My great-grandmother used to make this cake, which has been a family favorite for years. You won't believe it starts with a cake mix! Lemon pudding and apricot nectar add a tanginess and moistness. It's delicious plain or served with ice cream or whipped cream.

1 package yellow cake mix (regular size)
1 package (3.4 ounces) instant lemon pudding mix
1 cup apricot nectar
1/2 cup canola oil
4 large eggs
1 teaspoon lemon extract
LEMON GLAZE:
1 cup confectioners' sugar
2 tablespoons lemon juice

Steps:

  • In a large bowl, combine the cake and dry pudding mixes, apricot nectar, oil, eggs and extract; beat on low for 30 seconds. Beat on medium speed for 2 minutes. Pour into a greased and floured 10-in. fluted tube pan. , Bake at 350° for 45-55 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. , In a small bowl, combine glaze ingredients until smooth; drizzle over warm cake.

1 package (3.4 ounces) instant lemon pudding mix
3/4 cup canola oil
3 large eggs, room temperature
1 cup lemon-lime soda
1 cup confectioners' sugar
2 tablespoons lemon juice

Steps:

  • Preheat oven to 350°. In a large bowl, combine the cake mix, pudding mix, oil and eggs; beat on low speed or 30 seconds. Beat on medium for 2 minutes. Gradually beat in soda just until blended. , Pour into a greased 13x9-in. baking dish. Bake until a toothpick inserted in the center comes out clean, 40-45 minutes. , In a small bowl, combine the confectioners' sugar and lemon juice until smooth; carefully spread over warm cake. 1 (18.25 ounce) package lemon cake mix
1 (3 ounce) package lemon flavored Jell-O® mix
¾ cup vegetable oil
½ cup water
4 eggs
⅓ cup lemon juice
2 cups confectioners' sugar
2 tablespoons butter, melted
1 tablespoon water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch pan.
  • In a large bowl, stir together cake mix and gelatin mix. Make a well in the center and pour in oil, 1/2 cup water and eggs. Beat on low speed until blended. Scrape bowl, and beat 4 minutes on medium speed. Pour batter into prepared pan.
  • Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
  • To make the Glaze: In a medium bowl, combine lemon juice and confectioners' sugar. Beat in the melted butter and 1 tablespoon water. Poke holes in the top of the cake and pour glaze over.

1/3 cup hot water
1 (3 ounce) package lemon gelatin
2 cups confectioners' sugar
6 tablespoons lemon juice

Steps:

  • For cake:.
  • Preheat oven to 350 degrees.
  • Grease a 10 inches bundt or tube pan.
  • In a large mixing bowl, combine the cake mix, eggs, oil, apricot nectar and lemon zest.
  • Dissolve the gelatin in the hot water and add to cake batter.
  • Mix until well blended.
  • Pour into the greased cake pan.
  • Bake at 350 degrees for 45 minutes. The cake is done when a toothpick inserted into the middle of the cake comes out clean.
  • Remove cake from oven, cool for 10 minutes and invert onto a cake plate.
  • Pour glaze over cake while it is still warm.
  • For glaze:.
  • Combine confectioner's sugar and lemon juice and mix well.

1 cup water
1 cup sour cream
3 eggs
1 (18 ounce) jar apricot preserves, divided
whipped topping (optional)

Steps:

  • Preheat oven to 350. Spray two 9-inch layer pans with cooking spray.
  • Combine cake mix, water, sour cream and eggs in large bowl. Mix on medium speed for 2 minutes, scraping bowl occasionally. Pour evenly into prepared pans.
  • Bake for 30 to 35 minutes or until wooden toothpick inserted in center comes out clean.
  • Cool in pans on wire rack for 15 minutes. Remove from pans; cool completely.
  • To serve, slice each layer in half horizontally making 4 layers. Place first layer on serving plate. Spread cake with 1/2 cup preserves.
  • Repeat layering with cake and preserves. Use remaining preserves for top of the cake allowing preserves to drip down the sides of the cake.
  • Serve each slice with a dollop of whipped topping, if desired.

3/4 cup plus 2 tablespoons all-purpose flour
1/2 cup confectioners' sugar
1/4 cup cold butter, cubed
1/8 teaspoon salt
1 large egg yolk
FILLING:
3 large eggs, room temperature
3/4 cup lemon juice
1/2 cup plus 2 tablespoons sugar
2 tablespoons grated lemon zest
3 tablespoons butter
1/3 cup apricot preserves, warmed
Fresh mint leaves, optional

Steps:

  • Place the flour, confectioners' sugar, butter and salt in a food processor. Cover and pulse until mixture resembles coarse crumbs. Add egg yolk, processing just until mixture forms a soft dough. Shape into a ball, then flatten into a disk. Wrap and refrigerate for at least 1 hour. , Press dough onto the bottom and up the sides of an ungreased 9-in. fluted tart pan with a removable bottom. 6 large egg whites
1/2 cup water
1 1/2 tablespoons grated lemon zest
1/4 cup plus 2 tablespoons lemon juice
3/4 cup all-fruit apricot preserves
1 cup frozen fat-free whipped topping, thawed in refrigerator

Steps:

  • Preheat the oven to 325°F. Lightly spray a 13 x 9 x 2-inch metal baking pan with cooking spray.
  • Put the cake mix, egg whites, water, lemon zest, and lemon juice in a large mixing bowl. Mix using the package directions. Pour the batter into the pan.
