This one was clipped from the back of the bag of Skinner Egg Noodles. It's good for an easy, one-pan meal the whole family will enjoy. Prep time includes chopping the chicken.

1 tablespoon vegetable oil
3/4 lb boneless skinless chicken breast, cut into 1 inch chunks
1/2 teaspoon garlic powder
1 (14 1/2 ounce) can chicken broth
4 1/2 cups egg noodles, uncooked (6oz.)
16 ounces favorite frozen mixed vegetables
2 cups shredded cheddar cheese

Steps:

  • In 5-quart saucepan over medium heat, heat oil.
  • Sprinkle chicken with garlic powder; cook in oil until no longer pink, about 5 minutes, turning occasionally.
  • Add broth; heat to boiling.
  • Add uncooked noodles and frozen vegetables, stirring to coat noodles with liquid.
  • Heat to boiling; reduce heat.
  • Cover; simmer 10 minutes or until noodles are tender, stirring every 2 minutes.
  • Remove from heat, stir in cheese until melted.

8 ounces uncooked yolk-free wide egg noodles
4 cups water
1 lb boneless skinless chicken breast
1 1/2 cups chopped onions
3/4 cup chopped celery
1/2 teaspoon salt
1/2 teaspoon dried thyme leaves
1 bay leaf
1/8 teaspoon white pepper
1 (10 ounce) can reduced-sodium cream of chicken soup
1/2 cup fat-free buttermilk

Steps:

  • Cook pasta according to package directions, omitting salt.
  • Drain; set aside.
  • Meanwhile, bring water to a boil in Dutch oven over high heat.
  • Add chicken breasts, onions, celery, salt, thyme, bay leaf and pepper.
  • Return to a boil.
  • Reduce heat to low; simmer, uncovered, 35 minutes.
  • Remove chicken.
  • Cut into 1/2-inch pieces; set aside.
  • Increase heat to high.
  • Return liquid in Dutch oven to a boil.
  • Continue cooking until liquid and vegetables have reduced to 1 cup.
  • Remove from heat; discard bay leaf.
  • Whisk in soup and buttermilk until well-blended.
  • Add chicken pieces and pasta; toss to blend.
  • Sprinkle with parsley, if desired.

1 large can condensed cream of chicken soup
1 large can condensed cream of mushroom soup
4 cups chicken broth
2 cups diced cooked chicken meat (use roasted rotisserie chicken for the grocery store for convenience)
2 teaspoons onion powder
1 teaspoon seasoning salt
1/2 teaspoon garlic powder
16 ounces frozen egg noodles

Steps:

  • Combine chicken soup, mushroom soup, chicken broth and diced chicken meat in large pot. Add next 3 ingredients; bring mixture to boil and stir in frozen noodles. Reduce heat to low and simmer for 45 minutes or until noodles are tender.

Super easy comfort food that can be made while you're busy doing other things in the evenings. There is hardly any prep time making it a great recipe for weeknights after work. This is my daughter's favorite meal, she likes it served with green beans and hot rolls.

4 boneless chicken breasts
2 tablespoons butter
1 teaspoon poultry seasoning
1/2 teaspoon salt
1/2 teaspoon pepper
4 (14 ounce) cans chicken broth
2 packages frozen egg noodles
1 can cream of chicken soup
1 cup diced fresh carrot

Steps:

  • Cut chicken into bite sized pieces, sprinkle with poultry seasoning, salt and pepper, and saute in one tablespoon of the butter.
  • When chicken is no longer pink and is starting to turn golden brown, add chicken broth and carrots.
  • Simmer on medium heat approximately 10 minutes.
  • Stir in egg noodles and simmer approximately 25-30 minutes until noodles are tender.
  • Add cream of chicken soup and the remaining tablespoon of butter, simmer for 5-10 more minutes and serve.
