Ready, Set, Cook! Hidden Valley Contest Entry. Tasty pork and spinach meatballs that are also amazingly versatile: serve as party snacks with ranch dipping sauce, nestle in dinner rolls for sliders, or place on top of buttered pasta with extra parmesan cheese.

1 lb ground pork
10 ounces frozen spinach, thawed and squeezed dry
1 shallot, finely minced
1 garlic clove, zested
1 tablespoon Hidden Valley Original Ranch Dips Mix
1 teaspoon ground black pepper
1/2 teaspoon salt
1/2 cup breadcrumbs
1/2 cup parmesan cheese, grated
1 egg, lightly beaten
2 tablespoons olive oil

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl combine all ingredients except olive oil. Work mixture with hands until all elements are thoroughly incorporated into one mass.
  • Using hands, roll mixture into meatballs approximately 1.5" in diameter and place on a cookie sheet or plate.
  • Heat olive oil in a large, oven-proof saute pan over medium high heat. Add Meatballs and cook until browned on all sides, 1 - 2 minute each side.
  • Transfer saute pan to oven and cook another 10 minutes until meatballs are cooked through.

Ready, Set, Cook! Hidden Valley Contest Entry I love this recipe because it is family friendly, plus kids love pasta and meatballs. I also love Italian food and using Ranch in my recipe kicked it up a notch. I created this recipe for my family to enjoy. *Tip, powdered Parmesan works best for this recipe because it melts better in the sauce.

1 lb ground pork
2 1/4 cups parmesan cheese, grated, divided
1/3 cup plain breadcrumbs
1/2 cup plain Greek yogurt
1 egg
1 ounce Hidden Valley Original Ranch Seasoning Mix, divided
1 ounce hidden valley ranch fiesta dip mix, divided
1/2 teaspoon ground black pepper
1/4 teaspoon sea salt
2 (9 ounce) packages refrigerated fresh fettuccine
6 tablespoons margarine
3 cups whipping cream
1/2 teaspoon coarse black pepper
1/4 cup chives, chopped small

Steps:

  • Mix together the ground pork, 1/4 cup of the Parmesan cheese, bread crumbs, greek yogurt, egg, half of the Hidden Valley Original Ranch dressing/seasoning mix, half of the Hidden Valley Ranch Fiesta dip mix, pepper and salt with hands.
  • Roll into approximately thirty 1 1/2 inch diameter meatballs.
  • Place on 11x16 greased baking sheet and place into preheated oven at 350 degrees for approximately 20 to 25 minutes or until internal temperature reaches 165 degrees.
  • While meatballs are cooking, cook and drain noodles according to package;
  • In a large skillet heat margarine, whipping cream, the remaining Hidden Valley Original Ranch dressing/seasoning mix, the remaining Fiesta Ranch Dip Mix, and pepper on medium heat until slightly thickened. ( Approximately 7 to 8 minutes. Do not boil. )
  • Add remaining Parmesan cheese and continue to cook 2 to 3 minutes until cheese is melted.
  • Place cooked meatballs in skillet and coat with sauce.
  • Place fettuccine in serving bowl. Pour sauce and meatballs over fettuccine. Sprinkle chives over dish.

This is a good alternative to your regular pasta. I have used hidden valley ranch brand and others, all were great. I do like the fiesta ranch the best in this recipe. This is a recipe that comes together quickly. You could add warm cooked chicken chunks to this recipe for protein in the meal.

1 1/4 ounces ranch dressing, envelope mix
1/2 cup picante sauce or 1/2 cup salsa
4 large tomatoes, coarsely chopped
1/4 cup olive oil
1 large garlic clove, minced
1/2 lb brie cheese, chilled
8 ounces medium egg noodles

Steps:

  • Start a large pot of water on high, for the egg noodles.
  • Meanwhile in a mixing bowl, blend salad dressing mix and salsa.
  • Stir in tomatoes, oil and garlic.
  • Remove as much rind as possible from brie and discard. Cut Brie into bite sized pieces and stir into tomato mixture.
  • Cook noodles according to package directions, and drain. Return noodles to same pot that you cooked them in and over medium heat, pour tomato mixture over noodles, stirring just to heat and melt cheese.
  • Serve immediately.

