KITTENCAL'S FRESH RHUBARB PIE



Kittencal's Fresh Rhubarb Pie image

This recipe was developed using fresh rhubarb, it is not recommended to use frozen --- I have listed 4 cups chopped rhubarb I most always use 8 good-size stalks --- you will need a 9-inch deep-dish pie plate for this.

4 cups fresh rhubarb, chopped (8 large stalks cut into about 1-inch pieces)
1 1/4 cups white sugar (increase for a sweeter taste)
1/2-1 teaspoon cinnamon
1/4 teaspoon nutmeg
7 tablespoons all-purpose flour
1 1/2 tablespoons cold butter (cut into small pieces)
1 double crust pie crust (to fit in a 9-inch deep-dish pie plate)
2 -3 teaspoons 18% table cream
1 tablespoon sugar

Steps:

  • Set oven to 450 degrees F.
  • Set oven rack to lowest position.
  • Line 1 pastry into the bottom of a 9-inch deep-dish glass pie plate.
  • In a small bowl combine the sugar with cinnamon, nutmeg and flour; sprinkle about 1/4 cup of the mixture over the pastry in the pie plate.
  • Place the chopped rhubarb over the sugar mixture (heaping the mixture).
  • Sprinkle the remaining sugar mixture over the rhubarb.
  • Dot with the chopped cold butter pieces.
  • Cover with remaining crust; seal and flute the edges.
  • Using a small sharp knife slice two 1-inch slits in the top crust to allow steam to escape.
  • Using a pastry brush, spread the cream over the top crust then sprinkle with 1 tablespoon sugar.
  • Place the pie plate on a baking sheet (you might want to cover the edges with foil to prevent over browning for the first 15-20 minutes).
  • Bake at 450 degrees F for 15 minutes.
  • Reduce the oven temperature to 350 degrees F and continue to bake for another 40-45 minutes.
  • Serve warm or cold with ice cream:).

1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
2 to 2 1/3 cups sugar
2/3 cup all-purpose flour
1 teaspoon grated orange peel, if desired
6 cups chopped (1/2-inch pieces) fresh rhubarb
1 tablespoon cold butter, if desired

Steps:

  • Heat oven to 425°F. Place 1 pie crust in 9-inch glass pie plate.
  • In large bowl, mix sugar, flour and orange peel. Stir in rhubarb. Spoon into pastry-lined plate. Cut butter into small pieces; sprinkle over rhubarb.
  • Cover with second crust; seal and flute. Cut slits in several places in top crust. Cover crust edge with pie crust shield ring or strips of foil to prevent excessive browning.
  • Bake 50 to 55 minutes or until crust is golden brown and juice begins to bubble through slits in crust, removing foil during last 15 minutes. Cool on cooling rack at least 2 hours before serving.

I'm always on the lookut for different ways to use rhubarb! This recipe from Sandra Gonzales was published in Country Woman magazine. Use your own pastry, store bought pie shells or my recipe for pastry with no trans fat or whole wheat canola oil pastry for a healthier pie! Cover the fruit mixture with a full crust, pastry lattice or the topping from my rhubarb crumble pie (recipe#91390).

2 eggs, lightly beaten
1/4 cup sour cream
3 tablespoons butter or 3 tablespoons margarine, melted
3/4 teaspoon orange zest
1/4 teaspoon salt
1 1/2 cups chopped rhubarb (fresh or frozen)
2 medium baking apples, peeled & sliced
1 1/4 cups sugar
1 tablespoon all-purpose flour

Steps:

  • Combine first 5 ingredients in a bowl.
  • Stir in the fruit; add sugar& flour and toss to coat.
  • Pour into pastry shell.
  • Cover with crumble mixture.
  • Or cover with a full crust; trim, seal& flute edges and cut venting slits (cover edges loosely with foil).
  • Or cover with pastry lattice (cover edges loosely with foil).
  • Bake in lower third of a preheated 425F oven for 15 minutes; remove foil (if using), reduce heat to 350F and bake for an additional 40 to 45 minutes or until crust is golden brown.
  • Cool on a wire rack.

This recipe calls for fresh sour pie cherries, (the bright red kind) and fresh rhubarb. It makes a deliciously juicy pie that goes wonderfully well with vanilla ice cream. Note: if you want your filling less juicy, just increase the amount of tapioca.And if you cannot find fresh pie cherries, you can substitute the canned type, but it will not taste as nice.

4 cups fresh sour pie cherries, pitted
2 cups fresh rhubarb, cut into 1/2-inch pieces
1/4 cup white sugar
3/4 cup brown sugar
1 teaspoon cinnamon
1/8 teaspoon ground cloves
1/4 teaspoon salt
1 1/2 tablespoons quick-cooking tapioca
2 tablespoons unsalted butter, cut into pieces
2 nine inch pie crusts (top and bottom)

Steps:

  • Preheat the oven to 425 degrees F.
  • In a medium bowl, mix together the sugars, cinnamon, cloves, salt, and tapioca.
  • Toss in the pitted cherries and the rhubarb pieces. Let sit for a few minutes, then drain off any juice before pouring the filling into the crust.
  • Top the filling with the butter pieces.
  • Adjust top crust, remember to fold over and seal together the edges of the top and bottom crusts to prevent leakage.
  • Cut slits in the top crust, brush the edges of the crust with water, and sprinkle a little white sugar over the top.
  • Place pie on a baking sheet and bake at 425 degrees F for 25 minutes.
  • Cover top crust loosely with a piece of foil, turn pie around, and bake for an additional 20-30 minutes, or until bubbly (but not bubbling over).
  • Remove from oven and place on a wire rack to cool.
  • Cool completely before serving.
  • Cherry pies made with fresh cherries are notoriously juicy so don't expect the slices to hold their shape very well It is lovely served with ice cream.

