Lemon-Almond Waffles with Lemon Cream image

Indulge in these crisp waffles with luscious lemon cream for breakfast, brunch, lunch or dessert--in other words, anytime!

3/4 cup whipping (heavy) cream
3 tablespoons powdered sugar
1 teaspoon grated lemon peel
1 package (3 ounces) cream cheese, softened
2 cups Original Bisquick™ mix
1 1/3 cups milk
2 tablespoons powdered sugar
2 tablespoons vegetable oil
2 teaspoons grated lemon peel
1 egg
1/2 cup chopped slivered almonds
Additional powdered sugar, if desired
Toasted slivered almonds, if desired

Steps:

  • To make Lemon Cream, beat whipping cream, 3 tablespoons powdered sugar, 1 teaspoon lemon peel and the cream cheese in chilled small bowl with electric mixer on high speed just until soft and fluffy. Refrigerate while making waffles.
  • Heat waffle iron; grease if necessary.
  • Stir Bisquick mix, milk, 2 tablespoons powdered sugar, the oil, 2 teaspoons lemon peel and the egg in large bowl until blended. Stir in 1/2 cup chopped almonds. Pour batter by slightly less than 1 cupfuls onto center of hot waffle iron.
  • Bake about 5 minutes or until steaming stops. Carefully remove waffle. Sprinkle waffles with powdered sugar and toasted almonds. Serve with Lemon Cream.

Biscuit Waffles with Lemon Cream, Lemon Syrup and Blueberries image

Nonstick cooking spray
Dough scraps from Trisha Yearwood's Angel Biscuits, recipe follows
8 ounces cream cheese, softened
1/4 cup sugar
1/2 cup heavy cream
2 lemons, zested
Juice of 1 lemon
1/4 cup maple syrup
1 cup fresh blueberries, for serving
5 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon kosher salt
5 tablespoons sugar
1/4 cup warm (90 to 110 degrees F) water
1/2 ounce (2 packages) active dry yeast
1 cup (2 sticks) salted butter, cold, cut into small squares, plus 4 tablespoons, melted
2 cups buttermilk

Steps:

  • Spray a waffle iron with nonstick spray; heat to medium.
  • Gather the biscuit scraps into a ball, then press out as thin as possible on a lightly floured work surface; the thinner the biscuit, the fluffier the waffle will be. With a biscuit cutter, cut out biscuits, making sure they will fit into the waffle iron, width-wise.
  • When the iron is hot, add the biscuits, one per square, and close the lid. Cook until golden brown, 1 to 2 minutes. Remove and repeat.
  • Meanwhile, combine the cream cheese and sugar in a large bowl. Using an electric hand mixer, beat until smooth and well incorporated. Add the cream and lemon zest; beat until light and fluffy. Set aside.
  • In a small bowl, combine the lemon juice and maple syrup. Set aside.
  • To serve, place two waffles on a plate and top with lemon cream, lemon syrup and blueberries.
  • Preheat the oven to 425 degrees F.
  • In a large bowl, whisk together the flour, baking powder, baking soda, salt and 3 tablespoons of the sugar.
  • In a small bowl, combine the warm water with the yeast and the remaining 2 tablespoons sugar; stir until the yeast is dissolved. Let stand until bubbles appear, 2 to 3 minutes.
  • Using your hands, mix the 1 cup cold butter into the flour, breaking the butter into small pebbles, until the mixture resembles coarse meal. Make a well in the center and add the buttermilk and the yeast mixture. Gently fold the flour into the wet ingredients. Keep mixing until a ball starts to form, then gently knead, 12 to 15 times, to create a smooth dough. Cover with a cloth or plastic wrap and let rise in a warm place for approximately 1 hour.
  • Transfer the dough to a lightly floured work surface and press out to 1- to 1 1/2-inches thick. Fold the dough in half, press again to 1- to 1 1/2-inches thick, and then fold again. Cut the dough using a 2- to 3-inch round biscuit cutter, depending personal preference. Brush the bottom of a cast-iron skillet with some of the melted butter. Place the biscuits in the skillet; brush the tops with melted butter.
  • Bake until golden brown, 18 to 22 minutes, depending on size. Brush again with melted butter and serve immediately.

