracts and, if desired, food coloring. Add eggs; beat on low speed just until combined. Pour into crust. Return pan to baking sheet., Bake 55-65 minutes or until center is almost set. Cool on a wire rack 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour. Refrigerate overnight. Remove sides of pan.

3 1/2 cups graham crackers, crumbled
1 3/4 cups sugar, divided
1 tablespoon ground cinnamon
1 1/4 cups butter, melted
16 ounces cream cheese, softened
2 cups heavy whipping cream
1 teaspoon lemon extract
20 ounces lemon curd or 15 3/4 ounces lemon pie filling

Steps:

  • Grease a 9x1 inch pan (I use my butter wrappers).
  • In a large bowl, mix the graham cracker crdumbs, 3/4 cup sugar, and cinnamon.
  • Stir in the butter.
  • Reserve 1/2 of the crust mixture for the topping.
  • Press the remaining crumb mixture onto the bottom of the prepared baking dish.
  • In a large bowl, beat the cream cheese and the remaining sugar together until smooth.
  • Gradually beat in the heavy whipping cream and lemon extract until soft peaks form.
  • Spread 1/2 of the cream cheese mixture over the crust on the bottom of the baking dish.
  • Gently spread the lemon curd over the cream cheese layer.
  • Cover the lemon curd with the remaining cream cheese mixture.
  • Sprinkle the top with the reserved graham cracker crumb mixture.
  • Refrigerate, covered, for at least 8 hours and up to overnight.
  • Serve chilled.

35 vanilla wafers, finely crushed (about 1-1/4 cups)
1/4 cup butter, melted
2 cups frozen vanilla yogurt, softened
1 pkg. (3 oz.) JELL-O Lemon Flavor Gelatin
2 cups thawed COOL WHIP Whipped Topping
2-1/4 cups mixed fresh berries (sliced strawberries, raspberries, blueberries)

Steps:

  • Line 8-inch square pan with plastic wrap, with ends of wrap extending over sides. Mix wafer crumbs and butter; press onto bottom of prepared pan. Freeze until ready to use.
  • Beat yogurt and dry gelatin mix in large bowl with mixer until blended. Add COOL WHIP; mix well. Spoon over crust.
  • Freeze 4 hours. Use plastic wrap handles to remove dessert from pan before cutting to serve. Top with berries.

Divide dough in half; shape each into an 8-in.-long roll. Wrap in plastic; refrigerate 2 hours or until firm., Preheat oven to 350°. Unwrap and cut dough crosswise into 1/4-in. slices. This recipe came from Whitefish, Montana and was given to me years ago by a dear friend. It had been passed down from her family for generations. I love the fragrance and flavor of lemons. This is by far the easiest and best tasting lemon bar I have come across. I have made it for bake sales, gifts, and simply to serve, and I always have requests for the recipe.

2 cups flour
1 cup butter, softened
1/2 cup powdered sugar
4 eggs
6 tablespoons lemon juice (fresh or bottled)
1 lemon, juice and zest of
6 tablespoons flour
2 cups granulated sugar
1 teaspoon baking powder
2 cups finely shredded coconut
1/2 cup butter, softened
2 tablespoons lemon juice (fresh or bottled)
1 teaspoon vanilla
3 cups powdered sugar (or more if needed to create spreading consistency)

Steps:

  • For Crust: In medium sized bowl, stir together flour and powdered sugar.
  • Cut in butter with pastry blender or the tines of two forks. Press into greased 10x15x1 pan. Bake in 350 degree oven for 10-15 minutes.
  • For Filling: Beat together eggs, lemon juice, zest and juice of fresh lemon, flour, sugar, baking powder and coconut. Mix well and pour over hot crust. Return pan to oven and bake uncovered for 25 minutes or until golden brown. Cool completely on wire rack.
  • For Frosting: Beat together butter, lemon juice, vanilla and powdered sugar. Spread over filling when cool.
  • Cut into bars & serve. Store covered.
