1 pound lean ground turkey
1/2 teaspoon garlic powder
½ teaspoon onion powder
1 1/2 Tablespoons ketchup
1 Tablespoon Dijon mustard
1 teaspoon Worcestershire sauce
¾ teaspoon salt
½ teaspoon freshly ground pepper
1/3 cup bread crumbs
1 egg
4 buns
1 tablespoon canola oil (, or use pan spray)
Condiments: ketchup, mustard, mayonnaise, BBQ sauce
Toppings: lettuce, tomato, onion, pickles, avocado

Steps:

  • Mix together: To a mixing bowl add turkey, garlic powder, onion powder, ketchup, mustard, Worcestershire sauce, salt and pepper, egg and breadcrumbs. Using a fork, mix together-try not to mix it too much.
  • Shape into 4 patties about ½ inch thick- they will be really moist.
  • Use your thumb to make a depression in the center of each patty. If grilling, place the patties on a parchment lined plate and freeze for 20 minutes.

These turkey burgers deliver an entire Thanksgiving meal on a bun in the most delicious way possible. The patties are seasoned with onion, celery, sausage, sweet potato, sage, thyme, and garlic to create a fitting base that's built upon with apple-cranberry relish, gravy, spinach, and fried onions, completing the holiday equation.

1 small sweet potato (6 to 8 ounces)
1 tablespoon butter
1/3 cup finely chopped yellow onion (about 1/2 a small onion)
1/4 cup finely chopped celery (about 1 small stalk)
2 teaspoons finely chopped fresh sage leaves
1 teaspoon finely chopped fresh thyme leaves
1 teaspoon freshly minced garlic (about 1 medium clove)
1 pound ground turkey thighs or 85% lean pre-packaged ground turkey
1/3 pound loose pork breakfast or sage sausage
Kosher salt and freshly ground black pepper
4 soft potato rolls such as Martin's
Cranberry-apple relish
All-purpose or Turkey gravy
Fresh Spinach
Fried Onions
Type of fire: Direct
Grill heat: medium-high

Steps:

  • Using the tines of a fork, poke holes in potato all over. Place potato on a plate and microwave on high until a paring knife can be inserted in middle of potato with no resistance, 9 to 12 minutes, checking and flipping the potato every 3 minutes. Alternatively, place potato in 425°F oven and cook until a paring knife can be inserted in middle of potato with no resistance, about 1 hour. Split potato open and allow to cool slightly, 5 to 10 minutes. Using a spoon, scoop out flesh in a small bowl, discard skin.
  • Melt butter in a small skillet over medium heat. When foaming subsides, add onion and celery and cook, stirring occasionally, until softened, 5 to 7 minutes. Stir in sage, thyme, and garlic and cook until fragrant, about 30 seconds. Remove from heat and let cool for 5 to 10 minutes.
  • Place turkey, sausage, 1/4 cup sweet potato flesh, and vegetable mixture in a medium bowl and mix with hands until incorporated. Form mixture into 4 patties. Season with salt and pepper to taste.
  • Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and spread the coals evenly over entire surface of charcoal grate. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Clean and oil the grilling grate. Grill burgers over direct heat until an instant read thermometer reads at least 145°F in the center of burger, but no more than 165°F.
  • Lightly toast potato rolls on grill, about 30 seconds. Transfer to plate or tray and top each bun with a burger, cranberry-apple relish, gravy, spinach, and fried onions. Serve immediately. This Recipe Appears In How to Make the Best Thanksgiving Turkey Burgers

500g pack turkey mince
½ tsp dried thyme or 2 tsp fresh
1 lemon
250g cooked peeled beetroot (not in vinegar), finely diced
1 small red onion , finely chopped
2 tbsp chopped parsley
2 tsp olive oil
2 tsp wholegrain mustard
Little Gem lettuce , to serve
wholemeal pitta bread , to serve

Steps:

  • Tip turkey into a bowl with the thyme. Finely grate in the zest from the lemon and add a little seasoning. Use your hands to mix the ingredients well, then shape into 4 patties. Chill until ready to cook. Can be frozen for up to 1 month.
  • Mix the beetroot with the juice from ½ the lemon, onion, parsley, oil and mustard. Grill, griddle or barbecue the burgers for about 6 mins each side and serve with the beetroot relish, lettuce and pitta breads.