2 cups Gold Medal™ all-purpose flour
1 3/4 cups milk
1/2 cup vegetable oil
1 tablespoon granulated sugar
4 teaspoons baking powder
2 teaspoons grated lemon peel
1/4 teaspoon salt
Powdered sugar, if desired
1 can (15.75 oz) lemon pie filling
1/2 container (8-oz size) frozen whipped topping, thawed (1 1/2 cups)

Steps:

  • Heat waffle baker; grease with shortening if necessary (or spray with cooking spray before heating). In large bowl, beat eggs with hand beater or wire whisk until fluffy. Beat in remaining ingredients except powdered sugar, pie filling and whipped topping just until smooth.
  • Pour about 1/2 cup batter from cup or pitcher onto center of hot waffle baker. (Waffle bakers vary in size; check manufacturer's directions for recommended amount of batter.) Close lid of waffle baker.
  • Bake about 5 minutes or until steaming stops. Carefully remove waffle. Repeat with remaining batter. Sprinkle waffles with powdered sugar. Serve warm with dollops of pie filling and whipped topping.

¾ cup canola oil
⅔ cup confectioners' sugar
1 (14 ounce) can sweetened condensed milk
3 eggs
½ cup lemon juice
⅓ cup white sugar
1 lemon, zested
¼ teaspoon baking powder

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine flour, oil, and sugar in a bowl. Pat into a 9x13-inch baking pan.
  • Bake in the preheated oven until golden around the edges, about 20 minutes. Cool on a wire rack.
  • Meanwhile, beat sweetened condensed milk, eggs, lemon juice, sugar, lemon zest, and baking powder together until just blended. Pour over the cooled crust.

3 tablespoons sugar
2 teaspoons baking powder
Kosher salt
1 3/4 cups half-and-half
1/2 cup whole milk ricotta
3 tablespoon unsalted butter, melted
3 tablespoons lemon zest and 2 tablespoons lemon juice (from 2 to 3 lemons)
1 teaspoon vanilla extract
1 large egg
Nonstick cooking spray
Raspberry-Mascarpone Whipped Cream (see recipe below)
Fresh fruit such as strawberries, blueberries and/or raspberries, for serving
Maple syrup, for serving
1 cup heavy cream
4 ounces mascarpone
3 tablespoons seedless raspberry jam

Steps:

  • Preheat a waffle iron to medium-high heat.
  • Add the flour, sugar, baking powder and 1/4 teaspoon salt to a large bowl and whisk to combine. In a separate medium bowl, add the half-and-half, ricotta, butter, lemon zest, lemon juice, vanilla and egg and whisk to combine. Add the ricotta mixture to the flour mixture and whisk to combine.
  • Spray the preheated waffle iron with nonstick cooking spray and spoon about 3/4 cup of batter into the waffle iron. Cook until the waffle is golden brown and lightly crisp, 3 to 4 minutes (or according to manufacturer's instructions). Repeat with remaining batter.
  • To serve the waffles: top each waffle with a dollop of Raspberry-Mascarpone Whipped Cream, berries and maple syrup.
  • Add the heavy cream, mascarpone and raspberry jam to a large bowl. Whip on medium-high speed with an electric hand mixer until stiff peaks form, about 4 minutes.

1 3/4 cups all-purpose flour, sifted
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 lemon, zest of, grated
1 3/4 cups 2% low-fat milk, at room temperature
1/4 cup melted butter
3 eggs, separated, at room temperature
2 tablespoons icing sugar

Steps:

  • Sift together the flour, baking powder, baking soda and salt into a bowl.
  • Stir in the lemon zest.
  • In another bowl, whisk together the milk, melted butter and the egg yolks until smooth.
  • Make a well in the dry ingredients and gradually stir in the wet until just combined.
  • Do not continue to stir.
  • Cover with plastic wrap.
  • Let stand covered, about 30 minutes.
  • Preheat waffle iron according to manufacturer's instructions.
  • In a clean, dry bowl whisk the egg whites until fluffy.
  • Gradually add the icing sugar while continuing to beat until whites hold soft peaks.
  • Fold gently into batter.
  • Ladle batter into prepared waffle iron and cook according to manufacturer's instructions.
