GUACAMOLE LAYERED DIP
Make this delicious layered dip made using two types of cheese, bean dip, prepared guacamole and Old El Paso® Salsa - ready in just 20 minutes!

Steps:
- In medium bowl, combine sour cream, cream cheese and Monterey Jack cheese; mix well. Spread evenly on 10-inch serving plate. Refrigerate 5 to 10 minutes or until slightly set.
- Carefully spread bean dip over sour cream mixture. Spread salsa over bean dip. Spoon guacamole over salsa. Sprinkle with olives.
- Serve immediately, or cover and refrigerate dip until serving time. Serve with tortilla chips.

- In a small bowl, combine cream cheese and 3 tablespoons salsa; spread into an ungreased 9-in. pie plate. Combine cocktail sauce and remaining salsa; spread over cream cheese. , Arrange shrimp evenly over top. Sprinkle with olives. Combine cheeses; sprinkle over top. Add onions. Chill. Serve with tortilla chips.

SEVEN-LAYER SHRIMP DIP WITH MANGO SALSA
Be sure to use a thickish tortilla chip with this tropical appetizer. This dip will disappear quickly. You may use regular salsa or any fruit salsa you prefer. You may also layer this on a decorative serving dish, which is what I usually do.

Steps:
- Cream the cream cheese, sour cream, Worcestershire sauce, lemon juice, pepper, garlic together until smooth.
- Spray the springform pan with a non-stick shortening spray.
- Spread the cream cheese mixture in 9" springform.
- Layer the spread the green chiles over the cream cheese mixture.
- Next layer the mango salsa, green onions, chopped shrimp, and black olives.
- Top with shredded cheese.
- Garnish with the chopped cilantro.
- Refrigerate until ready to serve.
- Place on large plate and remove springform sides.
- Serve with corn tortilla chips.

- Place cream cheese in a mixing bowl; cream with a fork. Add sour cream and mayonnaise. Whisk with a fork until mixture is well combined and smooth.
- Spread cream cheese mixture in the bottom of an 8-inch pie plate to create the first layer. Top evenly with cocktail sauce, imitation crab, shrimp, green onion, diced tomato, and mozzarella cheese to create remaining layers. Garnish with small whole shrimp, sliced green onion, and fresh parsley, if desired.
- Cover and chill for a minimum of 2 hours, or overnight, to allow flavors to meld.

- In a medium mixing bowl, mash the avocado, citrus juices, and salt with a fork (or molcajete) until it reaches your preferred consistency.
- Place the sour cream, mascarpone, cotija cheese, and lime juice in a medium mixing bowl and mash the mascarpone and cheese into the sour cream until mostly smooth (you can also use an immersion blender). Stir in the cilantro, and taste. Add a pinch of salt, if necessary.
- Layer the guacamole in the bottom of a glass serving bowl and smooth out. For an attractive presentation against the glass, press the guacamole against it so there are no air pockets. Spread the creamy cotija on top of the guacamole (ditto with pressing it against the glass).
