- Place potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Drain. , In a large bowl, mash potatoes with remaining ingredients.

Good and simple side dish that pairs well with lamb or grilled flank steak. ZWT West region (Idaho potatoes).

Steps:
- Cook potatoes in large pot of boiling salted water until tender, about 20 minutes. Drain. Return to pot.
- Meanwhile, bring 1 1/3 cups milk and garlic to boil in large saucepan. Add milk mixture and horseradish to potatoes. Using potato masher, mash until smooth. Add butter; stir until melted. Season with salt and pepper. (Can be made 2 hours ahead. Let stand at room temperature. Stir over medium heat until heated through, adding more milk to thin if necessary.).

Steps:
- Place potatoes and 1 tsp salt in a saucepan, cover with water, bring to a boil.
- Reduce heat to simmer.
- Cook until potatoes are tender, about 20 minutes.
- Drain, return to pot.
- Add half and half, butter, remaining salt, pepper.
- Place pan over medium low heat, mash for 4-5 minutes.
- Add bacon, cheese, sour cream, chives and stir.

KICKED UP MASHED POTATOES
Steps:
- Peel and boil potatoes until fork tender and drain.
- Add and mix in butter, cream cheese, chopped onion, and salt and pepper to taste, and adding half-and-half as needed for mashed potato consistency. Place in casserole dish and sprinkle top with parmesan cheese.
- Put in 350 degrees F oven and bake about 20 - 30 minutes or until top becomes firm.
