MOZZARELLA CHICKEN

This is a great change from the usual chicken.

Number Of Ingredients 10

4 skinless, boneless chicken breasts
¼ cup butter
salt and pepper to taste
4 slices mozzarella cheese
1 egg, beaten
2 cups all-purpose flour for coating
1 cup seasoned dry bread crumbs
¼ cup butter
2 teaspoons minced garlic
1 cup dry white wine

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place chicken breasts between 2 sheets of wax paper. Pound each to 1/4 inch thickness. Spread butter/margarine over the inside, then add salt and pepper to taste.
  • Place slice of cheese on breast, roll and close with toothpicks. Repeat with each breast. Dip rolled breasts in flour, then egg, then breadcrumbs. Place coated breasts in a lightly greased 9x13 inch baking dish.
  • To Make Sauce: In a saucepan, melt 1/4 cup butter and add garlic. Add wine and simmer all together. Pour sauce over chicken and bake in the preheated oven for 30 to 45 minutes.

Using mozzarella cheese, chicken broth, garlic and onion, this is a variation of Chicken Parmesan created for my son, who doesn't like the standard version. This dish goes fast in our home, served with hot cooked pasta, salad and crusty Italian bread.

½ tablespoon olive oil
4 skinless, boneless chicken breast halves
½ teaspoon ground black pepper
½ teaspoon minced garlic
¼ cup minced onion
½ cup chicken broth
4 cups spaghetti sauce
1 cup shredded mozzarella cheese

Steps:

  • Heat oil in a large skillet over medium high heat. Saute chicken breasts for 4 to 5 minutes each side, or until white. Add pepper, garlic, onion and broth. Cover and simmer over medium heat until broth cooks off, about 7 to 10 minutes.
  • Stir in spaghetti sauce, then cover and simmer another 10 minutes, or until chicken is cooked through and no longer pink inside. Sprinkle cheese on top, cover and cook for another 2 to 3 minutes, or until cheese is melted. Serve hot.

Easy and very addicting! I received this recipe from my good friends, Brad & Sandy, who are in Texas. This I loved so much I made 4 times in a row!!! They suggest using Frank's Hot Sauce but I've made it only with regular tabasco (I add extra) and it works great... Enjoy!

1 lb chicken tenderloins
3 tablespoons butter or 3 tablespoons margarine
3 tablespoons Tabasco sauce
1/4 cup parmesan cheese
1 cup mozzarella cheese, shredded

Steps:

  • Preheat oven to 350 degrees.
  • Melt butter on medium low heat in large skillet.
  • Add tabasco sauce.
  • Add chicken and cook until done.
  • Reduce heat to low and simmer until sauce reduces a bit.
  • Place chicken in baking dish including the sauce.
  • Sprinkle with parmesan cheese.
  • Cover with mozzarella cheese.
  • Place uncovered in oven for 20-25 minutes or until cheese is browned.

1 lb boneless skinless chicken breast
1/2 cup Italian seasoned breadcrumbs
2 eggs, beaten
2 tablespoons olive oil
4 tablespoons butter, melted
1 lb mushroom, sliced
2 cups chicken broth
1/2 cup white wine
2 tablespoons flour
1/2 cup shredded mozzarella cheese

Steps:

  • Dip chicken breasts in eggs and dredge in bread crumbs on both sides.
  • Saute breasts in olive oil, set aside.
  • Saute mushrooms in melted butter and add broth and wine to mushrooms and bring to a boil.
  • Put chicken breasts in baking dish.
  • Pour wine sauce and mushrooms over chicken.
  • Marinate overnight in refrigerator or if baked immediately you may want to thicken sauce with flour.
  • Bake chicken at 350 degress for 35-40 minutes.
  • Sprinkle cheese over chicken 5 minutes before chicken is done, until melted.
  • Serve with rice or noodles.

I was looking for an alfredo-like sauce and came up with this instead. It's VERY rich and not a low calorie meal!

4 boneless skinless chicken breasts
2 garlic cloves, minced
1/2 teaspoon fresh ginger, minced
2 tablespoons olive oil
1 cup chicken stock
1 cup milk
6 ounces cream cheese
1 dash thyme
1 dash salt (omit if using bullion for chicken stock)
1/2 cup mozzarella cheese, shredded

Steps:

  • Preheat oven to about 350.
  • Mix garlic, ginger, and olive oil in a skillet until garlic starts to brown.
  • Brown chicken breasts and transfer to baking pan.
  • Put chicken in the oven while making the sauce.
  • Turn down burner to medium heat. Add chicken stock, thyme, and salt to pan. Mix in all the remaining garlic and ginger bits. Add milk and cream cheese. Allow the cream cheese to melt and whisk well to mix everything. Add mozzarella, mix well, and let sit until everything melts together and sauce turns into a "big goopy mess".
  • Pour onto chicken breasts. Put them back in the oven for about 20-30 minutes or until internal temp is correct.
  • Excellent with a 'plain' side dish such as brown rice, some noodles, or even just a spinach bedding.

  • TOMATO SAUCE: Preheat the oven on the broiler setting. Add the onions to the oil remaining in the pan. If there isn't any, add in about ½ teaspoon and sauté the onion for 2-3 minutes until they soften, add the garlic and let cook for 30 seconds. Add the crushed tomatoes, Italian seasoning, red pepper flakes, dried basil, and pesto and stir to combine. When the sauce reaches a simmer, add a ¼ cup of water, lower the heat, cover and allow to simmer for 10-12 minutes or until the sauce thickens a bit. Season with salt and pepper to taste.
  • ASSEMBLE: Nestle the chicken breasts into the sauce and using a spoon, cover the chicken with sauce. Top each breast with a slice of cheese. Place under the broiler for 1-2 minutes or until the cheese gets nice and bubbly and just melts. Top with chopped parsley or basil ribbons. Serve with pasta or crusty bread and a salad.
