KRISSY'S TACO CHILI SUPREME

Krissy's Taco Chili Supreme image

This taco-inspired chili definitely has a delicious Southwestern flair. Substituting ground beef for turkey lightens up the meal and makes the chili a bit healthier (if you're looking for a healthy recipe). We loved the suggestion of serving this with tortilla chips; it makes it more like a cowboy salsa. Add a little cheese and...

Time 4h10m

Number Of Ingredients 10

1 lb ground turkey
32 oz diced tomatoes
2 can(s) whole kernel corn
2 can(s) black beans
2 can(s) chili beans
1 can(s) chopped green chiles
2 pkg taco seasoning
16 oz sour cream (optional)
16 oz shredded cheddar cheese (optional)
1 pkg tortilla chips (optional)

Steps:

  • 1. Cook ground turkey until there is no pink and drain.
  • 2. Put cooked turkey in a large Crock Pot or stock pot.
  • 3. Before you add your canned ingredients do NOT drain anything. The liquid from the canned ingredients is how you get your liquid for this chili. Add tomatoes, corn, black beans, chili beans, chopped green chiles, and taco seasoning.
  • 4. Stir well until everything is blended.
  • 5. Cook for 4-6 hours on low in a Crock Pot or simmer 30-45 minutes on the stove.
  • 6. Once your chili is ready, you can top it with sour cream, cheese, and tortilla chips (crunched up in the chili is GREAT!). I have also played around with other toppers like croutons and green onions. The greatest part about this dish is you can get very creative with your ingredients.

TACOS SUPREME

Tacos Supreme image

Once you go healthy you never go back. Every chance I get (which is always) I add nutrition to "traditional" foods that everyone eats thereby personalizing them and making it that much better for you. As you may have noticed by checking out my other recipes, I virtually add garlic, spinach and carrots to most every dish. And, what's most fascinating is that each one of them tastes scrumptiously distinctively different! Once you try my new twist to 'plain old' tacos, you'll never go back. Enjoy!

Number Of Ingredients 17

1/4 lb lean ground turkey
1/4 lb lean ground beef
1/4 cup textured vegetable protein (uncooked)
1 teaspoon olive oil
6 garlic cloves (thinly sliced)
1 red pepper
1 green pepper
1 yellow pepper
1 orange bell pepper
1 carrot (shredded)
1/2 cup celery (diced)
2 tomatoes (Roma)
2 cups spinach (coarsely chopped)
4 ounces colby-monterey jack cheese (shredded)
1 teaspoon cumin

Assemble tacos by layering meat, then sauce then cheese then spinach. Serve with avocado slices if desired. Enjoy!
