3 large eggs, lightly beaten
1 cup light corn syrup
1/2 cup packed brown sugar
2 tablespoons all-purpose flour
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1 cup chopped pecans
1 cup semisweet chocolate chips
2 tablespoons butter, melted
1 pie shell (9 inches), unbaked

Steps:

  • In a small bowl, whisk the eggs, corn syrup, brown sugar, flour, vanilla and salt. Stir in pecans, chocolate chips and butter. Pour into crust. Cover edge with foil. , Bake at 350° for 25 minutes. Remove foil; bake 15-20 minutes longer or until a knife inserted in the center comes out clean. Cool on a wire rack. Refrigerate leftovers.

1 (9 inch) pie crust pastry
1 cup light corn syrup
1 cup white sugar
4 eggs
1 ¼ cups chocolate chips
1 cup chopped pecans
½ cup butter, melted
2 tablespoons bourbon
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Press pie crust into a 9-inch pie plate.
  • Beat corn syrup, white sugar, and eggs together in a bowl using an electric mixer on low speed until well blended; stir in chocolate chips, pecans, butter, bourbon, and vanilla extract. Pour mixture into the prepared pie crust.
  • Bake in the preheated oven until set, 45 to 50 minutes.

1¼ cups all-purpose flour, plus more for rolling
¼ teaspoon salt
½ teaspoon sugar
1 stick chilled unsalted butter, cut in pieces
3 tablespoons ice water
2 large eggs
1 cup sugar
1 stick unsalted butter, melted and cooled
¼ cup Maker's Mark® Bourbon
½ cup all-purpose flour
1½ cups walnuts, toasted and coarsely chopped
1 cup semi-sweet chocolate chips

Steps:

  • 1. To make the crust: In a food processor, pulse the flour, salt, and sugar to mix. Add the butter and pulse until the mixture resembles coarse meal with pea-sized pieces. Sprinkle the ice water on top and pulse until large clumps form. Press the dough into a disk, wrap tightly in plastic wrap, and refrigerate until firm, about 1 hour. 2. On a lightly floured work surface, roll the dough into a 12-inch round. Fit into a 9-inch pie dish. Tuck in the overhang and decoratively crimp the edges. Freeze while heating the oven. 3. Preheat the oven to 350°F. Prick the bottom of the dough all over with a fork. Line with parchment paper and fill with pie weights or dried beans. Bake until the is golden and dry, about 20 minutes. Remove the parchment and pie weights. Return the crust to the oven and continue baking until golden brown, about 5 minutes. Let cool slightly on a wire rack. 4. Meanwhile, make the filling: In a large bowl, whisk the eggs and sugar. Continue whisking while adding the butter, then the bourbon. Stir in the flour until well combined. Stir in the walnuts and chocolate chips. Pour into the warm pie shell. 5. Bake until the filling is set and the top golden, about 30 minutes. Cool in the pan on a wire rack. Serve warm or room temperature.

KENTUCKY "RACE DAY" CHOCOLATE PECAN PIE

This is an incredibly easy but wonderful pie recipe to celebrate the Kentucky Derby! It is very rich, but it is great with vanilla ice cream or whipped cream. To speed up the process, you could use a pre-packaged pie crust, but I highly recommend making a quick and easy crust from scratch!

1 ¼ cups all-purpose flour
1 pinch salt
½ cup cold unsalted butter
¼ cup ice water
1 cup white sugar
½ cup unsalted butter, at room temperature
2 large eggs
½ cup all-purpose flour
1 teaspoon bourbon
1 pinch salt
1 cup milk chocolate chips
1 cup chopped pecans

Steps:

  • Combine flour and salt in a large bowl. Cut in butter until mixture resembles coarse crumbs. Stir in water, 1 tablespoon at a time, until dough forms a ball. Wrap in plastic wrap and refrigerate for 3 hours.
  • Roll dough out to fit a 9-inch pie plate. Place crust in the pie plate. Press evenly over the bottom and up the sides.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Beat sugar and butter together in a bowl with an electric mixer until creamy. Add eggs, flour, bourbon, and salt and mix at very low speed for 1 minute. Be careful not to overmix or the texture could suffer. Add chocolate chips and pecans and mix at very low speed for about 30 seconds. Scrape the pie filling into the pie shell using a rubber spatula.
  • Bake on the middle rack of the preheated oven until set, 35 to 40 minutes.

This is also called Chocolate Chip Pecan Pie -- either way, it's amazing! I obtained this recipe from an elderly woman at church who had been making it in Lexington, Kentucky since she was a little girl.

2 frozen pie crusts
4 eggs
3/4 cup white sugar
1/4 cup brown sugar
1 teaspoon vanilla
1 cup white corn syrup
1/2 cup butter
1 tablespoon all-purpose flour
1 cup chopped pecans
1 cup semi-sweet chocolate chips

Steps:

  • Beat eggs.
  • Add sugars, vanilla, corn syrup, butter and flour.
  • Spread half of the nuts and chocolate chips into each of the pie crusts.
  • Pour half of the egg mixture into each crust over the chips and pecans.
  • Bake at 350 degrees for 40 minutes or until middle of pie is set.
