Ever dreamt of a Healthy Key Lime Pie without the healthy taste? Your prayers have been answered! It's tart and sweet, rich and creamy, and healthy and delicious! You'd never know this pie recipe is low in sugar, low fat, high protein, and gluten free.

2½ cups Graham Cracker Crumbs ((you can use homemade!))
¼ tsp Salt
⅔ cup Unsweetened Vanilla Almond Milk
1 tsp Natural Butter Flavor
one batch Homemade Sweetened Condensed Milk ((made with 1 tsp Xanthan Gum, not ½ tsp))
4 Large Egg Yolks
10g (1 tbs, packed) Organic Corn Starch
57g (¼ cup) Plain, Nonfat Greek Yogurt
1 tsp Key Lime Zest
¾ cup Key Lime Juice ((freshly squeezed))

Steps:

  • Preheat the oven to 350 degrees Fahrenheit.
  • In a medium-sized bowl, stir together all of the ingredients. Press the mixture into a 9.5" pie dish. Bake for 13 minutes, or until fragrant and firm. Let cool while you make the filling.
  • In a large bowl, whisk together the condensed milk and egg yolks. Whisk in the corn starch, then whisk in the yogurt and lime zest.
  • Last, whisk in the lime juice. It will look curdled at first, but just whisk it vigorously and it will become smooth. Mixture should be very thick, like pudding. Scoop the mixture into the crust and bake for ~16 minutes, or until set (when you move the pan, the center should jiggle slightly but stay in place, like jello)
  • Let cool for ~2 hours, then cover and refrigerate overnight. Slice, serve, and enjoy!

1 package (0.3 ounce) sugar-free lime gelatin
2 cartons (6 ounces each) Key lime yogurt
1 carton (8 ounces) frozen fat-free whipped topping, thawed
1 reduced-fat graham cracker crust (9 inches)

Steps:

  • In a large bowl, add boiling water to gelatin; stir 2 minutes to completely dissolve. Whisk in yogurt. Fold in whipped topping. Pour into crust., Refrigerate, covered, until set, about 2 hours.

You can adjust this recipe to have even lower fat, or use all full-fat ingredients. I use regular sugar and one can of full-fat condensed milk, but you could use Splenda and use non-fat milk for both cans. You could also use egg substitute rather than whole eggs. However, I wouldn't go any lower than reduced-fat sour cream, the non-fat is too thin and runny for a topping. And do NOT attempt this with bottled lime juice - blech. This was originally an Emeril recipe that I tweaked to be low-fat.

1 1/2 cups graham crackers (one-third of a package)
1/3 cup sugar
4 tablespoons melted butter
1 (14 ounce) can sweetened condensed milk
1 (14 ounce) can fat-free sweetened condensed milk
1 cup key lime juice or 1 cup lime juice
2 whole eggs
1 cup low-fat sour cream
2 tablespoons confectioners' sugar

Steps:

  • Preheat oven to 375.
  • Crush graham crackers in a ziptop bag with a rolling pin, or use a food processor.
  • Mix in sugar and butter (it's easiest to do this with your hands.).
  • Press crumb mixture into a pie plate.
  • Bake for 8-10 minutes or until crust is golden brown, and allow to cool to room temperature.
  • Reduce oven to 325.
  • Combine condensed milk, lime juice, and eggs - pour into cooled crust.
  • Bake for 15 minutes.
  • Allow to chill at least 2 hours, overnight is better.
  • Combine sour cream and confectioner's sugar, spread over the top of the chilled pie.
  • Garnish with lime zest if desired.
  • If you use a 9-inch pie plate, you might have a little crust mixture and filling leftover - I usually make mini-pies in ramekins with this so I don't waste the lime-y goodness! For those, I bake the crust 6 minutes and the filling 8-10 minutes.

1 1/2 cups low fat graham cracker crumbs (about 5 ounces)
2 tablespoons brown sugar
butter-flavored cooking spray
8 ounces light cream cheese
1 tablespoon lime zest
1 (14 ounce) can fat-free sweetened condensed milk
1/3 cup lime juice (3 or 4 regular limes)

Steps:

  • Preheat oven to 350 degrees.
  • Combine cracker crumbs with brown sugar. Lay a sheet of foil in a 8 x 8 square baking pan, with the sides overhanging the edges. Tuck sides under. Spray foil-lined base with butter-favored cooking spray.
  • Press crumb mixture into pan. Briefly spray cooking spray on top, and press again.
  • In a medium bowl, beat light cream cheese until softened. Add lime zest and condensed milk. Beat until smooth. Add lime juice and beat until well blended.
  • Pour lime mixture on to crumb base. Bake for 25-30 minutes, until center is just set and edges pull away a little. Allow to cool. Chill for at least 2 hours. Cut into 16 bars.

1 (3 ounce) package sugar-free lime gelatin (or any other flavor you want)
2 (6 ounce) containers key lime pie-flavor light yogurt (or any other flavor you want)
1 (8 ounce) container Cool Whip Lite

Steps:

  • Heat water in microwave on high for 45 sec to 1.5 min until boiling. Stir in gelatin until to dissolved.
  • Combine gelatin with yogurt. Fold in cool whip.
  • Let set in fridge for at least 1 hours.
