SLOW-COOKED LAMB WITH ONIONS & THYME

Slow-cooked lamb with onions & thyme image

Five ingredients, one pot, no effort. This meltingly tender lamb dish is satisfyingly rich, and virtually cooks itself

Provided by Mary Cadogan

Categories     Dinner, Main course

Time 3h30m

Number Of Ingredients 5

half a leg of lamb (about 1.25kg/2lb 12oz)
1kg onion (about 4 large ones)
handful of thyme sprigs
300ml red wine
large handful parsley

Steps:

  • Firstly, prepare the lamb. Heat oven to 160C/fan140C/gas 3. Wipe the meat all over and season well. Heat 3 tbsp of olive oil in a large heavy flameproof casserole, add the meat and fry all over on a fairly high heat for about 8 mins, turning until it is evenly well browned. Remove to a plate.
  • Thinly slice the onions. Add to the pan and fry for about 10 mins, until softened and tinged with brown. Add a few of the thyme sprigs and cook for a further minute or so. Season with salt and pepper.
  • Sit the lamb on top of the onions, then add the wine. Cover tightly. Bake for 3 hrs. You can make to this stage up to 2 days in advance, then reheat for 45 mins.
  • To finish off, strip the leaves from 2 thyme sprigs and chop them with the parsley. Scatter over before serving.

SAGE & THYME CALVES' LIVER WITH WILD MUSHROOMS & PANCETTA

Sage & thyme calves' liver with wild mushrooms & pancetta image

Think you don't like liver? This tasty, pan-fried version with herbs, mushrooms and bacon on toast may convert you

Provided by James Martin

Categories     Lunch, Main course

Time 40m

Number Of Ingredients 10

8 slices pancetta (or streaky bacon)
1 tbsp vegetable oil
500g calves' liver , sliced into 4 steaks
50g butter
small bunch sage , leaves picked, most roughly chopped
½ small bunch thyme , leaves picked
4 shallots , finely sliced
300g mixed wild or chestnut mushroom , cleaned
zest and juice ½ lemon
4 thick slices of rustic bread , toasted (preferably sourdough)

Steps:

  • Put the pancetta in a large frying pan and cook until crisp, then lift out with a slotted spoon and drain on kitchen paper. Heat the oil in the pan. Sear the liver steaks for 1-2 mins each side - so they're just still pink in the middle - using half the butter towards the end to baste the meat. Remove the liver to a plate using the slotted spoon and leave to rest, covered with foil, for 10-15 mins.
  • Add the chopped sage, thyme leaves, shallots, mushrooms and lemon zest to the pan. Fry on the highest heat for a few mins, then add the lemon juice and some seasoning. Cook for 3-5 mins until slightly saucy and the mushrooms are soft.
  • Heat the remaining butter in your smallest saucepan until just foaming. Add the remaining whole sage leaves and fry for a few mins until crisp. Drain on kitchen paper with the pancetta. Sit the liver on toast, spoon over the mushroom mixture and scatter over the pancetta and crisp sage. Serve immediately.

CALF LIVER AND ONIONS WITH BACON

Calf Liver and Onions With Bacon image

Two or three spashes of red wine vinegar give a fresh kick to this old standby. Cooking with bacon also "lightens" the liver taste. When my children were small, I called this "Cowboy Steak." It was inspiration born of desperation. They ate it with enthusiasm.

Categories     Beef Organ Meats

Time 1h15m

Yield 4 serving(s)

Number Of Ingredients 6

8 slices cooked bacon, torn in bite sized pieces
2 sliced onions (I use a little more)
1 lb calf liver
1/2 cup flour (more if needed for dredging meat)
salt and pepper
2 -3 dashes red wine vinegar

Steps:

  • Cook bacon in large skillet. Set cooked bacon aside, leaving as much grease as possible in skillet.
  • Tear bacon in bite sized pieces.
  • Cook sliced onions in grease, with a little salt and pepper, for about 15 minutes, or until limp.
  • Remove onions, set aside, leaving as much grease as possible in skillet.
  • Lightly salt and pepper liver slices (I cut long slices in half) and dredge heavily in flour.
  • Place liver in hot grease, cooking until brown on both sides, over medium heat.
  • When liver is browned, add onions, bacon pieces, and 2-3 splashes red wine vinegar.
  • Salt and pepper to taste (remember, you have already used some, so go easy until you can taste it).
  • Add enough water to make a gravy, barely covering the meat. Stir water to combine with other ingredients evenly.
  • Cover, cook on low for 15-20 minutes. It should look like you have gravy.