1 large onion , ½ grated, ½ finely chopped
3 garlic cloves , crushed
400g beef mince
50g fresh breadcrumbs
3 tbsp milk
25g parmesan , finely grated
½ small bunch of parsley , finely chopped
3 tbsp olive oil
2 x 400g cans chopped tomatoes
350g undefined
2 x 125g balls mozzarella , drained and cut into cubes

Steps:

  • Mix the grated onion, 1 crushed garlic clove, mince, breadcrumbs, milk, parmesan and parsley in a large bowl. Season well with salt and pepper. Mash the mixture together with your hands until combined. Mould the mix into small balls (about walnut-sized) with damp hands. There will be about 20 meatballs.
  • Heat 2 tbsp olive oil in a deep frying pan and fry the meatballs for 6-8 mins until golden brown all over. Fry in batches if you need to - they don't need to be cooked through, just browned on the outside. Set aside on a plate.
  • Heat the remaining 1 tbsp olive oil in the pan and fry the chopped onion for 5 mins until softened. Add the remaining garlic, fry for another minute, then add the chopped tomatoes and simmer for 10 mins until thickened and the tomatoes have broken down. Season well with salt and pepper.
  • Meanwhile, cook the pasta for 5 mins less than the pack instructions state, in boiling salted water. Heat the oven to 200C/180C fan/gas 6.
  • Stir the meatballs into the tomato sauce, adding a splash of water if too thick, and bring to a simmer. Drain the pasta and tip into an ovenproof dish. Pour over the sauce and meatballs and mix well. Stir in most of the mozzarella, then scatter the remaining over the top. Bake for 15-20 mins until the cheese is golden and bubbling, and the top is slightly crisp.

This is written as a Weight Watchers recipe but is easily adaptable to full fat ingredients and tastes good either way! It's not meant to be a complicated, balanced meal but a quick, tasty supper dish that goes well with just about anything. I like the flavour of garlic to be quite strong so feel free to use less if you do not.

2 cups dry pasta (shells work well)
1 tablespoon low-fat butter
3 -4 garlic cloves, crushed (or less to your taste)
3/4 cup low-fat ranch dressing
3/4 cup fat free sour cream
salt and pepper, to taste
fresh grated parmesan cheese (optional topping)

Steps:

  • Cook the pasta according to the package directions.
  • A few minutes before the pasta finishes cooking, melt the butter in a non-stick skillet.
  • Crush the garlic into the pan and cook, stirring, for 1 minute. Make sure the garlic and butter are mixed together so the garlic does not burn.
  • Add the ranch dressing, sour cream and salt and pepper.
  • Over a low-medium heat, warm the sauce gently, stirring occasionally.
  • When the pasta is cooked, mix it with the sauce and serve hot.
  • Top with parmesan cheese if you have the points to spare!

This easy-to-make baked meatball pasta bake is better than lasagna!

1 (16 ounce) package ziti pasta
1 ½ pounds frozen cooked meatballs, thawed
2 (28 ounce) jars prepared marinara sauce
1 cup ricotta cheese
1 teaspoon Italian seasoning
1 teaspoon garlic powder
3 cups shredded mozzarella cheese, divided
⅔ cup grated Parmesan cheese, divided

Steps:

  • Bring a large pot of lightly salted water to a boil. Add ziti and cook, stirring occasionally, about 3 minutes less than the package instructions, about 8 minutes. Drain pasta.
  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 13x9 inch baking dish.
  • Heat oil in a skillet over medium heat and cook meatballs until browned on all sides, about 5 minutes. Add marinara sauce and ricotta cheese; mix to combine. Add cooked pasta and mix to combine. Season with Italian seasoning and garlic powder.
  • Cover the bottom of the prepared baking dish with a layer of sauce without meatballs. Sprinkle 1 cup mozzarella cheese on top. Add another layer of sauce with meatballs on top and sprinkle with 1/3 cup Parmesan cheese. Add another layer of 1 cup mozzarella cheese. Add the rest of the sauce and meatball mixture on top, followed by remaining 1 cup mozzarella cheese and 1/3 cup Parmesan cheese. Cover baking dish with aluminum foil.
  • Bake in the preheated oven until cheese is melted, 20 to 30 minutes.
  • Remove foil and bake until cheese starts to turn golden brown, 10 to 20 minutes. Enjoy!
