TERIYAKI CHICKEN YAKI UDON (STIR-FRIED UDON NOODLES)



Teriyaki Chicken Yaki Udon (Stir-fried Udon Noodles) image

A quick and easy stir-fried chicken teriyaki yaki udon recipe, made with leftover chicken, vegetables, chewy udon noodles and tossed with a sweet and sticky teriyaki sauce. Great for using up leftovers, or when you want a simple meal in less than 30 minutes!

Cooked chicken ((or any leftover meat. Approx. 2 cups, shredded or chopped))
1 brick of Frozen Sanuki Udon Noodle
2 cups Cabbage ((approx. 1/4 of a small cabbage, finely sliced))
1 cup carrot ((finely sliced into matchsticks))
1 medium onion ((sliced))
1 clove garlic ((finely chopped))
1/2 cup water
1/3 cup soy sauce
3 tablespoons honey
2 cloves garlic ((finely chopped))
1/2 teaspoon sesame oil
1 teaspoon ginger ((optional, grated))
2 tablespoons corn starch
2 tablespoons water ((cold))

Steps:

  • Wash and peel (optional) the carrot, and cut them into thin slivers and set aside
  • Wash and cut the cabbage into half, and then cut each half into half again so you get 1/4 of a cabbage. Use only 1/4 of the cabbage. Cut out the core of the cabbage and cut them into thin slices and set aside
  • Cut off the ends of the onion and then peel it. Cut the onion in half and then place the onion flat side down on the cutting board and cut them into thin slices and set aside
  • Peel and finely chop the garlic. Set aside 1 tablespoon for the sauce and set the rest of it a side for the stir fry.
  • Grate the ginger and set aside later for the sauce
  • Hand shred, or thinly slice the leftover chicken and set aside
  • Place a frozen brick of udon noodles into a colander and run it under cold water to melt the ice. Once the noodles are soft and pliable (it should take about 1-2 minutes), they are done. Set it aside
  • Set a small pot on the stove on medium-low heat
  • Add a bit of oil to it. Once the oil is hot, add in the garlic and ginger and toast it until it is brown (approximately 1-2 minutes)
  • Once the garlic and ginger has browned, add in the soy sauce, water and honey and let it simmer for 1-2 minutes
  • While the sauce is simmering, mix corn starch and cold water together to make a corn starch slurry and set it aside.
  • Once the sauce has simmered for a few minutes, stir the sauce quickly with a utensil while adding in the corn starch slurry slowly. Keep stirring until the sauce thickens.
  • Once the sauce thickens, set it aside for later.
  • Use a large frying pan and set the stove to medium to medium high heat.
  • Add 2 tablespoons of oil to the frying pan and wait for it to get hot.
  • Once the oil is hot and shimmering, add in the onions and cook them until they are soft (approximately 1-2 minutes)
  • Then add in the carrots and cabbage and stir fry it with the onions. Try to leave it on the pan for 20-30 seconds without touching it every minute to give the cabbage a bit of a char. Cook everything for approximately 3-4 minutes or until the vegetables are soft.
  • Add in the garlic and cook for another 1-2 minutes - we put the garlic last so it doesn't burn.
  • Add in the chicken and mix everything together and cook for another 1-2 minutes.
  • Add in the noodles and cook for 1 minute
  • Add in the sauce and cook everything for 1 minute
  • Once everything is all cooked, plate it and enjoy!

Thick and chewy udon noodles stir fried in kimchi butter with juicy slices of chicken thigh, crispy crumbled bacon, spicy kimchi, all topped with a fried egg, this udon stir fry is ready to devour in 15 minutes!

1/2 pound boneless, skinless chicken thighs
12 ounces udon noodles (cooked and drained)
1 tablespoon soy sauce
4 slices bacon (cooked and crumbled)
1 teaspoon sesame oil
4 garlic cloves (minced)
2 tablespoons mirin
Green onions (for garnish)
4 fried eggs (optional)
1 tablespoons Korean soy bean paste
2 tablespoons minced kimchi
1/4 cup unsalted butter (softened)

Steps:

  • Add 1 tablespoon of kimchi butter (see below for kimchi butter instructions) to a skillet and heat over medium heat. Add the chicken thighs and cook, 3-4 minutes per side, until no longer pink in the middle.
  • Remove and set aside to cool. Once cool to the touch, slice the chicken into bite sized pieces. You can do this part in advance if you'd like.
  • Add another tablespoon of kimchi butter to the skillet and heat over medium-high heat.
  • Add the chicken and cook for 30 seconds.
  • Add the udon noodles and garlic and cook for 2-3 minutes. It's ok if the noodles char a touch, it adds some flavor. Just be careful they don't burn.
  • Add the mirin and let it cook for 1 minute, tossing often.
  • Add the soy sauce, bacon and sesame oil. Cook until all the liquid has evaporated (about 2-3 minutes).
  • Serve with a fried egg on top (optional) and garnish with green onions.

You can be enjoying this Spicy Udon Stir Fry in just 15 minutes! Endlessly customizable. Add any vegetables or protein you like. Proving that delicious doesn't need to be time consuming!