1 bunch scallion, cut into 4 pieces
2 cups fresh shiitake mushrooms
1 1/4 lbs ground turkey
1 large egg (or alternative)
1/2 teaspoon dry mustard
1 tablespoon Worcestershire sauce
1/4 teaspoon fresh ground black pepper
salt
2 cups red onions, slices thin
1 tablespoon granulated sugar
2 tablespoons red wine vinegar
1/2 head red leaf lettuce
4 fresh bakery rolls or 4 hot dog buns

Steps:

  • Prepare grill (or broiler).
  • Place scallions in a food processor; pulse until chopped, about 10 pulses.
  • Add mushrooms and pulse until chopped; about 10 pulses.
  • Add turkey, egg, mustard, Worcestershire sauce, pepper, and 2/3 of the salt; pulse until combined; about 30 seconds.
  • Divide mixture into equal parts.
  • Shape into burgers.
  • Combine red onions with sugar, vinegar, and remaining salt in a medium-sized mixing bowl.
  • Toss thoroughly to combine.
  • Set aside to marinate for a minimum of 15 minutes.
  • Place burgers on grill or under broiler until golden-brown, about 5 minutes on each side.
  • Serve burgers with washed lettuce, marinated red onions, and mayonnaise on a toasted bakery roll.

1/2 cup dry bread crumbs
2 teaspoons onion salt
2 teaspoons brown sugar
1 large egg, lightly beaten
1 pound ground beef
1-1/4 cups barbecue sauce
SAUCE:
1/2 cup mayonnaise
1/2 cup barbecue sauce
1 teaspoon brown sugar
ONION TOPPING:
2 tablespoons butter
1/4 cup honey
2 large sweet onions, thinly sliced
4 slices smoked cheddar cheese
4 hamburger buns, split

Steps:

  • In a large bowl, combine the bread crumbs, onion salt and brown sugar. Add egg. Crumble beef over mixture and mix well. Shape into four patties. 6 tablespoons soft fresh goat cheese (such as Montrachet)
6 whole wheat, hamburger buns
3 tablespoons olive oil
4 7-ounce jars roasted sweet red peppers, rinsed, drained, patted dry, chopped
1 1/2 cups chopped onions
3 teaspoons finely chopped garlic
4 1/2 tablespoons cider vinegar
3 tablespoons sugar

1/4 teaspoon cayenne pepper

Steps:

  • For Burgers:
  • Combine turkey, breadcrumbs, lemon juice, lemon peel, thyme, salt and pepper in large bowl. Mix well. Divide turkey mixture into 6 equal portions. Form 1 portion into two 4-inch diameter patties.   • Prepare barbecue (medium-high heat). Grill burgers until cooked through, about 5 minutes per side. Grill hamburger buns, cut side down, until lightly toasted, about 1 minute. Place turkey burgers on bottom half of buns. Top burgers with Roasted Red Pepper Relish, then bun tops and serve.
  • For Relish:
  • Heat oil in heavy large skillet over medium-high heat. Add red peppers and sauté 2 minutes. Add onions and garlic. Cook until onions are tender, stirring frequently, about 5 minutes.
  • Mix vinegar and sugar in small bowl until sugar dissolves. Stir vinegar mixture into red peppers. Mix in mustard and cayenne pepper. Season with salt. Continue cooking relish until all liquid has evaporated, stirring frequently, about 6 minutes. Cool to room temperature. (Can be prepared 1 day ahead. Cover and refrigerate. Bring to room temperature before using.) Makes about 2 cups.
