Using the finest pecorino romano (sheep's milk) cheese and a food processor for some of the prep set this simple meatball recipe apart.

Number Of Ingredients 8

1/2 cup milk
1 cup fresh breadcrumbs
1 onion, coarsely chopped
10 garlic cloves
4 pounds ground sirloin beef
4 large eggs, slightly beaten
1 cup fresh parsley, chopped
2 cups freshly grated Locatelli cheese

Steps:

  • Preheat oven to 400 degrees. In a small bowl, combine the milk, breadcrumbs, and 1/2 cup water; set aside until softened.
  • In the bowl of a food processor, combine the onion and garlic. Process until very finely chopped; transfer to a large bowl along with the beef, eggs, breadcrumb mixture, parsley, and cheese. Using your hands, mix until well combined.
  • Measure the meat mixture into 1/4-cup-sized balls. Transfer to a roasting pan, and bake for 15 minutes, turn, and bake for 15 more minutes. Remove, drain, and set aside.

All it takes to achieve this meaty main dish is eight basic ingredients. Got them? Great! Now, if you have 15 minutes to spare and a foil-lined 13x9 pan, perfectly browned and tender meatballs could be the answer to tonight's dinner jam. Yes, delicious doesn't take long! In the meantime, prepare spaghetti or rice, veggies or salad, because this recipe goes with anything!

1 lb lean (at least 80%) ground beef
1/2 cup Progresso™ Italian-style bread crumbs
1/4 cup milk
1/2 teaspoon salt
1/2 teaspoon Worcestershire sauce
1/4 teaspoon pepper
1 small onion, finely chopped (1/4 cup)
1 egg

Steps:

  • Heat oven to 400°F. Line 13x9-inch pan with foil; spray with cooking spray.
  • In large bowl, mix all ingredients. Shape mixture into 24 (1 1/2-inch) meatballs. Place 1 inch apart in pan.
  • Bake uncovered 18 to 22 minutes or until temperature reaches 160°F and no longer pink in center.

4 eggs, slightly beaten
1 (1 1/4 ounce) envelope Lipton Onion Soup Mix
2 cups grated cheddar cheese
3/4 cup chopped walnuts
1 cup dry Italian style breadcrumbs
2 (1 1/4 ounce) envelopes vegetarian broth (I use G.Washington brown broth)

Steps:

  • Mix first five ingredients together in order.
  • Refrigerate for 30 minutes.
  • Form into 1-1/4 inch balls and place on baking sheet sprayed with Pam.
  • Bake in 400 degree oven until brown, about 20 minutes.
  • (May be frozen now.) Place meatballs in casserole and cover with 2-3 cups boiling water and 2-3 cubes or envelopes vegetarian brown broth.
  • Meatballs should be within 1/2 inch of being covered with liquid.
  • Bake, covered, at 350 degrees for 1 hour (1-1/2 hrs if meatballs are frozen).
  • Or meatballs may be prepared in a crockpot on high setting for 1 hour (or 1-1/2 if frozen).

I never knew how to make good meatballs until I found this recipe. I normally make mine with just ground beef and they still taste great. I've used the combination of pork, beef and veal and they are equally good. Definitely use fresh bread crumbs and freshly grate your cheese instead of using the canned variety...it really does make a difference.

1 pound ground beef
½ pound ground veal
½ pound ground pork
2 cloves garlic, minced
2 eggs
1 cup freshly grated Romano cheese
1 ½ tablespoons chopped Italian flat leaf parsley
salt and ground black pepper to taste
2 cups stale Italian bread, crumbled
1 ½ cups lukewarm water
1 cup olive oil

Steps:

  • Combine beef, veal, and pork in a large bowl. Add garlic, eggs, cheese, parsley, salt and pepper.
  • Blend bread crumbs into meat mixture. Slowly add the water 1/2 cup at a time. The mixture should be very moist but still hold its shape if rolled into meatballs. (I usually use about 1 1/4 cups of water). Shape into meatballs.
  • Heat olive oil in a large skillet. Fry meatballs in batches. When the meatball is very brown and slightly crisp remove from the heat and drain on a paper towel. (If your mixture is too wet, cover the meatballs while they are cooking so that they hold their shape better.)

  • In a large bowl, add breadcrumbs and milk and stir. Allow breadcrumbs to sit until milk is absorbed. Add beef, egg, salt, pepper, ginger and garlic powder. Mix until all ingredients are evenly distributed. Form into meatballs about 2 inches in diameter and arrange in a single layer in prepared baking dish.
  • In a medium bowl, mix together the first 5 ingredients for the sauce until well combined. Add the can of pineapple chunks with all the juice, onion and green pepper and mix.
  • Pour sauce over meatballs and bake uncovered in preheated oven for 1 hour or until there is no longer any pink left in the meat. Serve over cooked rice.