1 Tbsp vegetable oil (or other neutral cooking oil)
1/2 medium onion (sliced or diced)
1 medium carrot (spiralized and chopped or grated)
1 cup green onion (sliced diagonally (green part only))
3 cups baby spinach
14 oz soft vacuum-packed udon noodles (or see Notes for other types of udon you can use(400g))
1-2 tsp Sambal Oelek (or Asian Chili Garlic Sauce/Sriracha, to taste)
1/4 cup soy sauce
2 tsp rice wine vinegar
1 tsp sesame oil
2 Tbsp brown sugar
2 cloves garlic (minced)
1 Tbsp fresh ginger (minced)
Sesame seeds
Additional sliced green onion
1/4 cup chopped parsley or cilantro

Steps:

  • Prepare your vegetables and set aside. Mix up the sauce by combining all the ingredients in a small bowl. Set aside. If you like, you can fill a large bowl with hot tap water and add udon noodles to the bowl to soak, so they can be separated before adding to the wok This isn't necessary though, as you can add fresh udon noodles directly from the package to the wok. I just find it easier to stir fry them having them separate before the go in to the wok.
  • In a large frying pan or wok, heat oil over medium-high heat until very hot. Add carrots and cook, stirring for a minute or so. Add onions and cook, stirring, until onions are soft and carrots are tender. Add green onion and cook, stirring, for 30 seconds or so.
  • If soaking udon noodles, gently stir to loosen udon noodles and separate, then drain. Add drained noodles (or unsoaked noodles)to the wok and cook, stirring, for 30 seconds or so. (Stir fry a little longer is soaked, to cook off any extra water before adding the sauce). Add sauce and cook for another 30 second, stirring to combine well. Scatter baby spinach over top and cook, stirring constantly, until spinach is wilted.
  • Remove stir fry to a bowl or plate and garnish with sesame seeds, additional sliced green onion and parsley/cilantro.

2 packages udon noodles (7 oz each)
4 chicken thighs (boneless, cut into bite-sized pieces)
1 teaspoon vegetable oil (more as needed)
½ onion (sliced)
4 oz mushrooms (sliced)
1 red bell pepper (sliced)
1 cup snap peas
sesame seeds and thinly sliced green onion for garnish (optional)
¼ cup soy sauce
¼ cup water
2 tablespoons brown sugar
2 teaspoons rice wine vinegar
½ tablespoon cornstarch
1 teaspoon sesame oil
½ teaspoon sriracha
½ teaspoon fresh ginger (optional )

Steps:

  • Combine all sauce ingredients in a small bowl and set aside.
  • Cook udon noodles according to package directions, drain well, and set aside.
  • While noodles are cooking heat oil in a large pan over medium-high heat. Season chicken with salt and pepper to taste and add to the pan. Cook stirring occasionally until browned and no pink remains, about 5 minutes. Remove the chicken from the pan and set aside in a bowl.
  • Add the onions to the pan adding more oil if needed. Cook 2 mintues. Add remaining vegetables. Cook, stirring occasionally, just until tender-crisp, about 5 minutes.
  • Whisk the sauce (the cornstarch can settle to the bottom) and add to the vegetables. Bring to a simmer and let cook for about 1 minute.
  • Add the noodles and chicken with any juices to the pan and toss to combine with the sauce. Cook until heated through.
  • Garnish with sesame seeds and green onions if desired.

370 g Skinless chicken thigh (3 medium to large pieces, cleaned/rinsed in cold water and thinly sliced)
270 g Fresh baby bok choy leaves (3 medium bundles, separated and cleaned/rinsed in cold water)
230 g Brocoli (1 medium to large, cleaned/washed in cold water, stem trimmed and cut into small florets)
210 g Carrots (1 large, cleaned/skin peeled and chopped into long strips)
20 g Red capsicum (1/5 large, cleaned and seeded, chopped into long strips)
600 g Fresh udon noodles
Marinade sauce (mix this sauce well in a small bowl)
6 Tbsp soy sauce
2 Tbsp honey
1 Tbsp minced garlic
1 tsp gochujang
3 sprinkles of ground black pepper

Steps:

  • Prepare the ingredients as mentioned in the above ingredients section. (I used the baby bok choy without chopping it, but you could cut them if you wish.) Marinate the chicken with the marinade sauce for 30 mins. Heat the wok on the stove for 10 seconds on high heat. Add some vegetable oil (I use rice bran oil) and spread the oil with the spatula. Then add the marinated chicken (with all sauce) and cook it for 3 to 5 mins on high heat. Stir it occasionally. Reduce the heat to medium high and add all the vegetables. Stir them well. Cook it for 3 to 5 mins. While you are cooking the chicken from step 3, boil some water in a sauce pan (it takes 5 to 8 mins). Dip the fresh udon noodles and leave it for 3 to 5 mins. During this time, lighly separate the noodles using tongs and/or chopstics. This is to parboil the fresh udon noodles. I prefer soaking udon noodles in warm/hot water before using, as it separates the noodles easily and the sauce gets absorbed better. (However this step can be skipped. In that case, you will need to cook it longer in the next step.) After the time is lapsed, drain the water. Add the udon noodles into the wok and mix them well with the rest of ingredients in the wok for 1 to 2 mins. Serve them on a plate and enjoy!
