Lemon Butter Baked White Fish image

This 15-minute baked white fish dinner recipe is easy to make and always a crowd pleaser. Ideal for any mild white fish!

4 6-ounce white fish fillets (such as tilapia, cod or whitefish )
1/4 cup butter (unsalted, softened)
2 cloves garlic
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons minced herbs (such as parsley, oregano, basil)
1 lemon (zested and thinly sliced)

Steps:

  • Pre-heat oven to 350 degrees.
  • In a small bowl mix together softened butter with garlic, salt, pepper, minced herbs and lemon zest.
  • Spray a baking dish with cooking spray and place fish fillets in a single layer.
  • Brush butter mixture evenly on top of fish then top with lemon slices.
  • Bake until fish flakes easily with a fork, about 15-20 minutes.

Lake Superior Whitefish Provençal image

This light and easy Lake Superior Whitefish Provencal recipe is as flexible as it is beautiful and delicious. Make less, or more, to feed two or ten people. Make the salad ahead, or make it on the spot. Make it as written, or make it your own. This recipe will be a fast favorite!

2 Tbsp Shallot (, finely chopped)
1 - 1 1/2 cups Cherry Tomatoes (about 24) (, quartered )
1/4 cup Kalamata olives (about 12) (, pitted and quartered)
2 Tbsp Capers - with brine
2 Tbsp dry White Wine or White Wine Vinegar
1 clove Garlic (, finely chopped)
1 tsp fresh Thyme, finely chopped (or ½ teaspoon dried thyme)
1 - 2 tsp fresh Basil, finely chopped (, plus more for garnish)
1 Tbsp Extra Virgin Olive Oil - or more to taste
Black Pepper - to taste
Salt* - to taste, if needed
2 Tbsp Olive Oil or Butter
1/4 cup Shallots (, finely chopped)
1 cup dry White Wine ((vegetable stock may be used instead))
1 - 1 1/2 pounds Lake Superior Whitefish fillet(s) (, bones removed)
Salt and Pepper - to taste

Steps:

  • For the Provençal "Salad": Combine above ingredients in a glass bowl, and allow to rest at room temperature while you prepare the fish. This may be prepared several hours or up to a day ahead. Cover and keep refrigerated if not serving within two hours.
  • For the Fish: Add oil or butter and shallots to a warm pan, and sauté for a minute or two over medium-high heat - just until shallots start to become translucent. Add the white wine or stock - enough so that the entire bottom of the pan is covered with about ¼" of liquid. Simmer for another minute or two to allow to reduce slightly. Add Whitefish fillet(s) to pan, skin-side down (the skin is easily removed when fish is cooked). Baste fillet(s) with wine/stock mixture and reduce heat to medium-low. Cover pan and continue cooking for 8 - 10 minutes. Baste fish occasionally during cooking, making sure the liquids are slowly simmering (not boiling).Fish is fully cooked when the it's the same color all the way through, and internal temperature reaches 140°F.
  • To Serve: Portion and serve fish over Israeli Cous Cous and Steamed Asparagus (as shown here), or with rice and fresh greens.

Seared Lake Superior Whitefish with a Mousseline Mustard Sauce over a Bed of Spinach and Mushrooms served with Saffron Potatoes image

1 pound shiitakes
Olive oil
1 pound spinach leaves, rinsed
8 medium sized potatoes
1 tablespoon saffron
4 fillets (7 to 8-ounces) Lake Superior jumbo whitefish
White pepper and salt
1 leek
Mousseline Mustard Sauce, recipe follows
4 medium shallots, chopped
1 cup dry white wine
1 tablespoon champagne vinegar
Pinch salt
Pinch white pepper
1 tablespoon heavy cream
1 cup butter, softened
2 tablespoon whole grain Dijon mustard

Steps:

  • Heat a deep fryer to 350 degrees F.
  • Saute mushrooms in a skillet with 1 tablespoon of olive oil until soft. Keep warm in pan.
  • Saute spinach in pan with 1 tablespoon of olive oil until soft. Keep warm in pan.
  • Peel potatoes. Cut off sides of potatoes. Add potatoes to a pot of boiling water with saffron, for color and taste. Boil until tender. Drain.
  • Season the fish with white pepper and salt on both sides. Heat a non-stick skillet over high heat. Brush fish on both sides with olive oil. Add fish to skillet and sear on both sides, 3 minutes each side.
  • Using only the white part of the leek, halve lengthwise. Take each half and julienne thinly. Wash and dry. Deep fry in hot oil for 1 to 2 minutes until crisp. Drain on paper towels.
  • Put spinach in center of plate. Put mushrooms on spinach. Put whitefish on top of mushrooms. Cover fish with Mousseline Mustard Sauce. Put 2 potatoes on side of plate. Put a small heap of leeks on top of fish.
  • Combine in a saucepan, shallots, white wine, vinegar, salt and pepper. Reduce to 10 percent of its original volume. When reduced, add heavy cream. Slowly whisk in soft butter, spoon by spoon. Fold in mustard. Adjust seasoning, to taste.

This is a very easy recipe that can be made on a budget. Whitefish like catfish, whiting, and tilapia can be used. It's healthy and quick, I make this on busy weeknights.

2 tablespoons light mayonnaise
2 tablespoons parmesan cheese
lemon pepper
breadcrumbs

Steps:

  • Preheat oven to 350°F.
  • Cover baking sheet with foil and coat with light cooking spray.
  • Using a knife, spread 1/2 tbsp mayonnaise onto each fish fillet.
  • Sprinkle each fillet lightly with parmesan cheese.
  • Sprinkle each fillet with lemon pepper.
  • Sprinkle each fillet lightly with breadcrumbs.
  • Bake for 15 minutes or until fish flakes easily.
