1 ½ lb boneless pork shoulder, or pork belly, chilled or frozen for easier slicing
½ onion, sliced into thin strips
3 stalks green onion, sliced into 2-inch (5 cm) pieces
3 cloves garlic, minced
1 teaspoon ginger, minced
¼ cup korean red chili paste, gochujang
1 teaspoon red pepper flakes
¼ cup soy sauce
3 tablespoons rice wine
1 tablespoon sesame oil
1 tablespoon sugar
1 teaspoon black pepper
1 tablespoon canola oil
sesame seed, to garnish
rice, to serve

Steps:

  • Slice the pork into extremely thin slices, then transfer to a large bowl. This works best when the pork is super cold or partially frozen.
  • Add in all of the ingredients besides the canola oil, then mix until the pork and the vegetables are evenly coated with the marinade.
  • Cover and marinate in the refrigerator for at least 30 minutes.
  • Heat the oil in a pan over high heat, add pork, being sure not to crowd the pan, stir-fry the pork in batches until slightly crispy on the edges, about 3-4 minutes. If you're using pork belly, cook for a bit longer, around 6-7 minutes.
  • Sprinkle a bit of sesame seeds on top, then serve with rice!

1 1/2 lbs round roast
3 teaspoons Splenda sugar substitute
1 teaspoon vinegar
2 teaspoons cooking wine
1 tablespoon sesame seeds, roasted
1/4 cup soy sauce
2 teaspoons garlic, minced
5 scallions, cut into 1-inch pieces
1/4 teaspoon chili pepper flakes
3 teaspoons sesame oil
1 Asian pear (can substitute with a Kiwi)
1 onion

Steps:

  • 1Freeze the meat just slightly to make slicing easier. Slice into bacon thin slices.
  • Place the meat slices in a large mixing bowl and sprinkle with splenda and mix with hands.
  • Let this sit for about 20 minutes.
  • Mix onion & Asian Pear in blender until liquid, pour into small bowl.
  • Mix soy sauce, splenda, black pepper, sesame oil, cooking wine, vinegar and garlic.
  • Cut green onion into 2 to 3 inch pieces and put in meat mixture.
  • Combine all three mixtures and mix with hands.
  • Refrigerate at least two hours.
  • Grill the meat in the broiler until it's slightly charred.

1 pound pork tenderloin
3 cloves garlic (minced)
1 tablespoon fresh ginger (peeled and grated, about 1 inch piece)
1/4 cup soy sauce (low sodium)
1 tablespoon red chili flakes
1/2 pear (grated)
1 tablespoon sesame oil
1 tablespoon light brown sugar
2 tablespoon vegetable oil (for cooking meat)
2 green onions (chopped for garnish)

Steps:

  • Prepare the pork tenderloin by cutting it into very thin slices. Place the meat in a ziploc bag. Set aside.
  • In a bowl add the garlic, ginger, soy sauce, chili flakes, pear, sesame oil and brown sugar. Whisk everything together well. Pour the marinade over the pork, close the ziploc bag and shake it around a bit to make sure that the all the pork meat is covered in the marinade. Let it marinate at room temperature for 30 minutes or refrigerate for up to 8 hours.
  • Add 1 tbsp of the vegetable oil to a large skillet and heat it over medium high heat. Add half of the meat to the skillet and arrange it so that it's in a single layer. Cook it for about 3 minutes without touching the meat, or until the meat starts to brown, almost char, then turn it and cook for another 3 minutes until it's browned on both sides. Remove from skillet to a bowl and set aside.
  • Add the remaining tbsp of vegetable oil and remaining meat along with remaining marinade. Repeat cooking the same as above.
  • Serve over cooked rice or noodles and garnish with chopped green onions.

2 1/2 tablespoons prepared chili paste (koh-chu-chang)
2 teaspoons spicy red pepper flakes
1/3 cup soy sauce
2 tablespoons sesame seed oil
2 tablespoons honey
3/4 cup brown sugar
salt and pepper
5 garlic cloves, finely minced
kiwi, pureed
1/4 pealed Asian pear, pureed
sliced fresh ginger (10-12 pieces)
3 lbs thinly-sliced bite-sized pork (1/2 lb of meat per person)
10 slices fresh ginger (thin slices)

Steps:

  • 1.Peel and chop Asian pear and kiwi. Add soy sauce and place in food processor. Blend until smooth.
  • 2.Grind garlic and ginger.
  • 3.In a mixing bowl, add chili paste and fruit mixture and ground garlic and ginger, red pepper flakes, sesame oil, brown sugar, honey and mix.
  • 4.Add a pinch of salt and pepper.
  • 1. Massage marinade into the meat by hand. Add slices of fresh ginger.
  • 2.Marinade for a minimum of 30 - 60 minutes. Cover grill with aluminum foil.
  • 3.Place meat flat on the grill- make sure not to layer meat. Cover and grill on high for 10 minutes. Turn meat over, and cook for 5 more minutes until brown.

