HUNGARIAN KIFLI COOKIES
Hungarian Kifli Cookies - Rich and flaky traditional Hungarian cookies filled with a light walnut filling. Perfect Christmas cookies!

Steps:
- In a large mixing bowl, combine flour and butter, cutting together with either two knives or a pastry cutter.
- In a separate mixing bowl, combine sour cream, yeast, and sugar. Mix until well combined and let sit while yeast dissolves.
- Add yeast mixture into the flour mixture along with the vanilla and egg yolks. Mix dough together by hand until it is well combined. Split dough in half and wrap up in either plastic wrap or wax paper. Refrigerate 2-3 hours or overnight.
- Right before dough comes out of refrigerator, combine ingredients for filling. Set aside.
- On a large cutting board, sprinkle 1/3 cup flour and 1/3 cup sugar. Roll out dough into a thin circle before cutting into 8 triangles.
- Place 1 tsp of filling on each triangle and roll up starting on the wider end. Place on a lined cookie sheet with the open end down and bend the cookie a bit so it looks like a crescent. Repeat with process for all of the triangles from both things of dough.
- Bake at 350 degrees for 20-25 minutes. Sprinkle powdered sugar on top and serve.

KIFLI (CRESCENT COOKIES)
Delicious crescent shaped cookies. Hungarian cookies. Very Good and you can use any kind of jam or preserves as the filling.

Steps:
- DOUGH:
- Blend flour and butter thoroughly using a pastry blender if desired.
- Add egg yolks and yeast cake which has been dissolved in cream.
- Add sugar and vanilla.
- Chill dough if it is too soft to roll out easily.
- Divide into 2 parts and roll each into a 12-inch circle or larger. Cut into 16 or more pie-shaped pieces.
- Place a small amount of nut filling or jam on each wedge and beginning at the rounded edge, roll up.
- Place on greased baking sheet, point underneath. Let stand for 20 minutes.
- Brush top of crescents with beaten egg.
- Bake at 350°F for 15 to 18 minutes or until light brown on bottom.
- FILLING:.
- Mix all ingredients listed for filling together, mixing well.
KOSSUTH KIFLI (HUNGARIAN CAKEY COOKIE AKA HALF MOONS)
Another one my grandmom used to make and no one has the recipe. After hours of searching the web, I finally found it (I didn't even know the name before!). This version is from Linda Paul, who won a Christmas cookie contest in Minneapolis with them.

Steps:
- Preheat oven to 350 degrees.
- Butter and flour bottom and sides of a 9-by 13-inch cake pan.
- In a large bowl, using an electric mixer on medium speed, cream together butter and granulated sugar.
- Add egg yolks, one at a time, and beat until fluffy.
- Add vanilla, lemon rind and lemon juice and beat to combine.
- Gradually add in baking powder and flour.
- In a medium bowl using electric mixer on high speed (with clean beaters), beat egg whites until stiff.
- Fold egg whites into batter.
- Gently spread batter into prepared pan.
- Evenly sprinkle top with finely chopped walnuts and bake 25 to 30 minutes.
- Remove to a wire rack.
- Cool until cake shrinks away from sides of pan (about 15 minutes).
- With a small round biscuit cutter (or a glass), periodically dipped in powdered sugar, cut one circle (don't remove it), then cut another circle halfway down the first one, making two crescents and one oval scrap.
- Remove from pan and repeat (you can eat the oval scraps;).
- Cool crescents completely and dust with powdered sugar.
- Store in a tightly covered container for up to 2 days.
KIFLE - YUGOSLAVIAN WALNUT COOKIES
This is a traditional recipe for Yugoslavian cookies called Kifle. There are different fillings for these cookies but my favourite is the walnut! Time to make does not include chilling time........Posted for ZWT 4.

Steps:
- Put sifted flour into large mixing bowl. Mix in yeast. Cut in margarine with pastry blender until mixture is crumbly.
- Add egg yolks and sour cream; mix well. Form into a ball. On lightly floured board, knead until smooth, 5 to 10 minutes. Divide dough into 3 equal parts. Wrap in wax paper. Chill in refrigerator at least 1 hour.
- Combine walnuts, sugar and vanilla extract. Fold in stiffly beaten egg whites. Set aside.
- On a board sprinkled with confectioners sugar, roll each part of dough into an 8-inch circle; cut each into 8 pie-shape wedges.
- Fill wide end of each wedge with 1 tablespoon walnut filling. Roll up from wide end to point. Place on greased baking sheet, curving ends to form crescent shape.
- Bake at 375 degrees F about 25 minutes or until golden brown. Dust with confectioners sugar.

- In the stand mixer, using the paddle attachment, sift flour and salt in mixing bowl. Cut and add cold butter into the mixing bowl distributing evenly, and mix at low speed until the butter is broken into smaller pieces and coated with flour, about 15-20 seconds. You want to still see larger pieces of butter throughout.
- Continue at a low speed, add the egg yolks, and gradually the ice water, mixing until the water is absorbed and the dough comes together, then stop mixing, about 10 seconds. DO NOT overmix.
- Transfer the dough to a lightly floured surface, and dust the top of the dough as well and work with your hands to pat down and form a rectangle, but still maintaining a thickness to about ¾ inch. Wrap with saran wrap tightly and place in the refrigerator to chill for 20 minutes. Remove from the refrigerator and roll out to about ½ inch thickness and fold in thirds, envelope style. Wrap again, chill for another 20 minutes, and repeat this one more time.

- In another bowl, blend the egg yolks, water and white vinegar. (Be sure to reserve the egg whites for the filling.)
- Add the wet ingredients to the flour mixture and mix only until it holds together. The key to a flaky pastry is light handling. The more you move the dough, the tougher it will become.
