LEFT OVER SPAGHETTI LASAGNA
This is a dish intended for your left-over spaghetti. In my house there never seems to be enough left over to make this, so seeing as we love this dish a lot I make it with fresh spaghetti. Night #1 we are all dancing in our seat with pleasure as we eat dinner and lunch on day #2 is a treat beyond words.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Grease a 9x13-inch baking dish.
- Fill a large pot with lightly salted water and bring to a rolling boil. Stir in spaghetti and return to a boil. Cook until pasta is tender but still slightly firm, about 10 minutes. Drain well.
- Transfer spaghetti to a large bowl and toss with spaghetti sauce until well combined.
- Mix cottage cheese and sour cream in a bowl.
- Spread half the spaghetti with sauce into the prepared baking dish.
- Spread the cottage cheese mixture evenly over the spaghetti.
- Place the remaining spaghetti and sauce in an even layer over the cottage cheese mixture; sprinkle with mozzarella cheese.
- Bake in the preheated oven until bubbly and the cheese is browned, 30 to 40 minutes.

LEFTOVER NOODLES CASSEROLE
I make this when I have left-over, cooked lasagna noodles. I just slice them up and use them like any cooked pasta noodle. This is good at room temperature or as leftovers. You can use a commercially-made, dry onion soup mix or make your own, Recipe #24952 (that's what I use).

Steps:
- Melt ghee in saucepan.
- Add the peppers, celery and onions and cook til soft. Remove from heat.
- In a large bowl, combine the eggs, cheese, sour cream, milk, soup mix, salt.
- Add the cooked vegetables, scraping the pan to get all the melted butter. Combine.
- Add the noodles and mix well.
- Pour into a greased 2-quart casserole.
- Sprinkle with bread crumbs and dot with ghee if desired.
- Bake 350 degrees for 40-minutes or until a test knife comes out clean.
- Let cool for 20-minutes and serve.

LEFTOVER TURKEY LASAGNA
This is a great meal to make with Thanksgiving turkey leftovers!

- Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain.
- While noodles are cooking, mix condensed soup, mayonnaise, sour cream, and garlic powder together for sauce.
- Use 1/2 of all ingredients to make layers in the prepared baking dish as follows: noodles, sauce, turkey, green beans, stuffing, mozzarella cheese, and Cheddar cheese. Repeat layers once more with remaining ingredients.
- Bake in the preheated oven until bubbly, about 45 minutes.

FRESH LASAGNA NOODLES
Do not attempt to cut the amounts in the recipe in half. Instead, dry any extra noodles completely, wrap them tightly in plastic, and store at cool room temperature for up to one week. Boil for 90 seconds before using.

- Mound flour on a work surface, and make a well in the center. Beat eggs and a pinch of salt in a small bowl, then pour eggs into well. Using a fork, slowly add flour to eggs, incorporating a small amount at a time, switching to hands as dough becomes stiff.
- Knead dough on a lightly floured surface until smooth, elastic, and no longer sticky, about 10 minutes. Cover with plastic, and let dough rest on counter for 1 1/2 hours.
- Cut dough into 8 pieces. Working with 1 piece at a time and keeping remaining pieces covered, dust dough lightly with flour, and feed through a pasta machine's widest setting (No.1). Fold dough lengthwise into thirds, and rotate 90 degrees. Pass through machine 2 more times.
- Turn dial to next-narrower setting. Pass dough through machine twice, gently supporting it with your palms. Continue to roll dough through ever-finer settings, 2 passes each, until sheet is almost translucent (No. 6 on a KitchenAid pasta roller). If dough bubbles or tears, pass it through again, and dust with flour if it sticks. Immediately cut sheet into lasagna noodles: 4-inch squares for individual lasagna or 4-by-13-inch strips for a large pan. Transfer strips to a drying rack for 1 hour. Repeat with remaining dough. (Noodles can be stored, when completely dry and stiff, for up to 1 week.)
- Fill a large bowl with cool water. Bring a large pot of salted water to a boil. Cook 2 to 3 noodles at a time for 90 seconds. Using a wire-mesh skimmer, transfer noodles to cool water, and swirl a few times. Place on a parchment-lined baking sheet until ready to use, placing a piece of parchment or plastic between layers. Use immediately.
