AYNAR (LEBANESE SPICED TEA)
A recipe for Aynar (Lebanese Spiced Tea)! This orange-tinted tea is packed with warming spices and served with a combination of chopped walnuts, pistachios, and pine nuts.

Steps:
- In a medium saucepan, place water over high heat. Add the cinnamon sticks, fresh ginger slices, anise seeds, and nutmeg.
- Once the water comes to a boil, reduce heat to a simmer and cover. Allow to simmer to desired strength and color, 1-1 1/2 hours.
- Immediately before ready to serve, whisk in the sugar and simmer until dissolved. Remove from heat and strain through a fine mesh sieve. Discard the spices.
- Place the chopped nuts into the bottom of each teacup. Pour in the hot tea and serve immediately.
LEBANON'S NEW MAMA SPICED TEA (AINAR)
The neat thing about Ainar is the treat at the bottom of the cup, nuts. After cooking a bunch of warming, fragrant spices like cinnamon, caraway, anise, and nutmeg in a large pot of water, the hot tea is poured over assorted nuts with as much sugar or honey as you can stand. Walnut, almond, and pine nuts are the most common. Anise is said to help mamas recover from childbirth. Recipe from Penzy's Spices' 2012 early summer catalog.

- Add spices to water (use a tea ball, if you have one) and bring to a boil.
- Cover and simmer 15 minutes, or until flavored strongly enough.
- Serve with nuts and sugar, to taste.
- Sip slowly and relax.

LEBANESE TEA
A light and refreshing version of iced tea that is served at all the local Greek and Lebanese restaurants. I was quite surprised to discover that this recipe actually originated in the New Orleans / Baton Rouge area. The pine nuts don't add anything to the flavor of the drink, so I usually leave them off. I buy my rose water from a local middle eastern grocery store - you can also find it at world market and whole foods, or online. You can adjust the amounts of sugar, rose water, and lemon juice to suit your tastes.

Steps:
- Bring 2 quarts of water to a boil. Place tea bags in a gallon sized pitcher, and pour the boiling water over. Steep for 5-7 minutes.
- Remove tea bags, and stir in the sugar, lemon juice, and rose water. Stir until sugar is thoroughly dissolved.
- Top with water until you have 1 gallon of tea. Chill, and serve over ice, with a few pine nuts sprinkled in each glass if desired. I usually leave off the nuts since they don't add to the flavor.

- In an airtight container, combine the first five ingredients. Store in a cool, dry place for up to 6 months. Yield: about 7-1/2 cups total. , To prepare tea: Dissolve about 1 tablespoon tea mix in boiling water; stir well. Yield: 1 serving., To prepare punch: In a 3-qt. slow cooker, combine the juices, 1/4-1/3 cup tea mix and cinnamon sticks. Cover and cook on low for 4 hours. Yield: about 12 servings (6 ounces each).