For the Marinade:
1 cup Korean pork marinade
1/2 onion (minced)
1 tablespoon garlic (minced)
1/2 tablespoon sesame oil
1 tablespoon soy sauce
2 tablespoons gochujang (Korean red pepper paste)
2 1/2 tablespoons sugar
1 tablespoon rice wine (mirin)
1 teaspoon ginger (minced)

Steps:

  • Gather the ingredients.
  • Slice the pork into very thin pieces, about the thickness of bacon.
  • Add the marinade ingredients (onion, garlic, sesame oil, soy sauce, kochujang, sugar, rice wine, ginger) to a shallow marinade dish or plastic bag and mix them to combine.
  • Add the pork to the marinade. Allow the meat to marinate for at least 30 minutes, or as long as an hour.
  • Grill or broil the meat for about 4 to 8 minutes or until done. Alternatively, you can stir-fry the pork in an ungreased pan for 5 to 10 minutes.

1 tablespoon sesame oil
1 tablespoon sesame seeds
1 clove garlic, minced
1 teaspoon white sugar
½ teaspoon salt

1 pound beef top sirloin, thinly sliced
1 carrot, julienned
1 green onion, chopped
½ yellow onion, chopped

Steps:

  • In a large resealable plastic bag, combine soy sauce, sesame oil, sesame seeds, garlic, sugar, salt, black pepper, and MSG. 1 (10 lb) pork shoulder
3 teaspoons vegetable oil
2 pears, cored and diced
1 cup diced carrot
1 cup diced celery
1 cup diced onion
10 garlic cloves
2 tablespoons fresh ginger, finely chopped
1 quart apple juice
1/4 cup salt
1/8 cup minced garlic
1/8 cup korean red pepper
1/8 cup paprika
1/8 cup curry powder
1/8 cup black pepper

Steps:

  • Heat oven to 375°F In a small bowl, mix spices together for Korean Rub. Rinse pork and pat dry. Pat rub all over pork.
  • In a large, heavy-bottomed pot, heat oil over medium high heat. Add pork and sear on all sides. Remove from pan and transfer to a roasting pan.
  • For sauce: Add pears, carrots, celery, onions, garlic and ginger to pot. Cook until tender over medium heat, eight to twelve minutes. Once vegetables are tender, add apple juice and increase heat to medium high, stirring constantly and scraping bottom and sides of pan with wooden spoon to deglaze.
  • Pour sauce over pork in roasting pan. Cover with foil and bake for three hours.

1 1/2 lbs top sirloin steaks, thinly sliced
2 tablespoons white wine
1 cup pear juice
1 teaspoon ground black pepper
1/4 cup soy sauce
1 tablespoon white sugar
2 tablespoons asian toasted sesame oil
1 tablespoon minced garlic
2 tablespoons chopped green onions
1 tablespoon sesame seeds
1/2 lb fresh mushrooms, halved (optional)
1/2 onion, chopped (optional)

Steps:

  • Place the beef in a bowl, and pour in the cooking wine, pear juice, and black pepper. Stir to combine, and allow to marinate for 30 minutes. Stir in the soy sauce, sugar, sesame oil, garlic, green onion, and sesame seeds, and marinate in refrigerator at least 2 hours or overnight.
  • Preheat an outdoor grill for medium-high heat.
  • Remove the beef from the marinade, and discard the marinade. Place a sheet of aluminum foil on the heated grill, and lay the beef slices separately on the foil. Place the mushrooms and onion on another part of the foil. Cook the beef slices until they are evenly brown, 3 to 5 minutes per side. Serve with cooked mushrooms and onion.

  • COOK'S NOTES:.
  • You can substitute 2 shredded fresh pears fro the pear juice.
  • For better taste, soak beef in cold water for a couple of hours. Change water occasionally.
  • OPTIONAL: Serve with a handful of Korean sweet-potato noodles. If pan-frying the beef, you can add 1/2 cup of beef broth to make a sauce to go over rice.
