3 c thai long-grain jasmine rice
water, to rinse rice
3 3/4 c water (approximate amount)

Steps:

  • 1. Rinse rice: Add rice to a 2 1/2-to-3 quart heavy saucepan with a tight-fitting lid, and cover rice with cold water by 2 inches. Swirl rice around in water several times with your hand, and drain. Repeat procedure 2 more times, or until water runs clear. Drain rice well in a sieve to remove all water.
  • 2. Return rice to pan and add enough water (about 3 3/4 cups) to cover rice by about 3/4 inch. Measure by placing the tip of an index finger in the surface of the rice and ensuring that water surface is at the first joint.
  • 3. Bring water to a boil, uncovered, and boil rice 15 seconds. Cook rice, covered, over very low heat without lifting lid, 15 to 29 minutes, or until water is absorbed and rice is tender. Remove pan from heat and let stand, covered, 5 minutes. Turn rice gently with a flat wooden spatula and keep warm, covered. Rice is best served within 1 hour of cooking.

I wanted to add a little flavor to my jasmine rice and decided to try this and it worked out great. My husband and my son loved it and almost finished the whole pan of it.

1 cup uncooked jasmine rice
2 teaspoons olive oil
1/4 cup chopped onion
1 garlic clove, finely chopped
1 Knorr cilantro minicube
14 ounces Swanson chicken broth
1/4 teaspoon table salt
1/4 teaspoon black pepper
2 teaspoons ground cumin

Steps:

  • In a high sided skillet (that has a cover), saute the rice in oil over medium high heat until the rice is solid white, then add onion and saute until onion is translucent, add garlic and saute just a little. Rice should be lightly tanned. Pour the broth slowly into the skillet. Add cilantro seasoning minicube, salt, cumin, and pepper, stir and bring to a boil then lower it to a simmer on low heat. Make sure minicube has dissolved.
  • Cover & cook on low until the water is absorbed and the rice is tender. Do not uncover and DO NOT STIR while rice is cooking. About 20-25 minutes.

This is a thai dish with a lot of the flavor coming from the pineapple and coconut. I prefer to use thai jasmine rice but you can use regular white rice too. I used a can of pineapples instead of a fresh one since that was what I had on hand. Be sure to make just what you need, I couldn't stop picking at the leftovers!

2 -3 tablespoons vegetable oil
4 cups freshly cooked rice
1/2 cup roasted cashews
1/2 pineapple
1/2-1 cup Chinese barbecue pork or 1/2-1 cup other leftover cooked meat, cut into bite size pieces (optional)
2 tablespoons chopped coriander roots
1/2 teaspoon white pepper
1/4 cup sugar
1/4 cup fish sauce
1 1/2 cups coconut milk
coarsely chopped green onion, for garnish

Steps:

  • Cut half of the pineapple into cubes.
  • Prepare all remaining ingredients and have at hand.
  • In a small saucepan, heat the coconut milk to a boil.
  • Add the coriander root, white pepper, sugar and fish sauce.
  • Reduce heat and simmer the sauce for 3-5 minutes, then strain.
  • Preheat a wok over medium high heat and add the oil, to coat the sides of the wok.
  • When the oil is hot, add the meat, pineapple, cashews and rice.
  • Stir and toss to combine well.
  • Slowly pur the seasoned coconut milk over the rice, 1/4 cup at a time until the rice is just moistened.
  • You will have more than enough seasoned coconut milk, any leftovers can be frozen for future use.
  • Continue stif frying until the rice is heated through.
  • If desired, fill the empty pineapple half with the rice mixture.
  • Garnish and serve.

3 garlic cloves, minced
6 cups chicken stock
3 slices fresh galangal root or 3 slices fresh gingerroot
1 tablespoon pickled cabbage, minced (called tang chye, chinese pickled cabbage) (optional)
1 teaspoon salt
1/2 teaspoon white pepper
3 cups cooked jasmine rice or 3 cups cooked long-grain rice
1 lb fresh fish fillet, cut into bite-sized pieces (red snapper, flounder or salmon)
1 stalk celery, sliced thinly
2 tablespoons nam pla
2 scallions, thinly sliced (optional)
2 tablespoons fresh cilantro leaves, minced (optional)

Steps:

  • Heat the oil in a wok or skillet over medium heat and stir fry teh garlic until fragrant and golden brown, 1-2 minutes. Set aside.
  • In a large saucepan, bring the chicken stock to a boil over high heat. Reduce the heat to medium and add the galangal and tang chye. Season with the salt and pepper and simmer for about 7 minutes.
  • Add the rice and bring the mixture to a boil.
  • Add the fish pieces and simmer for about 5 minutes until fish is cooked.
  • Stir in the celery and fish sauce and remove from heat.
  • Serve hot garnished with the crispy fried garlic, scallions and cilantro leaves.
