Since many of the Italian grinder sandwich recipes are meant to feed a crowd, I paired it down to two sandwiches. The flavor is all there and is equally delicious the next day cold!

2 each ciabatta rolls, sliced in half
5 thin slices provolone cheese
4 thin slices deli turkey
4 thin slices deli ham
4 thin slices soppressata
4 thin slices prosciutto
16 slices mini pepperoni
¼ cup grated Parmesan cheese, or to taste
1 medium tomato, thinly sliced
1 drizzle olive oil, or to taste
salt and freshly ground black pepper to taste
½ cup mayonnaise
1 teaspoon red wine vinegar, or more to taste
1 clove garlic, grated
1 teaspoon dried oregano
⅛ teaspoon salt
⅛ teaspoon ground black pepper
1 pinch red pepper flakes, or to taste
¼ head iceberg lettuce, shredded
½ medium red onion, thinly sliced
¼ cup sliced pepperoncini peppers, drained

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with foil or parchment paper.
  • Place sliced rolls on the prepared baking sheet (if the top half of roll rocks from side to side too much, slice a tiny bit of the top off). Place 1 slice of provolone on each slice of bread. Tear up the remaining slice of provolone to cover any open bread areas.
  • Bake in the preheated oven until melted (not browned), about 8 minutes. Remove from oven; leave the oven on.
  • Fold two pieces of turkey onto two slices of bread. Fold two pieces of ham onto the other slices of bread.
  • Layer 2 slices of soppressata on top of the turkey. Fold 2 slices of prosciutto onto ham. Place four pepperoni pieces on top of each bread half.
  • Sprinkle slices with some of the Parmesan cheese. Place back into the oven and let bake until pepperoni is looking crispy, about 12 minutes.
  • While slices bake, make the grinder salad. Add mayonnaise, red wine vinegar, garlic, oregano, salt, pepper, and pepper flakes to a bowl. Whisk to combine.
  • Add lettuce, onion, and pepperoncinis to the dressing. Toss to coat.
  • Remove sandwiches from the oven. Top 2 of the ciabatta slices with tomato slices. Using tongs, place a layer of salad on top of the tomatoes. Sprinkle with more Parmesan cheese.
  • Place the non-salad slices on top of the salad ones. Cut each sandwich in half and serve.

1/2 cup kalamata olive tapenade
2 cups shredded romaine lettuce
1/4 large sweet onion, sliced (1 cup)
8 ounces sliced salami
8 ounces sliced provolone cheese
2 medium tomatoes, sliced

Steps:

  • Cut bread horizontally in half. Spread tapenade over bottom half of bread; top with lettuce. Layer onion, salami, cheese and tomatoes on lettuce. Add top of loaf.
  • Cut sandwich into 16 pieces.

The Kings Sandwich got it's name after Fire Captain Chris King. It is his favorite sandwich of all time and due to it's size and complexity we say it's fit for a King.

1 - loaf garlic ciabatta bread
1 - eggplant
1 - zuccini
1 - red onion
1 - yellow squash
2 - chicken breast
8 ounce(s) fresh mozzarella
8 ounce(s) sundried tomatoes in olive oil
1 cup(s) pecorino romano cheese
2 cup(s) basil, fresh
1/2 teaspoon(s) red pepper flakes
1 tablespoon(s) dried italian seasoning
2 clove(s) garlic
1/4 cup(s) pine nuts
2/3 cup(s) olive oil, extra virgin

Steps:

  • Basil pesto: Can use store bought brand. I use Alessi. or make fresh. Combine the basil, garlic, and pine nuts in a food processor and pulse until coarsely chopped. Add 1/2 cup of the oil and process until fully incorporated and smooth. Season with salt and pepper. If using immediately, add all the remaining oil and pulse until smooth. Transfer the pesto to a large serving bowl and mix in 1/2 cup Pecorino cheese
  • sundried tomato pesto: Combine the Sundried Tomatoes, 1/2 Cup Pecorino cheese, and red pepper flakes in a food processor and pulse until coarsely chopped. process until fully incorporated and smooth.
  • Pre-heat grill: Wash and slice all the vegetables 1/4" in thickness. brush with Olive oil and add salt and pepper to taste. Once grill is at medium temperature add vegetables until slightly charred but not over cooked.
  • Season chicken breast with mixture of dried Italian herbs, salt and pepper. Place on grill until cooked to proper temperature. allow to rest
  • Pre heat oven to 425F: Take large Ciabatta loaf and cut length wise and close to the bottom. Take the top part and hollow out the soft dough. Spread Pesto evenly across the bottom half of the bread and layer with fresh Mozzarella slices. Cover the top half of bread with Sun dried tomato pest. Place in oven until Mozzarella has begun to melt and bread has toasted.
  • Assembly: Layer grilled vegetable's evenly on tope of bottom half of bread. Slice Chicken breast diagonally and evenly layer on top of vegetable's.
  • Cut Ciabatta bread in 2" thick slices and serve.

  • To make the starter: Weigh your flour; or measure it by gently spooning it into a cup, then sweeping off any excess. Mix the starter ingredients in a small bowl until well combined.
  • Place all of the dough ingredients, including the starter, into the bowl of your mixer, and beat at medium speed, using the flat beater, for 7 minutes.
