These buns a Dutch tradition the Saturday before Pentecost (from godutch.com): (Luilak these days is a very localized custom - Amsterdam and surroundings - on the Saturday morning before Pentecost. Children and teens rise very early to play pranks on those considered to be 'lazybones,' by ringing their doorbell and then run away. Before ringing the bell they tie the doorknob to another fixed object, and make all kinds of noises to awake people. In earlier times they would chant and parade noisily through the streets, bang on pots and pans, use rattles and sticks. The person in the family who slept in the longest that Saturday morning, by tradition was expected to treat with these buns).

1 1/2 cups flour
salt
1/2 cup milk, lukewarm
1/2 ounce yeast
2 ounces butter
3 ounces currants
1 ounce raisins
1 teaspoon cinnamon
1 egg
molasses

Steps:

  • Preheat oven to 440°F.
  • Dissolve the yeast in the lukewarm milk.
  • Pour the flour and salt into a bowl, make an indent in the top and pour in the milk/yeast mixture.
  • Add melted butter (cooled down but still liquid).
  • From the center, mix the butter in the flour, till the dough is nice and smooth.
  • Set aside for 15 minutes to let it rise.
  • Mix the currants, raisins, and cinnamon in with the dough, and make the dough into ten balls.
  • Put the balls on a greased cookie sheet, press them down a bit and with a pair of scissors cut make four equally-spaced cuts along one side. Allow the buns to rise for another 15 minutes.
  • Brush lightly beaten egg on the tops and bake the buns in a preheated oven at 440ºF for about 15 minutes until they are golden brown and done. Serve warm with molasses.

4 sheets frozen puff pastry
1 onion
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/2 teaspoon paprika
250 g lean ground beef
salt and pepper, to taste
1 egg, separated
4 slices uncooked ham
2 tablespoons sesame seeds

Steps:

  • Preheat oven to 395°F.
  • Thaw the puff pastry sheets.
  • Peel and finely chop the onion. Mix the onion with the nutmeg, cinnamon and paprika, and brown the onion in a skillet until carmelized.
  • Add ground beef and cook until browned. Add salt and pepper to taste.
  • Separate the egg and slightly beat the yolk and eggwhite separately. Roll the pastry sheets and make two sheets out of the four by overlapping and sealing the two seams. Brush the two sheets with the eggwhite.
  • Put two slices of ham on the one set of pastry sheets and spread the hamburger mix on top. Keep the edges free. Put the other two slices of ham on top of the hamburger and cover with the other pastry sheet.
  • Join the edges well of the two sheets and set aside for 10 minutes.
  • Put a sheet of baking paper on a cookie sheet and place strudel on baking sheet.
  • Brush egg yolk on top of the strudel and sprinkle sesame seeds on it. Bake the strudel for about 30 minutes, until golden brown and done.

1 cauliflower
3 eggs
2 tablespoons condensed milk
30 g flour
1 cup milk
salt and pepper, to taste
paprika, to taste
200 g aged edam cheese, grated

Steps:

  • Preheat oven to 395°F.
  • Rinse the cauliflower cut into florets.
  • Boil the florets for 10 minutes in one cup of lightly-salted water. Drain.
  • Beat the eggs with the condensed milk and half of the grated cheese.
  • Add the flour and pepper and paprika to taste.
  • Put the florets in a greased oven dish. Pour the egg-and-cheese mix over it and sprinkle the remainder of the grated cheese on top.
  • Bake at 395ºF for about 35 minutes.
