PARMESAN BREADSTICKS

Pinch of sugar
1 teaspoon active dry yeast
3 tablespoons extra-virgin olive oil, plus more for brushing
2 1/4 cups all-purpose flour, plus more for dusting
1 teaspoon kosher salt
1 large egg white
Grated parmesan, for topping

Steps:

  • Combine 3/4 cup warm water (105 degrees F to 110 degrees F) and the sugar in a food processor. Sprinkle the yeast on the surface and set aside until foamy, about 5 minutes. Add the olive oil and pulse once. Add the flour and salt; pulse to form a smooth dough, about 2 minutes. Brush a large bowl with olive oil. Transfer the dough to the bowl and form into a ball. Cover with plastic wrap and set aside in a warm place until doubled in size, about 1 1/2 hours.
  • Lay out a large sheet of parchment paper and brush with olive oil. Transfer the dough to the parchment and pat into a 6-by-12-inch rectangle. Brush the dough lightly with olive oil. Cover with plastic wrap and set aside 10 minutes. (At this point, you can refrigerate the dough, covered, up to 12 hours.)
  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment; brush with olive oil. Cut the dough in half crosswise with a chef's knife or pizza cutter to make two 6-inch squares. Cut each half into 10 equal pieces.
  • On a lightly floured surface, stretch and roll each piece of dough with your hands into a thin 12-to-14-inch-long rope. Transfer the ropes to the prepared baking sheets, arranging them about 1/2 inch apart.
  • Whisk the egg white with 2 tablespoons water in a small bowl. Brush the breadsticks lightly with the egg wash, then sprinkle with parmesan. Cover loosely with plastic wrap; set aside 10 minutes.
  • Uncover the breadsticks and bake until golden and crisp, about 30 minutes, rotating the baking sheets halfway through. Slide off the baking sheets and let cool on racks. (The breadsticks will crisp up as they cool; if they are still flexible, bake about 7 more minutes.) Store in an airtight container up to 3 days.

20 medium potatoes, peeled
2 teaspoons salt
60 g butter, melted
1/4-1/2 cup parmesan cheese, grated
2 tablespoons breadcrumbs

Steps:

  • Slice potatoes at 5 mm intervals through the center.Don't cut all the way through.
  • Place potatoes cut side up in a greased baking pan. Sprinkle with salt and brush with melted butter.
  • Bake at 220 C for about 45 min or till the potatoes are tender,brushing with butter.
  • Sprinkle with parmesan and breadcrumbs and bake for another 10 minute.

1/2 cup olive oil
2 lbs red potatoes, peeled and sliced
2 tablespoons caraway seeds
4 tablespoons butter, at room temperature (1/2 stick)
salt and pepper

Steps:

  • Preheat oven to 400 degrees.
  • Pour oil into a roasting pan and heat in the oven for 10 minutes. Remove pan from oven.
  • Spread potatoes over the bottom of the pan.
  • Return to oven and roast, uncovered, for1 hour, until the potatoes are crisp on the outside and tender inside.
  • A few times during the baking, shake the pan to toss the potatoes so they brown evenly.
  • Add caraway seeds and butter and mix well to melt the butter and coat the potatoes with the seeds.
  • Season with salt and pepper to taste. --.

Well, I failed at making bamieh. But I'm gonna try it again. Mine didn't have the shape supposed to have,otherwise it tasted great! Indians have a very similar dessert, just the syrup is slightly different.

125 g flour
3 eggs
200 g sugar
4 -5 tablespoons cooking oil
2 -3 tablespoons rose water

Steps:

  • Mix cooking oil with a glass of water and 1-2 spoons of sugar, and bring to a boil.
  • Pour in flour and mix well.
  • When water boils off and the mix thickens, remove from heat. Allow the mix to cool down, then add eggs and mix well until smooth.
  • Heat oil in a pan until hot. Pour the mix through a funnel into the pan, creating flattened balls about 3 cm in diameter.
  • Fry on both sides.
  • Mix well sugar, rose-water, and a glass of water.
  • Heat until water comes to a boil, and the syrup thickens.
  • Remove from heat.
  • Soak baamieh in the syrup for about 5 minutes, then serve.

2 eggs
1/2 cup milk
12 slices bread, crusts removed
1-1/2 cups grated Parmesan cheese
1 tablespoon dried parsley flakes
1/2 cup butter, melted

Steps:

  • In a bowl, beat eggs and milk. Dip four slices of bread into egg mixture; place each between two plain slices. Cut each stack into three strips. Combine Parmesan cheese and parsley. Dip all sides of each strip in butter; roll in cheese mixture. Place 2 in. apart on ungreased baking sheet. , Bake at 375° for 10-12 minutes or until lightly browned. Serve warm.
