THE BEST CLAM DIP RECIPE EVER
This is my family's signature dip recipe and will make everyone a fan of clams in cream cheese whether they think they like it or not!

Steps:
- In a medium sized bowl, mash softened cream cheese with a fork until soft and creamy. Slowly add in 1 tablespoon of clam juice while mixing with fork and cream well. Add lemon juice and Worcestershire sauce.
- Add green onion and clams to mixture. Add a few dashes of Tabasco to taste. If mixture seems thick, add remaining clam juice in one tablespoon increments to desired consistency. Serve with potato chips or refrigerate for up to 2 days.
KILLER CLAM DIP
For years, I have not been able to find my favorite brand of clam dip, so I was compelled to concoct my own recipe. If you loved Breakstone's Clam Dip, you'll love this.

- 1. Using an electric hand-mixer, beat cream cheese until fluffy.
- 2. Add sour cream; mix thoroughly, until no lumps remain.
- 3. Add ranch dressing mix, maple syrup, liquid smoke and pepper; mix well.
- 4. Add cheddar cheese, bacon bits and minced chives; combine well.
- 5. Add drained clams; mix until well combined. (NOTE: Save and freeze clam juice for chowder or other seafood dishes.)
- 6. May serve immediately or cover and refrigerate until served. Garnish as desired. Cover and refrigerate leftovers.

CLAM DIP
Here now a taste of New England game days circa the time when televisions had dials instead of remotes and, if you couldn't get fresh clams to steam and chop, a can or two from the supermarket would do just fine. (That's still true!) The recipe comes from Brendan McCarthy, a saltwater fishing guide whose charters range from Brooklyn to Montauk, and south to Florida, the Bahamas and the azure waters off Panama, but whose tastes and kitchen skills were first developed in New England and see an apogee in the simplicity of this recipe. The dip benefits from some curing time in the refrigerator and, for some, a heavy hand on the cayenne.

- Heat oven to 425 degrees. In a large bowl, using a fork or rubber spatula, stir and mash together the softened cream cheese and sour cream until smooth.
- Add clams, mozzarella, parsley, scallions, jalapeño, lemon juice, Worcestershire sauce, hot sauce, fish sauce or a teaspoon of reserved clam juice, and lots of black pepper, and stir until well combined. If the mixture seems thick, stir in a little more reserved clam juice.
- Taste and adjust seasonings, if necessary. If you think it needs salt, add it lightly, or try adding a little more fish sauce or more clam juice instead. Dip can be made up to 3 days in advance and stored in the refrigerator before baking.
- Transfer mixture to shallow 1-quart ceramic baking dish or gratin dish. Sprinkle Parmesan on top and bake until golden brown and bubbling, about 30 to 35 minutes. Garnish with sliced scallions, and serve hot or warm with potato chips.
CHRISTINA'S KILLER DIP
This is my sister's dip. She got the recipe while backpacking in Europe a few years ago. She is now forced to make it at every party she has. People smell it cooking and stand drooling by the oven until it comes out! (Many have not been able to wait for the cooling part and burned their mouths to get to it first). You might have to make 2 portions. **NOTE: Please CHECK the sodium content before you choose a ranch dressing mix, because it will affect the flavor! Some people have complained it is "too salty". Please also make sure you are using only a 1 ounce packet; there are other sizes from various manufacturers. Too much mix throws off the balance of flavors. My sister and I always use the Hidden Valley Ranch Original and we do not have any problems with it :) You can also substitute half the sour cream for prepared Ranch Dressing and skip the dry mix. It will come out a bit wetter.

Steps:
- Defrost the spinach.
- Place it in a colander and press it until as much moisture as possible is removed.
- Mix all ingredients (1/2 of the cheddar), and blend well.
- Put it in a shallow baking dish (stoneware works best) in the oven for 20 minutes at 350°F.
- Remove from oven.
- While still hot top it with remaining cheese, heat in oven again for 5 minutes.
- Remove and cool below lava stage and serve.
- Goes well with tortilla chips.
