POTATO LATKES

Potato Latkes image

Provided by Food Network

Categories     side-dish

Time 32m

Yield 4 Servings

Number Of Ingredients 6

1-1/2 pounds russet potatoes peeled
1/4 cup finely chopped shallots
2 large eggs, lightly beaten
2 tablespoons flour (or more) or matzo meal (during Passover)
1 1/2 teaspoons salt and freshly ground black pepper
Vegetable oil for frying

Steps:

  • In a food processor grate the potatoes. Line a sieve with cheesecloth and transfer potatoes to the sieve. Set sieve over a bowl, twist cheesecloth into a pouch, squeezing out some moisture. Let mixture drain for 15 minutes. After 15 minutes, pour off liquid from the bowl but leave the white potato starch that settles in the bottom of the bowl.
  • To that starch add shallots, eggs, flour, 1-1/2 teaspoons of salt and freshly ground pepper. Return drained potatoes to this mixture and toss to combine.
  • Preheat oven to 200 degrees. Line a baking pan with paper towels. When you are ready to eat, in a large skillet heat 1/4 inch of oil over medium high heat until hot. Drop heaping tablespoonfuls of potato mixture and cook for 3 to 4 minutes a side; latkes should be golden and crisp on both sides. Eat right away or keep warm in oven. Serve with applesauce or sour cream or cottage cheese mixed with sour cream.

Time 1h15m

Yield 8 servings

Number Of Ingredients 8

1 1/2 pounds russet potatoes
1 large yellow onion
Kosher salt
2 large eggs
1 tablespoon fresh lemon juice
1/3 cup all-purpose flour
Freshly ground pepper
Canola or vegetable oil, for frying

Steps:

  • Shred the potatoes and onion in a food processor or with a grater or mandoline. Place in a strainer that has been lined with cheesecloth or a damp kitchen towel. Toss with 3/4 teaspoon salt and let sit over a bowl to drain for 30 minutes.
  • Gather the top of the cheesecloth and use your hands to squeeze out as much excess moisture as you can. Transfer the vegetables to a clean bowl; mix in the eggs, lemon juice, flour and some pepper.
  • Heat 1/4 inch canola oil in a large skillet over medium-high heat until shimmering. Working in batches so as not to crowd the pan, fry loosely packed rounded tablespoons of the potato mixture until browned, about 2 minutes per side. Add more oil to the pan and adjust the temperature as needed. Transfer to a paper towel?lined plate, season with salt and set aside.

MOM'S POTATO LATKES

Mom's Potato Latkes image

Latkes (potato pancakes) are a must have at Hanukkah, but really are wonderful any time of year! This is my mother's recipe, which is honestly the best latke I've had. I usually end up having to make a second batch because they disappear so quickly. I've tried other recipes and always return to these. Lovely topped with sour cream or applesauce.

CLASSIC POTATO LATKES

Classic Potato Latkes image

This recipe is for a classic, unadorned latke; the kind your Bubbe used to make. No kohlrabi or cumin here. Serve them hot and make more than you think you need. They go fast.

Provided by Melissa Clark

Categories     brunch, dinner, lunch

Time 45m

Yield About 3 dozen

Number Of Ingredients 8

2 large Russet potatoes (about 1 pound), scrubbed and cut lengthwise into quarters
1 large onion (8 ounces), peeled and cut into quarters
2 large eggs
1/2 cup all-purpose flour
2 teaspoons coarse kosher salt (or 1 teaspoon fine sea salt), plus more for sprinkling
1 teaspoon baking powder
1/2 teaspoon freshly ground black pepper
Safflower or other oil, for frying

Steps:

  • Using a food processor with a coarse grating disc, grate the potatoes and onion. Transfer the mixture to a clean dishtowel and squeeze and wring out as much of the liquid as possible.
  • Working quickly, transfer the mixture to a large bowl. Add the eggs, flour, salt, baking powder and pepper, and mix until the flour is absorbed.
  • In a medium heavy-bottomed pan over medium-high heat, pour in about 1/4 inch of the oil. Once the oil is hot (a drop of batter placed in the pan should sizzle), use a heaping tablespoon to drop the batter into the hot pan, cooking in batches. Use a spatula to flatten and shape the drops into discs. When the edges of the latkes are brown and crispy, about 5 minutes, flip. Cook until the second side is deeply browned, about another 5 minutes. Transfer the latkes to a paper towel-lined plate to drain and sprinkle with salt while still warm. Repeat with the remaining batter.

  • Chef John's Classic Potato Pancakes. We'll start with this classic recipe and a very important lesson when it comes to making latkes. You've got to squeeze out the liquid from potatoes because the success of your latkes depends on it.
  • Baked Potato Latkes. Nothing too far from the original here. You've still got your onion, egg, and seasonings, but instead of grating raw potatoes, this recipe uses baked and mashed potatoes.
  • Cajun Potato Latkes. Let's kick up the latkes with a bit (or a lot) of Cajun spices and add some sliced green onions for both the color and flavor.
  • Curried Sweet Potato Latkes. Allrecipes member Baritone Bob who shares this recipe, calls it "a spicy-sweet potato version of a traditional Jewish favorite."
  • Apple Potato Pancakes. In this recipe, Allrecipes member HeidiS combines shredded potatoes with a shredded apple. The use of Granny Smith apple is an excellent choice as that particular variety is crisp, sweet-tart, and is perfect for baking and cooking.
  • Mexican Potato Pancakes. These spicy, jalapeno potato latkes are served with a homemade tomato sauce. For extra heat, do not seed jalapeno peppers.
  • Vegetable and Feta Latkes. With this recipe, we welcome zucchini and carrot to the latkes party. There's still a bit of shredded potato and eggs, but instead of flour, this recipe adds matzo meal and crumbled feta as two additional binding ingredients.
  • Chorizo Latkes. Traditionally, chorizo is made from pork, but this recipe uses beef chorizo, which is still packed with a lot of spices and herbs to bump up the flavor and add heat to these potato latkes.
  • Delicious Stuffed Potato Pancakes. Double the latkes, double the fun. These crispy potato pancakes are stuffed with seasoned ground beef! Use this recipe as a base and play around by adding your favorite spices and herbs.
  • Potato Leek Latkes. Parmesan cheese and leeks are mixed in with grated potatoes here, but the real star of the recipe is flaxseed meal. Not only does it boost the recipe's nutritional value, by offering fiber and Omega-3 essential fatty acids, but it also acts as a binder, replacing the flour, and making this recipe gluten-free.
