- Bring a pot of salty water to a boil. Prepare noodles al dente.
- In a medium saucepan over medium heat, melt butter and add garlic. Reduce to medium low heat.
- Add lemon juice and cooking wine, stir until warm.
- Toss with drained pasta.
- Top with parmesan and basil.

- Cook 1 minced shallot in a skillet with 1 tablespoon butter over medium heat until golden, 3 minutes. Whisk 1 1/4 cups heavy cream, 1 egg yolk and 2 teaspoons grated lemon zest in a bowl; reduce the heat to low and whisk into the skillet along with 1/3 cup grated pecorino. Whisk until slightly thickened, 2 minutes. Season with salt and plenty of pepper. Toss with 12 ounces cooked fettuccine and some pasta-cooking water. Top with more pecorino.
BASIL PASTA WITH LEMON GARLIC BUTTER SAUCE

- Heat a large cast-iron skillet over medium-high heat. Add 2 tablespoons butter, thinly sliced lemon, and minced fresh garlic. Cook for about 5 minutes, stirring a couple of times, until lemon slices brown and release juices and minced garlic is browned but not burned. Remove from heat and add 2 more tablespoons of butter. Stir until it melts. Remove lemon slices from the skillet.
- Bring a large pot of water to boil. Add pasta and cook al dente according to package instructions. Drain pasta.
- Add hot, drained, and cooked pasta to the cast-iron skillet with butter and garlic. Stir everything well.
- Add 2 more tablespoons of butter and grated Parmesan cheese. Stir on low-medium heat for a couple of minutes to spread out the cheese among the pasta and melt it a bit. Remove from heat. Taste and season with salt.
- Add half of the fresh chopped basil to hot pasta and mix everything well.
- When ready to serve, top with the remaining half of fresh chopped basil, toasted pine nuts, and cracked black pepper.

- Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally, about 4 minutes. Drain. Stir 2 cups of the cream and the lemon juice in a heavy large skillet to blend. Add the butter and cook over medium heat just until the butter melts, stirring occasionally, about 3 minutes. Remove from the heat. Add the pasta and toss. Add the remaining 1/2 cup of cream, and Parmesan to the cream sauce in the skillet. Add the lemon zest, nutmeg, salt, and white pepper. - MELT butter in a large skillet over medium-high heat; add garlic, and saute 1 to 2 minutes.
- Add half-and-half and chicken broth.
- Bring to a boil, and cook 8 minutes or until reduced by half.
- WHISK together lemon juice and cornstarch until smooth.
- Whisk lemon juice and 1/2 teaspoon pepper into butter mixture, and cook, whisking constantly, 2 minutes or until thickened.
- Remove from heat.
- DO NOT ADD BASIL UNTIL READY TO SERVE.

- Cut fat off of chicken. Cut chicken into bite sized pieces and set aside.
- In a small bowl, combine olive oil, wine vinegar, basil, chives, garlic, salt, & pepper.
- Sautee chicken in large skillet until no longer pink and nicely seared on both sides. This will take approximately 30 minutes on med-high heat with an electric stove.
- While chicken is sauteeing, cook pasta according to package instructions. Spoon mixture from step 2 over chicken about 2 minutes before it is done cooking.
- When pasta is done, drain in colander and place in a large (very large) bowl. Add chicken and alfredo sauce to the noodles. Use a scooper to incorporate well.
- Serve and enjoy!
LEMON GARLIC ALFREDO SAUCE
To ensure perfect Alfredo make sure you use freshly grated cheeses. The canned stuff may seize and ruin the dish. Also, when adding cheese to any sauce (or soup) you need to make sure the temperature of the sauce is not higher then 180 degrees. When adding cheeses at temperatures over 180 degrees the cheese will actually go through a separation process rather than a melting process (cheeses like to melt slowly at lower temps) and results in a less than smooth end product. Serve over your favorite pasta.

- Zest a lemon using a zester or a fine grater; set aside.
- Juice two lemons with a citrus reamer or juicer; set aside.
- In a medium sauce pan, melt butter and add the garlic with cream and boil until the cream is reduced by half.
