Greek Style Lamb Kabobs With Pita and Tzatziki Sauce Recipe image

This great lamb recipe makes a fantastic pita sandwich. Keep your kebabs the width of your pita so you can slide the skewer off into your sandwich.

1 pound/450 g. boneless lamb leg (or shoulder cut into 1 1/2-in. cubes)
24 grape cherry tomatoes
24 (1 1/2-in.) chunks of onion
4 garlic cloves (minced)
1 bunch fresh oregano
2 tablespoons lemon juice (1 lemon, juiced)
1/2 cup/120 mL extra virgin olive oil
Dash kosher salt (or to taste)
Dash freshly ground black pepper (or to taste)
8 large pitas
For the Tzatziki Sauce:
3 cups/700 mL plain yogurt
2 tablespoons lemon juice (1 lemon, juiced)
2 medium cucumbers (peeled, halved, seeded and diced)
1 tablespoon/15 mL fresh mint leaves (finely chopped)
Dash kosher salt (or to taste)
Dash freshly ground black pepper (or to taste)

Steps:

  • Gather the ingredients.
  • Combine the oil, lemon juice, oregano, garlic, and salt and pepper to taste in a small bowl.
  • Add lamb cubes, and toss to coat. Cover and marinate in refrigerator for at least 6 hours, or up to overnight.
  • Drain meat cubes and discard the marinade. Prepare a medium (350°F to 375°F) gas or charcoal grill fire.
  • Thread lamb, tomatoes, and onion pieces onto 4 skewers (5 pieces of lamb, 4 tomatoes, 4 pieces of onion per skewer).
  • Grill for 12 to 15 minutes, turning half way through cooking time to the desired degree of doneness. A thermometer should register 145 F/65 C for medium-rare, 160 F/70 C for medium or 170 F/75 C for well.
  • Serve with warm pita bread, Tzatziki sauce, and salad greens, if using.
  • Gather the ingredients.
  • Stir together the yogurt, cucumber, lemon juice, mint, and salt and pepper to taste in a medium bowl. Refrigerate for at least 1 hour to allow flavors to marry.

One of my favorite things to get at a Greek restaurant is souvlaki. You can get this dish with chicken, pork or lamb. My mother cooked a lot of lamb growing up, so when I order souvlaki, I always get lamb.

1 cup full-fat Greek yogurt
1/2 cup sour cream
1/2 cup finely chopped English cucumber
1/4 cup grated onion
2 tablespoons chopped fresh dill
1 tablespoon white wine vinegar
1/2 teaspoon ground cumin
1/2 teaspoon honey
1/2 teaspoon kosher salt
1/4 teaspoon ground cinnamon
1/4 teaspoon freshly ground black pepper
2 cloves garlic, grated
1 pound ground lamb
2 tablespoons extra-virgin olive oil, plus additional for brushing
2 teaspoons ground coriander
2 teaspoons ground cumin
1 teaspoon kosher salt
1/4 teaspoon ground allspice
1/4 teaspoon ground cinnamon
1 clove garlic, grated
4 to 6 pitas
3 tablespoons extra-virgin olive oil, plus additional for brushing
1 teaspoon zaatar
1 cup thinly-sliced English cucumber
1/4 cup fresh cilantro, roughly chopped
1/4 cup fresh parsley, roughly chopped
2 tablespoons chopped fresh oregano
1 small red onion, thinly sliced (but not too thin) into half-moons
1 large beefsteak tomato, cut into half-moons
1/2 head fresh fennel, thinly sliced
2 tablespoons red wine vinegar
Kosher salt and freshly ground black pepper
Lemon wedges, for garnish

Steps:

