2 lbs chicken wings
1/2 cup tequila
1/4 cup frozen orange juice concentrate
1 lemon, zest of, grated
1 lemon, juice of
2 garlic cloves, minced
1/2 teaspoon ground cumin
1 teaspoon fresh ground black pepper
1 teaspoon salt
2 tablespoons minced cilantro

Steps:

  • Wash the wings, pat dry and place in a large resealable plastic food bag.
  • In a small bowl, combine the tequila, orange juice concentrate, lemon zest, lemon juice, garlic, cumin, black pepper, salt, and cilantro. Pour the marinade over the wings in the bag. Seal the bag and refrigerate several hours or overnight.
  • Prepare a medium-hot charcoal fire or pre-heat a gas grill to medium-high.
  • Drain the wings, discarding the marinade.
  • Grill the wings, turning often, until they are slightly charred and cooked through, about 25 minutes.
  • To bake: Preheat oven to 375 dg. and bake on cookie sheet for 45 minutes, turning once after 25 minutes, or until brown.

Vegetable oil, for frying
1 cup sour cream
1/2 cup blue cheese crumbles
1/2 cup mayonnaise
4 dashes Worcestershire sauce
1 canned chipotle pepper in adobo, finely chopped
Juice of 1/2 lemon
1 1/2 cups buttermilk, plus more if needed for thinning
Kosher salt and freshly ground black pepper
1 cup all-purpose flour
Cayenne pepper, to taste
4 pounds chicken wings
2 sticks butter, melted
1 small bottle cayenne pepper sauce, such as Frank's
1/4 cup barbecue sauce
1 tablespoon honey
1 tablespoon juice from a jar of pickled jalapenos
2 dashes Worcestershire sauce

Steps:

  • For the wings and dip: Pour about 3 inches of the vegetable oil into a large pot and heat it to 350 degrees F.
  • While the oil is heating, make the dip. Stir together the sour cream, blue cheese, mayonnaise, Worcestershire, chipotle and lemon juice in a medium bowl. Thin with a little buttermilk if needed. Taste and adjust the seasoning with salt and pepper.
  • To make the batter, whisk together the flour with some salt, pepper and cayenne in a large bowl. Whisk in the 1 1/2 cups buttermilk to form a smooth but thin batter.
  • Toss the chicken wings in the batter. Working in batches, fry 6 to 8 wing pieces at a time until golden brown and cooked through, 7 to 8 minutes. Drain on paper towels and keep warm.
  • For the sauce: In a large bowl, stir together the melted butter, hot sauce, barbecue sauce, honey, pickled jalapeno juice and Worcestershire. Toss the hot wings in the sauce to coat them well. Serve with the creamy dip.

TEQUILA-TANGERINE CHICKEN WINGS

If you like chicken wings, you're going to love these! They're a little sweet, a little spicy, and oh-so finger lickin' good. The sauce is also great on other cuts of chicken, pork, beef and shrimp.

1 cup sugar
1/2 cup soy sauce
1/4 cup tequila
2 jalapeños, thinly sliced, plus more for garnish
2 tangerines, thinly sliced, plus 1 1/3 cups tangerine juice, plus more tangerine slices for garnish
2 tablespoons cornstarch
Neutral oil, for frying
2 pounds whole chicken wings (about 12 wings)
Kosher salt and freshly ground black pepper

Steps:

  • Combine the sugar, soy sauce, tequila, jalapeños, sliced tangerines and tangerine juice in a medium saucepan. Bring to a boil. Reduce the heat and simmer until the sauce reduces, about 15 minutes. Strain and discard the solids, then return the sauce to the pan. Whisk together the cornstarch and 1 tablespoon cold water in a small bowl. Add to the sauce and cook until thickened, about 2 minutes. Set aside.
  • Pour the oil to a depth of 3 inches in a Dutch oven and heat to 375 degrees F.
  • Pat the chicken wings dry with paper towels. Sprinkle with salt and pepper. Fry the wings until golden brown and a thermometer registers 165 degrees F when inserted in the thickest portion (avoid bone), 8 to 10 minutes (The wings will begin to float to the top.)
  • Remove the wings to paper towels to drain. Place the wings in a large bowl. Pour the sauce over the wings and toss to coat. Transfer to a serving platter. Garnish with jalapeño slices and tangerine slices.

2 pounds chicken wings, tips removed and wings split
1 cup sliver tequila
1 teaspoon grated lime zest (from 2 limes) plus 6 tablespoons lime juice (from 4 limes)
1 teaspoon grated orange zest (from 1 orange) plus 1/2 cup orange juice (from 1 orange)
1 tablespoon agave nectar
6 to 8 pequin chile peppers, crushed (see Cook's Note)
Kosher salt
Nonstick cooking spray

Steps:

  • Place the chicken wings in a resealable plastic bag. In a small bowl, whisk together the tequila, lime zest and juice, orange zest and juice, agave, crushed peppers and 1/2 teaspoon salt. Pour over the wings and seal the bag. Toss the wings in the marinade to coat. Place in the refrigerator and allow to marinate for 2 hours.
  • Preheat the oven to 450 degrees F.
  • Spray a baking sheet with nonstick cooking spray. Lay the wings out on the tray so they do not touch each other. Bake, flipping the wings halfway through, until cooked through and beginning to brown, about 25 minutes.
  • Meanwhile place the marinade in a small saucepan over medium-high heat and simmer until reduced to 1/2 cup, 8 to 10 minutes.
  • Heat a grill pan over medium-high heat. Grill the wings, turning often and brushing occasionally with the reduced liquid to coat, until golden and crispy, about 4 minutes.

1 cup Japanese soy sauce
1 cup tightly packed brown sugar
½ cup pineapple juice
¼ cup sake
¼ cup rice vinegar
8 cloves garlic, crushed
1 tablespoon grated ginger
1 teaspoon monosodium glutamate (MSG)
½ teaspoon Korean red pepper flakes
½ teaspoon toasted sesame seeds
2 pounds chicken wings

Steps:

  • Combine soy sauce, brown sugar, pineapple juice, sake, rice vinegar, garlic, ginger, monosodium glutamate, red pepper flakes, and sesame seeds in a small saucepan. Bring to a simmer; cook for 10 minutes. Remove sauce from heat and let cool.
  • Cut wings at the joint to make drumettes. Transfer to a large resealable plastic bag. Pour in sauce. Marinade in the refrigerator, at least 3 hours and up to overnight.
  • Preheat grill for medium heat and lightly oil the grate. Remove chicken wings from sauce; grill until lightly browned, about 5 minutes per side.
  • Pour sauce into a saucepan. Bring to a simmer; cook for 5 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Arrange chicken wings in a single layer in a large baking dish; pour sauce on top.
  • Bake in the preheated oven, turning and basting frequently, until wings are browned, about 1 hour.
