SPICY SAUSAGE SOUP WITH TORTELLINI
This soup is such a family treasure, both my daughters asked for the recipe when they moved out on their own. I cook the tortellini separately, but you can let it plump up in the soup broth, too. -Cynthia Krakowiak, Langhorne, Pennsylvania

Steps:
- In a 6-qt. stockpot, bring broth to a boil. Carefully drop sausage by heaping teaspoonfuls into boiling broth. Add tortellini, tomatoes and Italian seasoning; return to a boil., Reduce heat; simmer, uncovered, 8-10 minutes or until sausage is cooked through and pasta is tender. Stir in spinach until wilted. Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little broth if necessary.

KATE'S SPICY SAUSAGE TORTELLINI SOUP
I have adapted this recipe after trying many different variations.The spicy clamato gives it lots of zip.Different vegetables work well. Just add your favorites. When I submitted this recipe I cut the ingredients in half as I usually make a huge batch and freeze half.

Steps:
- Steam sausage for 15 minutes to reduce fat content.
- Let cool, and slice into bite sized pieces, removing casing if desired.
- Spray large pot with no-stick spray.
- Place sliced sausage in large pot with oil and let brown lightly. Remove sausage and pour off excess oil.
- In same pot add onions,garlic, celery, carrots, and mushrooms until softened but not browned, then add back sausage.
- Stir in seasoning, tomatoes, stock and clamato juice.
- Bring to boil and simmer covered for 30 minutes.
- Add frozen pasta and kidney beans; simmer covered for 20 minutes.
- If too thick, dilute with water or more broth.
- Season to taste.

Steps:
- Discard sausage casings. Cook sausage, onion and garlic in a Dutch oven over medium-high heat, stirring until sausage crumbles and is no longer pink; drain.
- Return mixture to Dutch oven.
- Stir in broth and next 6 ingredients; bring to a boil. Reduce heat; simmer 30 minutes. Skim off fat.
- Stir in zucchini and tortellini; simmer 10 minutes. Sprinkle each serving with cheese.

SAUSAGE & TORTELLINI SOUP
I wanted to make some soup on a cold day, but was tired of plain tomato or vegetable soup. So I played around with a few ingredients and came up with this. Hope you like it. I know I do. Oh and feel free to use some diced onion instead of the minced, but my dh can't handle fresh onion so i have to use the other. Sometimes i'll throw in some chopped cabbage too.

Steps:
- In a large pot, brown the sausage over medium-high heat with minced garlic and minced onion.
- Pour in the chicken broth and use a wooden spoon to get up all the brown bits from the bottom of the pan.
- Add in diced tomatoes, tomato sauce, Italian seasoning, pepper, and mushrooms.
- Reduce heat to low/medium low and let simmer for at least 30 minutes, but the longer you let it cook, the better flavor it will have.
- Add the tortellini and let cook through, about 10 minutes (I use frozen tortellini so it takes longer, but would be shorter if you use fresh or refrigerated).
- Serve and enjoy.
SPICY TORTELLINI SOUP
For a quick satisfying soup, this recipe is a snap to put together. The combination of the ingredients makes a nice sauce. A sprinkling of cheese provides a tasty finish. Served with French bread makes it hearty enough for a meal. Note: This recipe was entered for RSC#11 and has been modified with additional seasonings. ;)

Steps:
- In medium saucepan, bring chicken broth to a boil over high heat.
- Add tortellini, reduce heat to medium-low and simmer about 5 minutes. Gently stir in diced tomatoes, simmer 3 minutes until tortellini is tender, stir in sundried tomatoes, shallots.
- Stir in basil, cayenne pepper, oregano and black pepper and simmer another 2 minutes.
- Stir in spanach 1 cup at a time just until wilted.
- Ladle into shallow bowls, sprinkle with cheese and additional cayenne pepper to taste.