  • Make the sauce: In a medium bowl, mix the yogurt, sour cream, cucumber, onion, dill, vinegar, cumin, honey, salt, cinnamon, pepper and garlic until combined. Set aside in the refrigerator to chill.
  • Make the lamb skewers: In a large bowl, combine the lamb, oil, coriander, cumin, salt, allspice, cinnamon and garlic until evenly coated. Divide the meat into 6 portions and form into logs. Thread each log onto a skewer, then transfer to a plate, cover and chill in the refrigerator for at least 30 minutes or up to overnight.
  • Heat a cast-iron griddle over medium-high heat until very hot. Brush the griddle with oil. Grill the skewers, turning occasionally, until browned and cooked through, 8 to 10 minutes.
  • To serve: Brush the pitas with oil and sprinkle with the zaatar. Add them to the griddle with the lamb and cook until toasted and warm, 2 to 3 minutes per side.
  • In a large bowl, toss the cucumber, cilantro, parsley, oregano, onions, tomato and fennel. Add the vinegar and 3 tablespoons oil and toss to combine. Season to taste. Remove the meat from the skewers and place on the pitas; top with some salad. Serve with the lemon wedges and tzatziki sauce.

LAMB PITA SANDWICHES

1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon ground cinnamon
Kosher salt
2 to 2 1/2 pounds lamb stew meat, cut into 1- to 2-inch pieces, excess fat removed and discarded
Vegetable oil
1/2 cup red wine, such as Pinot Noir
One 14.5-ounce can diced tomatoes
2 vine tomatoes, seeds removed and chopped
Half a English cucumber, quartered and sliced
Half a white onion, sliced
1/4 cup chopped parsley
2 tablespoons chopped dill
1 tablespoon lemon juice (from 1 lemon)
4 to 6 pita pockets
One 10-ounce container hummus
1 head romaine lettuce, torn in half or in thirds
Kosher salt and freshly ground black pepper

Steps:

  • Add the coriander, cumin, smoked paprika, cayenne pepper, cinnamon and 1 teaspoon of salt to a small mixing bowl. Whisk to combine. Add the spice mixture to the lamb stew meat and use tongs to coat the meat in the spices. Set aside.
  • Heat an electric pressure cooker to the sauté setting and add 1 tablespoon of vegetable oil to the pot. Once the oil is shimmering, add the stew meat in batches, being sure not to overcrowd the pot. Brown the meat on all sides, about 4 minutes, then remove to a plate. Add an additional tablespoon of oil, if needed, before adding another batch of meat. Once all the meat has been browned and removed from the pot, add the red wine to deglaze, stirring and scraping the bottom to release any brown bits stuck to the base of the pot. Once the alcohol smell has burned off, 1 to 2 minutes, add the canned diced tomatoes and the browned meat. Stir to combine.
  • Place the lid on the pressure cooker and seal. Set to high pressure according to the manufacturer's instructions. Once at high pressure cook for 15 minutes then allow the pressure cooker to naturally release for 10 minutes before manually venting the rest.
  • While the lamb cooks, add the fresh chopped tomatoes, cucumber, onion, parsley, dill, lemon juice, 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper to a medium bowl. Toss to combine and set aside until ready to assemble.
  • To assemble, slice each pita in half and open to create a pocket. Slather each side of the pocket with hummus, then add in a few pieces of romaine lettuce, covering the hummus. Next add a few spoonfuls of the cucumber-onion mixture and top with a few pieces of cooked lamb. Continue the process with the remaining ingredients.

MINI LAMB PITAS WITH TZATZIKI

1/2-Ib. lamb shoulder
1/2-cup plain low-fat yogurt
1 Cup cucumber, cubed and diced (seeds removed)
1 Cup cucumber, cubed and diced (seeds removed)
1/4-cup fresh dill
1/4-cup fresh lemon juice
1/4-cup mint
1/4-cup fresh garlic
1/4-cup virgin olive oil
1 package pita bread (Sahara store bought)
1 cup fresh parsley leaves

Steps:

  • In a bowl combine mint and garlic for your marinade. Add lamb shoulder and mix, pressing in the leaves and garlic into the lamb. You can set aside overnight in an airtight container.
  • For tzatziki, combine cucumber, yogurt and dill in a bowl and add salt and lemon juice to taste. Set aside (you can also make this a day ahead and place in an airtight container).
  • Place lamb on a hot grill for 10-15 minutes each side or until done. Slice and set-aside. Cut your pita rounds into quarter points and fill with sliced lamb and tzatziki. Garnish with parsley and serve.