LAMB BACON

Lamb Bacon image

Provided by Noah Bernamoff

Categories     Lamb     Marinate     Meat     Smoker     Advance Prep Required

Yield Makes 1 to 1 1/2 pounds

Number Of Ingredients 7

5 tablespoons Diamond Crystal kosher salt
2 teaspoons pink curing salt
3 tablespoons (packed) dark brown sugar
4 dried bay leaves, crushed
1 tablespoon plus 1 teaspoon freshly ground black pepper
1 1 1/2- to 2-pound boneless lamb breast, with silver skin intact
Cherry wood chips, apple wood chips, or other fruit wood chips

Steps:

  • Make the rub: Combine the salts, brown sugar, bay leaves, and pepper in a bowl and transfer to a large plate or a baking dish. Dredge the lamb breast in the rub and massage it into the surface of the lamb. (You'll probably have some rub left over.) Shake off any excess rub and let the meat sit, covered, in the refrigerator for 5 days, turning the lamb over once a day.
  • Rinse the lamb breast thoroughly, pat it dry with paper towels, and allow it to sit uncovered in the refrigerator overnight.
  • Cook the lamb bacon: Soak the wood chips in water for 30 minutes, then drain and them pat dry. Prepare your smoker. When the temperature inside the smoker has reached 200°F and the wood chips are smoking steadily, add the lamb, and let smoke. Maintain the temperature at 200°F at least until a thermometer inserted into the center of the meat reads 160°F. This will take about 2 hours, but we recommend smoking for 3, as longer cooking enhances the quality of the bacon. Allow the bacon to cool completely in the fridge and store, wrapped, for up to 1 month.
  • Tip: The size of lamb breasts can vary quite a bit, so be sure to buy yours deboned or boneless. A bone-in breast will lose 30 to 35 percent of its weight upon deboning.

LIVER AND BACON

Liver and Bacon image

This is the best way to make juicy and tender liver. Even the kids will enjoy this!!!

Provided by LADYBARBER01

Categories     World Cuisine Recipes     European     French

Time 35m

Yield 6

Number Of Ingredients 3

1 pound bacon
1 pound calves' liver, sliced
1 (5.5 ounce) package pork flavored seasoning coating mix (e.g. - SHAKE-N-BAKE)

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Transfer bacon to a plate, reserving a small amount of grease in the pan and the rest aside.
  • Pour seasoning coating mix into a large resealable plastic bag. Place calves' liver in bag one slice at a time; seal, and toss to coat.
  • Cook liver in bacon grease over medium high heat, turning occasionally to brown both sides. Depending on the size of your skillet you may need to work in batches and add more bacon grease. Liver is done when juices run clear. Return bacon to the skillet during the last 2 minutes of cooking to warm through. Serve hot with your favorite side dish.

  • Wearing gloves, rub the goat or lamb belly with exactly 6 ounces of the cure, or 1 cup for the total 2 lbs of meat. (Weighing the seasonings helps ensure things don’t come out too salty.) Rub the cure in well, massaging it in to ensure proper seasoning. Refrigerate the meat for 2 days. If using fat caps, score the meat with a cross hatch pattern to help release fat.
  • Meanwhile, cover the wood chips with water and store in a cool place in a covered container that won’t absorb scents, like a metal mixing bowl covered with cling film, for example. The woodchips can be prepared 24 hours or more in advance.
  • To prepare the bacon for cooking, drain the woodchips and reserve, then start a grill. Remove the goat from the fridge. Move the coals to one side of the grill when they’re very hot to get one side as cool as possible, then put a handful of drained wood chips on the coals.

  • Set a large pan over a medium-low heat and add a drizzle of oil, followed by the bacon. Gently fry the bacon until the pieces start to render a little fat and take on some colour. Add the thinly sliced onions and fry gently for 15-20 minutes, stirring as they cook. Once the onions are lovely and soft and beginning to caramelise, add the garlic and chopped sage and continue to cook for a further 3-4 minutes.