1 recipe pastry for a 9 inch double crust pie

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Combine sugar and flour. Sprinkle 1/4 of it over pastry in pie plate. Heap rhubarb over this mixture. Sprinkle with remaining sugar and flour. Dot with small pieces of butter. Cover with top crust.

This rhubarb pie contains no distractions, like strawberries. The crust is made with shortening. (Butter is fine if you want a French tart, but it's not American pie unless it's made with shortening, the author Anne Dimock said.) The top is marked with 8 razor-thin vents.

2 cups all-purpose flour
1/2 teaspoon salt
2 teaspoons sugar
2/3 cup vegetable shortening, plus 2 tablespoons
6 tablespoons ice water
5 cups sliced rhubarb
1 1/4 cups sugar
5 tablespoons flour
1/4 teaspoon cinnamon
1 1/2 tablespoons butter

Steps:

  • Preheat the oven to 425 degrees. Make the crust: before measuring the flour, stir it to leaven with air and then measure out 2 cups. Combine the flour, salt and sugar in a large bowl and fluff with a fork. Cut the shortening into the flour with a fork or pastry blender. Stop as soon as the sheen of the butter disappears and the mixture is a bunch of coarse pieces. Sprinkle a tablespoon of water at a time over the dough, lifting and tossing it with the fork. When it begins to come together, gather the dough, press it into a ball and then pull it apart; if it crumbles in your hands, it needs more water. (It's better to err on the side of too wet than too dry.) Add a teaspoon or two more water, as needed.
  • Gather the dough into two slightly unequal balls, the larger one for the bottom crust and the smaller one for the top. Flatten the larger ball, reforming any frayed edges with the sides of your hand. Dust with flour and roll the dough, starting from the center and moving toward the edges. Take a knife or thin spatula and quickly work its edge between the crust and the counter top. Lift the dough to the side; dust the dough and counter top with flour. Roll again until the diameter is an inch or 2 larger than that of the pie pan. Lay the rolling pin a third of the way from one of the edges. Roll the crust onto the pin and then unroll the crust into a 9-inch pie pan and press it into place. Place in the freezer.
  • Make the filling: in a large bowl, blend the rhubarb, sugar, flour and cinnamon. Pour into the crust-lined pie pan. Dot with butter.
  • Roll out the top crust. Dab the rim of the bottom crust with water to create a glue. Then place the top crust over the rhubarb; trim, seal and cut several vents. Bake for 15 minutes; reduce the temperature to 350 degrees and bake 25 to 30 minutes more, or until a bit of pink juice bubbles from the vents in the crust.

1 1/2 cups sugar
2 1/2 tablespoons cornstarch
1/4 teaspoon ground nutmeg
1/2 teaspoon orange rind, grated
1/4 cup orange juice
2 tablespoons butter or 2 tablespoons margarine
4 cups rhubarb, sliced

Steps:

  • Roll half of pastry to 1/8-inch thickness on a lightly floured surface. Place in a 9-inch pie plate; trim off excess pastry along edges.
  • Cover with plastic wrap, and chill until ready to fill.
  • Combine sugar, cornstarch and nutmeg in a heavy saucepan, stirring to blend cornstarch well.
  • Stir in orange rind, juice and butter.
  • Cook over medium heat, stirring constantly, until thickened and bubbly.
  • Stir in rhubarb.
  • Spoon rhubarb mixture into prepared pastry shell.
  • Roll remaining pastry to 1/4-inch thickness; cut into 1/2-inch strips.
  • Arrange strips, lattice fashioned, across top of pie. Trim strips even with edges; fold edges under and flute. Bake at 425°F or 10 minutes.
  • Reduce heat to 350°F and bake an additional 30 minutes or until crust is brown.

This is so easy and it makes a wonderful blueberry pie, this filling freezes wonderful and will makes enough for one 9-inch pie, the filling also makes a great topping for cakes and cheesecakes --- you may make the filling up to step 4 and then freeze in a plastic container, if you are doubling the recipe prepare two separate recipes and make in two saucepans, I do not recommend to double into one.

4 1/2 cups blueberries
3/4-1 cup sugar
1/3 cup cornstarch
water (enough to make a thick paste)
1/4 cup fresh lemon juice
1/4-1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 pinch salt

Steps:

  • In a heavy saucepan mix the blueberries, sugar, lemon juice, cinnamon, nutmeg and salt; bring to a boil stirring frequently.
  • Mix the cornstarch with cold water (adding in just enough water to create a thick paste).
  • Pour over the berries whisking vigorously.
  • Cook stirring until thick and smooth; cool slightly.
  • At this point you may freeze the filling or continue with pie recipe.
  • Pour into unbaked 9-inch pie shell.

  • Make 2-3 small slits on the top of crust.
  • If desired you may brush with cream then sprinkle sugar over top.
  • Place the pie on a baking sheet.
  • Set oven to 400°F (oven rack set to lowest position).
  • Bake for 10 minutes then reduce to 350°F and continue to bake for about 30 minutes longer or until the crust is golden brown and the filling is bubbly.
