KOREAN DUMPLING (MANDU)

Korean dumplings, known as mandoo, can be made with beef, chicken or vegetables, and be boiled, steamed, deep-fried, pan-fried, or added to a soup.

1 pound lean​ ground beef (or pork)
1 onion (finely chopped)
1 cup cabbage (about 1/2 of a small cabbage head, finely chopped and parboiled)
1/2 cup tofu (1 cake, chopped)
4 ounces​ mung bean noodles (or sweet potato noodles, soaked, and then chopped)
3 cloves garlic (finely chopped)
1 tablespoon sesame oil
2 tablespoons soy sauce
1 teaspoon salt
1 teaspoon pepper
1 package circular mandoo wrappers (or​ Japanese gyoza or​ Chinese wonton wrappers )
Dumpling dipping sauce , for serving

Steps:

  • Gather the ingredients.
  • In a large mixing bowl , gently combine the ground beef or ground pork, onion, cabbage, tofu, and noodles.
  • In a separate small bowl, combine the garlic, soy sauce, sesame oil, salt, and pepper.
  • Pour seasoning mixture over meat and vegetables and mix with hands to combine.
  • Place about 1 tablespoon of filling in the center of a dumpling wrapper.
  • Dip your finger in water and wet the perimeter of half of the wrapper.
  • Fold the wrapper in half, pressing to seal and then crimp the edges. Repeat until the filling is gone.
  • You can steam, boil, fry, or sauté the dumplings as you wish.
  • Serve with a basic dipping sauce or a spicy sauce .

1/2 lb ground pork
1 cup chopped cabbage
1 cup bean thread noodles (or cellophane noodles), cooked according to package directions
1/2 cup chopped onion
1/2 cup finely chopped carrot
1/4 cup chopped scallion (green onion)
2 large button mushrooms, finely chopped
1 tsp minced garlic
1 tsp minced ginger
1/4 cup toasted sesame seeds
2 Tbsp sesame oil
24 wonton wrappers (i used squares, but you can use the round ones)
1 large egg, beaten
6 Tbsp water, divided
2 to 4 Tbsp vegetable oil (for frying)

Steps:

  • 1. Cook the pork in a skillet until browned and no pink remains, breaking up the pork into small pieces with a wooden spoon as it cooks.
  • 2. Add cabbage, noodles, onion, carrot, scallion, mushrooms, garlic, ginger, sesame seeds and sesame oil. Stir well, and cook over medium heat for about 5 minutes or until all the vegetables are tender and soft.
  • 3. Remove skillet from heat, and let cool for several minutes.
  • 4. Place wonton wrappers on a flat surface. Spoon about 1 Tbsp of the beefy filling in the center of each wonton wrapper. Whisk the egg and 2 Tbsp water together, and brush the egg wash along 2 opposite edges of the wonton wrappers. Fold the wonton wrapper forming a triangle, lifting one tip up and over the filling so it's resting on top of the tip that's opposite it. Press firmly down on the edges with your fingers, to seal the edges.
  • 5. (Depending on the size of your skillet, you might have to do this in two batches.) Heat about 2 Tbsp oil in large skillet over medium heat. Add several wontons to the hot oil and cook about 2 minutes or until bottom of dumplings are golden brown. Reduce the heat to medium-low, and add remaining 4 Tbsp (1/4 cup) water to the pan. Turn the dumplings, and place lid on the skillet to allow the other side to brown for 2 to 3 more minutes (most of the water should evaporate). Use a slotted spoon to transfer dumplings to paper towels to absorb excess liquid.

2 cups cabbage kimchi, shredded drained
1 cup bean sprouts
1/2 cup carrot, shredded
1 1/2 teaspoons canola oil
2 tablespoons canola oil, divided
1/3 lb ground beef
1/3 cup green onion, sliced
1 1/2 teaspoons sesame seeds, toasted
1 1/2 teaspoons fresh gingerroot, minced
3 garlic cloves, minced
1 1/2 teaspoons sesame oil
1/2 teaspoon salt
1/2 teaspoon pepper
1 (12 ounce) package wonton wrappers
1 egg, lightly beaten
3 tablespoons water

Steps:

  • In a wok or large skillet, stir-fry kimchi, bean sprouts and carrots in 1-1/2 teaspoons oil until tender; set aside.
  • In a small skillet, cook beef over medium heat until no longer pink; drain. Add to the vegetable mixture. Stir in the onions, sesame seeds, ginger, garlic, sesame oil, salt and pepper.
  • Place about 1 tablespoon of filling in the center of each wonton wrapper. Combine egg and water. Moisten wonton edges with egg mixture; fold opposite corners over filling and press to seal. At this point you can freeze them.
  • Heat remaining vegetable oil in a large skillet. Cook wontons in batches for 1-2 minutes on each side or until golden brown, adding additional oil if needed.

1 cup shredded cabbage
½ pound ground beef
½ pound ground pork
1 (14 ounce) can bean sprouts - drained, rinsed, and finely chopped
⅓ cup minced celery
1 green onion, chopped (white part only)
1 tablespoon soy sauce
1 ½ teaspoons cornstarch
1 teaspoon sesame oil
1 teaspoon salt
½ teaspoon ground black pepper
2 (12 ounce) packages wonton wrappers
1 egg, beaten
vegetable oil for frying

Steps:

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cabbage, cover, and steam until tender, 2 to 4 minutes.
  • Heat a large skillet over medium-high heat. Cook and stir beef and pork in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Transfer meat mixture to a large bowl, breaking up any large chunks with a wooden spoon.
  • Heat oil in a deep-fryer or large saucepan to 360 degrees F (182 degrees C).
  • Mix cabbage, bean sprouts, celery, green onion, soy sauce, cornstarch, sesame oil, salt, and pepper into meat mixture. Spoon mixture into the center of each wonton wrapper. Spread beaten egg onto 2 edges of each wrapper and fold wrapper around filling, sealing edges together.
  • Fry wontons in the hot oil until browned, 3 to 5 minutes. Transfer to a paper towel-lined plate using a slotted spoon.
