COPYCAT KEEBLER PECAN SANDIES

This is my favorite recipe for pecan sandies and tastes just like the store bought ones. The recipe is from copykat.com, but I wanted to save it here, and in my special cookbook!!

Number Of Ingredients 10

1/2 cup vegetable shortening
1/2 cup white sugar
1/2 cup powdered sugar
1 egg, beaten
1/4 teaspoon salt
1/2 teaspoon cream of tartar
1/2 teaspoon baking soda
1 teaspoon vanilla
1 3/4 cups flour
1/2 cup finely chopped pecans

Steps:

  • Preheat oven to 350 degrees.
  • Measure flour, cream of tarter, and baking soda together and set aside.
  • Cream vegetable shortening and sugars together until fluffy.
  • Add vanilla, salt, and egg to sugar mixture and beat until smooth.
  • Add flour mixture to sugar mixture 1/3 at a time, beating after each addition until completely mixed.
  • Dough will seem a little thick.
  • Stir pecans into dough with a strong spoon.
  • Chill dough for 30- 45 minutes.
  • Roll dough into 1- 1 1/4 inch balls and place on ungreased cookie sheet.
  • Flatten balls to 1/4 inch thickness.
  • Bake for 12- 15 minutes, until slightly golden.
  • Remove to cooling rack.
  • When completely cool, store in air-tight container.

Copycat Keebler Sandies Cookies are the melt-in-your-mouth buttery shortbread pecan cookies you love, easily made at home. Tastes like the original recipe!

1 cup unsalted butter (, softened)
1/2 cup powdered sugar
1 tablespoon whole milk
2 teaspoons vanilla extract
2 cups flour
1 cups pecans (, chopped)
1/4 cup powdered sugar

Steps:

  • Preheat oven to 325 degrees and line 2 baking sheets with parchment paper.
  • Add butter to your stand mixer on medium speed until well creamed, about 30 seconds.
  • Add in powdered sugar, milk and vanilla extract and mix until light and fluffy.
  • Sift the flour then add it to the stand mixer on the lowest setting until just combined.
  • Stir in the pecans.
  • Roll 1 inch balls of dough then press down slightly with a glass dusted with powdered sugar 2 inches apart.
  • Bake for 13-15 minutes or until edges just barely start to brown.

Steps:

  • 1. PREHEAT OVEN TO 350*
  • 2. MEASURE FLOUR , CRM OF TARTAR, BAKING SODA TOGETHER AND SET ASIDE. BEAT SHORTENING AND SUGARS TOGETHER UNTI LIGHT AND FLUFFY. ADD IN VANILLA , SALT,EGGS TO SUGARS AND BUTTER MIX BEAT UNTIL SMOOTH. ADD FLOUR MIXTURE AND SHORTENING ABOUT A THIRD AT A TIME. BEAT UNTIL COMPLETELY MIXED THOURGH.DOUGH WILL SEEM A LITTLE THICK. STIR IN PECANS IF DESIRED INTO COOKIE DOUGH WITH A SPOON AND BLEND WELL. CHILL DOUGH FOR 30-45MINS.ROLL OUT DOUGH INTO A 1 TO 11/4 THICK. BAKE IN OVEN FOR 12-15MINS UNTIL SLIGHTLY GOLDEN....
