Lavender Rub image

My Mom clipped this recipe out of the local newspaper. A multi-purpose herb/spice rub for meats-chicken, lamb, even fish; vegetables such as corn on the cob, baked potato, etc. Use your imagination but use sparingly! Update: This is wonderful on simple roasted whole chicken!

Number Of Ingredients 4

2 tablespoons black peppercorns (or 1 tablespoon white and 1 tablespoon black)
3 tablespoons salt-free garlic powder
2 tablespoons salt
1 1/2 tablespoons dried lavender

Steps:

  • Place all ingredients in mini-chopper or clean, dry coffee mill and blend to powder form.
  • Keep covered and stored in cool, dry location.
  • Yield: approximately 1/2 cup.

Fresh herbs - lavender, rosemary, and thyme - are used to make an oil marinade for pork steaks. Marinate the meat while preheating the grill for a simple and quick meal.

1 cup vegetable oil
4 tablespoons finely chopped fresh lavender
3 tablespoons chopped fresh rosemary
1 tablespoon chopped fresh thyme
4 pork steaks

Steps:

  • Preheat an outdoor grill for low heat.
  • Pour oil into a large, resealable plastic bag. Add lavender, rosemary, and thyme; let stand for 10 minutes. Place steaks in bag with marinade, and marinate for 5 minutes.
  • Lightly oil grate. Remove steaks from marinade, and arrange on grill. Cook, turning once or twice, for 20 to 30 minutes, or until done.