LAMB OR BEEF KEBAB PITAS WITH TZATZIKI

1 lb ground lamb (preferably leg, with all the fat) or 1 lb ground chuck
1 small red onion, finely minced
2 garlic cloves, finely minced
1 tablespoon red wine vinegar
1 egg, lightly beaten
1/3 cup dry breadcrumbs
2 tablespoons Greek yogurt or 2 tablespoons sour cream
1 teaspoon dried oregano (well-rubbed between your fingers)
1/2 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon ground cayenne pepper
salt and pepper
1 cup Greek yogurt (no other yoghurt will do) or 1 cup sour cream
1 garlic clove, crushed to a paste
3 tablespoons olive oil
1 tablespoon red wine vinegar
5 fresh mint leaves, minced
1/4 cup fresh dill, minced
1/4 cup cucumber, grated, squeezed dry (unpeeled, washed)
salt
fresh tomato, thinly-sliced
thinly sliced red onion
minced parsley
grilled pita bread

Steps:

  • In a bowl, knead together all the kebab ingredients. Form into sausages of about 4-5 inches in length. Cover and leave in the fridge for about an hour.
  • Prepare the Tzatziki: In a bowl, whisk together all the ingredients. Taste, and adjust seasoning. Refrigerate for 30 minutes.
  • Preheat oven to 400°F (this is also great on the bbq).
  • Grill the kebabs until brown and crusty on all sides, and cooked through, about 12-14 minutes.
  • Get some grilled pita breads.
  • Place 1 or 2 kebabs inside each pita and add some slices of tomato, onion, some tzatziki, and a generous sprinkling of parlsey.
  • Roll up as tightly as you can without mushing up your sandwich, and wrap a piece of aluminum foil around bottom to catch any drips.
  • Enjoy one of the best sandwiches you've ever had.

Steps:

  • Mixed all of the Tzatziki ingredients in a bowl and chill for at least an hour. The longer the better as this allows the flavours to fuse!
  • Mix the diced lamb and the marinade ingredients together in a bowl and chill for at least an hour. As above, the longer the better.
  • Divide the marinated lamb to create 8 skewers. These need grilling for 15 minutes on a medium heat. Turn the skewers occasionally to make sure they are evenly cooked.
  • Cook the chorizo in a large frying pan for 10 minutes on a medium heat to allow the oil to escape. Drain around a ½ of this oil before adding the tomatoes, red and spring onion. Cook for a further 5 minutes. Finally, add the chip peas and heat through for a final 5 minutes.
  • Heat the pitas in the microwave for 2 minutes on full heat while you are serving up.

  • To prepare this Greek lamb souvlaki recipe, cut the meat into equal sized (3 cm) chunks and set aside.
  • Prepare the marinade for the lamb kebab. In a large bowl add the olive oil, garlic, lemon juice, the herbs and spices and season with freshly ground pepper – don’t add salt yet. Whisk all the ingredients to combine. Add the meat and the chopped onions and blend to coat. Cover the bowl with plastic wrap, chill and let marinade for at least 4 hours. It’s best to leave the meat for the lamb souvlaki marinade overnight, to soak up all the wonderful flavours. (If you are at home blend the marinade once in a while).
  • In the meantime prepare the tzatziki sauce. Pour in a blender the olive oil and grated garlic and blend until combined. Remove the skin and the seeds of the cucumber and grate it into a large bowl. Season with salt and pepper and leave aside for 10 minutes. Wrap the grated cucumber in a towel and squeeze, in order to get rid of the excess water. In a bowl, add the cucumber, the blended garlic and oil, the yogurt, 1-2 tbsps of red wine vinegar, a pinch of salt and blend, until the ingredients are combined. Store the tzatziki sauce in the fridge and always serve cold.
  • To assemble the lamb kebab you can either use wooden or metal skewers. For this lamb souvlaki recipe, you will need about 10 skewers, depending on the size of each souvlaki. If using wooden skewers, cut them to fit your griddle pan and soak them in water. (This will prevent them from burning.) Lift the chunks of lamb out of the marinade and thread the pieces, comfortably, on the skewers. At this point don’t forget to season your lamb souvlaki with salt.
