Yield Makes 1 quart

Number Of Ingredients 8

1 heart of romaine
1 teaspoon chopped garlic
1/2 teaspoon grated peeled ginger
1/4 teaspoon coarse Korean hot red-pepper flakes
1 tablespoon Asian sesame oil
1 tablespoon soy sauce
2 teaspoons water
1 teaspoon sesame seeds, toasted and crushed with side of a heavy knife

Steps:

  • Cut romaine crosswise into 2-inch pieces and put in a bowl.
  • Cook garlic, ginger, and red-pepper flakes in sesame oil in a small heavy skillet over medium-low heat, stirring, until garlic begins to sizzle, about 30 seconds. Stir in soy sauce and water and bring to a boil.
  • Pour hot dressing over romaine and toss to coat. Sprinkle with sesame seeds. Marinate, stirring occasionally, at least 30 minutes.

1 heart romaine lettuce
1 teaspoon chopped garlic

1/4 teaspoon crushed red pepper flakes
1 tablespoon sesame oil
1 tablespoon soy sauce
2 teaspoons water
1 teaspoon sesame seeds, toasted and crushed with side of a heavy knife

Steps:

  • Cut romaine crosswise into 2-inch pieces and put in a bowl.
  • Cook garlic, ginger, and red-pepper flakes in sesame oil in a small heavy skillet over medium-low heat, stirring, until garlic begins to sizzle, about 30 seconds. Stir in soy sauce and water and bring to a boil.

  • Note:
  • Romaine can be made 1 day ahead and chilled. Bring to room temperature before serving.

  • Make my Korean dressing aka Kitchen Sink Yangnyeom Jang (see Korean Sauces II post for recipe) by mixing soy sauce, vinegar and sugar until the sugar fully dissolves. Mix in the remaining ingredients (below).
  • Toss torn greens with Korean soy dressing and serve immediately or serve whole leaves and dressing on the side (see pic below). You can also allow your guest to dress their own salad or dip the lettuce in the sauce instead.

  • Thinly slice yellow onion and soak in a bowl of cold water. While the onion soaks, wash and chop the lettuce. Dry the lettuce and set in a bowl.
  • Combine the soy sauce, gochugaru, honey, sesame oil, minced garlic, vinegar, and sesame seeds together in a bowl. Mix together until fully combined.
  • Remove the sliced onions from the bowl of water. Pat dry to remove moisture. Place onions in the bowl with the lettuce.
  • Once the rest of the meal is prepared a set on the table, pour the dressing over the lettuce and onions. Fully mix together and serve in a bowl on the table. Enjoy!
