1 lb ground beef
1 cup medium diced onions
1 (8-oz) jar taco sauce
1 (15-oz) can seasoned black beans, drained and rinsed
1/4 cup chopped pickled jalapeños
2 cups shredded extra sharp cheddar cheese
2 cups shredded Pepper Jack cheese
1 (12 to 14-oz) bag tortilla chips
1 avocado, peeled, pitted and finely diced
1 (10-oz) can diced tomatoes with green chilis, drained
1/2 cup small diced red onions
1/2 cup cilantro leaves, chopped
Juice of 1 lime
1 Tbsp olive oil
Sour cream, for serving

Steps:

  • Preheat the oven to 350°F. Add the ground beef and diced onions to a large skillet and place the skillet on medium-high heat. Cook until the meat is no longer pink and then drain the beef. In a large bowl, combine the cooked beef, taco sauce, beans, and jalapeños. In a smaller bowl, combine the sharp cheddar and Pepper Jack cheeses. Lay half of the tortilla chips out on a baking sheet or oven-safe skillet. Spread half of the beef mixture over the chips and top the chips with half of the mixed cheeses. Sandwich the spread with the remainder of the tortilla chips. Use the remaining beef and cheese to create a second layer. Bake for 20 minutes, or until the cheese is melted. While the nachos are baking, combine the avocado, tomatoes, red onions, cilantro, lime juice, and olive oil in a separate bowl. When the nachos are done baking, add the avocado mixture on top. Serve with sour cream.

One 22-ounce bag waffle fries
1 cup black beans, rinsed and drained
4 slices cooked bacon, cut into 2-inch pieces
8 ounces Monterey Jack cheese, grated (2 cups)
Nonstick cooking spray, for the skillet
4 large eggs, lightly whisked
Kosher salt and freshly ground black pepper
2 ripe avocados, halved, pitted and peeled
2 cloves garlic, minced
1 tablespoon fresh lime juice (from about 1/2 lime)
1 plum tomato, diced
1/2 serrano chile, seeded, deveined and minced
2 tablespoons chopped fresh cilantro
1/2 red onion, thinly sliced
2 scallions, thinly sliced

Steps:

  • Preheat the oven to 425 degrees F.
  • Cook the waffle fries according to the package instructions on a parchment-lined baking sheet.
  • Remove the fries from the oven and top with the black beans, bacon and cheese. Return to the oven until the cheese melts and is bubbling, about 5 minutes.
  • Meanwhile, heat a medium nonstick skillet over medium heat. Spray the skillet with nonstick cooking spray. Pour the eggs into the hot skillet. Cook, stirring occasionally, until the eggs are just cooked and opaque yellow, 2 to 3 minutes. Season with salt and pepper.
  • While the eggs are cooking, make the guacamole. Combine the avocados, garlic, lime juice and salt and pepper to taste in a mixing bowl and mash with a fork until chunky. Add the tomato, serrano and cilantro and mix well.
  • Remove the fries from the oven and top with the red onion, scallions and cooked eggs. Dollop dabs of guacamole evenly around the nachos. Serve immediately.

This recipe is great for using up leftovers, or cleaning out the veggie bin of your refrigerator. Whenever we have leftover pinto beans, the kids look forward to having nachos. Our favorite toppings include grilled chicken, peppers, mushrooms, sour cream, and black olives.

2 cups tortilla chips
1/4 cup shredded cheese (your choice)
1 teaspoon olive oil
1/4 cup diced vegetables (bell peppers, mushrooms, onion, squash, tomato, ect.)
1/4 cup cooked chicken (or whatever you have left over- steak, taco meat, roast, shrimp, bbq)
1/8 teaspoon cumin
1/8 teaspoon red pepper flakes
1 tablespoon sour cream (optional)
black olives (optional)
diced tomato (optional)
sliced green onion (optional)
salsa (optional)
jalapeno (optional)

Steps:

  • Arrange tortilla chips on platter.
  • Top chips with shredded cheese, and place in microwave. Heat on high for 20-25 seconds or until cheese is melted.
  • Heat olive oil in pan on med-high heat, add veggies, cumin, and pepper flakes. saute until desired doneness, add chicken to heat through. Remove from heat.
  • Spread veggie mixture over chips.
  • Top with additional cheese if desired, sour cream and additional toppings.

  • Preheat the oven to 350˚F. In a large skillet on medium heat brown your beef, when there is no pink add 4 Tbsp taco seasoning and 1/2 cup water, and cook for an additional 3-5 min, stirring occasionally.
  • Tear off four 16" long pieces of Aluminum Foil. Place a handful of tortilla chips in the center of the sheet, top with a heaping 1/4 cup Mexican cheese, then cover with 1/4 of the ground beef mixture followed by another 1/4 cup of cheese. Bring up and double-fold the long ends, leaving room for air to circulate. Bring up and double-fold the short ends to close your foil packet.
  • Just before serving, place on a baking sheet and bake at 350˚F for 10 minutes. Prep all of your toppings so they are ready to serve over hot nachos. Open the foil packs, add desired toppings and serve immediately.
