LEEK, KALE AND POTATO LATKES

Leek, Kale and Potato Latkes image

These delicious cumin-scented potato pancakes are laced with leeks and crispy kale, adding a putatively healthy touch to the standard fried latke. You can serve them with Greek yogurt, sour cream or crème fraîche. But a chutney or yogurt blended with cilantro, mint and garlic would make for excellent eating as well. You might even try a salsa.

Time 30m

Yield Makes 2 to 2 1/2 dozen, serving 6

Number Of Ingredients 10

5 cups, tightly packed, grated potatoes (use a starchy potato like Idaho or Yukon gold)
2 large leeks, halved lengthwise, cleaned and sliced very thin
1/2 pound kale, stemmed, washed, dried and finely chopped or cut in thin slivers (about 3 cups, tightly packed)
1 teaspoon baking powder
Salt and freshly ground pepper to taste
2 teaspoons cumin seeds, lightly toasted and coarsely ground
1/4 cup chopped chives
1/4 cup all-purpose flour or cornstarch
2 eggs, beaten
About 1/4 cup canola, grape seed or rice bran oil

Steps:

  • Preheat the oven to 300 degrees. Meanwhile, place a rack over a sheet pan.
  • In a large bowl mix together the potatoes, leeks, kale, baking powder, salt and pepper, cumin, chives, and flour or cornstarch. Add the eggs stir together.
  • Begin heating a large heavy skillet over medium-high heat. Add 2 to 3 tablespoons of the oil and when it is hot, take up heaped tablespoons of the latke mixture, press the mixture against the spoon to extract liquid (or squeeze in your hands), and place in the pan. Press down with the back of the spatula to flatten. Repeat with more spoonfuls, being careful not to crowd the pan. In my 10-inch pan I can cook 4 at a time without crowding; my 12-inch pan will accommodate 5. Cook on one side until golden brown, about 3 minutes. Slide the spatula underneath and flip the latkes over. Cook on the other side until golden brown, another 2 to 3 minutes. Transfer to the rack set over a baking sheet and place in the oven to keep warm. The mixture will continue to release liquid, which will accumulate in the bottom of the bowl. Stir from time to time, and remember to squeeze the heaped tablespoons of the mix before you add them to the pan.
  • Serve hot topped with low-fat sour cream, Greek yogurt or crème fraiche, or other toppings of your choice such as salsa, chutney or yogurt blended with cilantro, mint, and garlic.

SLOW COOKER POTATO, LEEK, AND KALE GRATIN WITH TOO MUCH CHEESE

Slow Cooker Potato, Leek, and Kale Gratin With Too Much Cheese image

Layers of creamy potato, salty cheese, and savory kale and leeks mean that this is one dish that's here for a good time, not a long time.

Provided by Katrina Meynink

Yield Serves 4-6

Number Of Ingredients 9

1 tablespoon olive oil
2 large leeks, white and light green parts only, washed thoroughly, finely sliced
½ small bunch of flat-leaf kale, stems removed, leaves chopped
375 ml (12½ fl oz; 1½ cups) heavy cream
125 ml (4 fl oz; ½ cup) chicken or vegetable stock
85 g (3 oz) gruyère, grated
125 g (4½ oz) Parmesan, grated
150 g (5½ oz) creamy blue cheese
900 g (2 lb) washed potatoes (I use sebago), sliced about 3 mm (¼ in) thick

Steps:

  • Set the slow cooker to the sauté function. Add the oil and, once hot, add the leek and cook for 1-2 minutes, then add the kale and continue cooking for another 2-3 minutes, or until the leek is soft. Gently scoop into a bowl. Line the slow cooker with a sheet of baking paper, working carefully as it will be hot.
  • Add the cream, stock and cheeses to a bowl and use a fork to combine.
  • Arrange one-third of the potato slices over the bottom of the lined bowl, overlapping them slightly. Pour in one-third of the cream mixture and sprinkle with one-third of the leek mixture. Season and repeat the process until all the ingredients have been used.
  • You should get three decent layers of cheesy potato goodness. Close the lid and cook on high for 4 hours.
  • Check the liquid at the 3-hour mark. If there is a lot of liquid remaining, leave the lid off for the last hour of cooking. If, at 4 hours, there is still too much liquid, remove the lid and, if your cooker has it, hit the reduce function, or simply the sauté function, and cook for 2-5 minutes. This will quickly get rid of any excess moisture.
  • Allow to cool for at least 15 minutes in the slow cooker before gently removing. If you try to cut it when still hot, it tends to go everywhere. Alternatively, scoop the gratin straight from the bowl onto the plate. It might not look amazing, but it's the kind of dish that is here for a good time, not a long time.
  • Season generously with salt and pepper and serve. Eat wearing stretchy pants; you are going to need them.

LEEK LATKES

Provided by Joan Nathan

Categories     dinner

Time 1h

Yield 16 large latkes

Number Of Ingredients 11

6 leeks (about 2 pounds)
2 tablespoons extra virgin olive oil, plus more for frying
1 large onion, peeled and diced
6 cloves garlic, or to taste, peeled and diced
4 shallots, peeled and diced
1/3 cup pine nuts
1/2 bunch cilantro (about 1 cup), diced
2 large eggs
1/3 cup Parmesan cheese
Salt and freshly ground pepper to taste
1/2 cup bread crumbs or matzoh meal, plus 1/3 cup for coating

Steps:

  • Cut leeks lengthwise, and wash them well to remove any grit. Dice the leeks, and either steam them or place them in boiling salted water for about 5 to 7 minutes, or until they are tender. Drain leeks well, pressing them in a dish towel to remove any excess water.
  • Heat oil in nonstick frying pan, and add onion, garlic and shallots. Saute until soft, about 5 minutes.
  • Heat oven to 350 degrees. Place pine nuts on a baking pan, and toast for a few minutes until evenly browned.
  • Place leeks, onion, garlic, shallots, pine nuts, cilantro, eggs and cheese in a mixing bowl, and blend well, adding salt and pepper to taste. Add about 1/2 cup bread crumbs, or enough to bind.
  • Take about 1/4 cup of the leek mixture, and make a patty 2 inches in diameter. Coat patty with bread crumbs, and repeat with remaining mixture.
  • Coat a nonstick frying pan thinly with remaining olive oil, and fry the patties for a few minutes on each side. (For cocktail-size patties, use 1 teaspoon of mixture.) Drain on paper towels.
