1 ½ cups cooked black beans
3 tablespoons hot salsa
2 green onions, chopped
2 cloves garlic, minced
½ cup low-fat cottage cheese
1 teaspoon hot pepper sauce
2 teaspoons ground cumin
1 teaspoon ground coriander seed
salt and pepper to taste

Steps:

  • Combine black beans, salsa, green onions, garlic, cottage cheese, hot pepper sauce, cumin, coriander, salt and pepper in an electric blender and blend until smooth. Add a little water, if necessary, to blend mixture thoroughly.

This is one of the easiest recipies I know of and it can be served and eaten many ways. It can be served with virtually any chip as a dip for a party (or as I more commonly eat it which is whenever I'm hungry for 2 or 3 days till it's gone). It can be used on top of salads or as a condiment for Southwest-style wraps or eaten like a bean salad.

Number Of Ingredients 5

2 (15 ounce) cans black beans (drained)
2 (12 ounce) cans white shoepeg corn (well drained)
2 (10 ounce) cans Rotel Tomatoes (regular or medium)
1 bunch green onion (chopped)
1/4 bunch cilantro (chopped)

Steps:

  • Chop green onions and cilantro and place in large bowl.
  • Next, drain beans and corn.
  • Drain one can of Rotel tomatoes fully and partially drain second can.
  • Add all canned ingredients to bowl with green onions and cilantro.
  • Mix well and enjoy! This recipe can be eaten immediately after preparation or chilled and served later. Keeps well and lasts for days!
  • **Note: You can add salt and pepper to taste if desired however the salt in the canned ingredients is usually all you need). Also, you can substitute parsley for the cilantro if you aren't a big fan of it's flavor.

1 ½ tablespoons water, or more if needed
1 tablespoon freshly squeezed lemon juice
1 clove garlic, minced
1 teaspoon ground cumin, or more to taste
1 teaspoon chili powder, or more to taste
1 teaspoon onion powder, or more to taste
½ teaspoon salt

Steps:

  • Combine beans, water, lemon juice, garlic, cumin, chili powder, onion powder, and salt in a food processor; process until thick and smooth, adding more water if needed to reach desired thickness.
  • Chill for at least 1 hour before serving.

  • Puree all of the ingredients in a food processor.
  • As a sandwich filler, serve on whole-wheat bread with fresh spinach and sliced tomato.
  • As a dip, serve with fresh veggies such as baby carrots, cukes and red bell pepper slices.

A modified recipe from the vegetarian cookbook The New Laurel's Kitchen. There's room to vary the recipe to make it suit your tastes including of course Mexican-inspired. The original recipe called for soy beans, but I don't care too much for them so I've substituted pintos-usually; sometimes black beans or red beans. I think the two magic ingredients are the celery and the vinegar. Use for burritos, as a sandwich spread, in portabella mushroom burgers, bagel topping, chip dip, etc.

1/2 medium white onions or 1/2 medium yellow onion, minced
1 tablespoon olive oil
1 -2 garlic clove, minced
1 medium celery (with leaves, minced)
1/4 cup diced green bell pepper (or 1/2 jalapeno, diced for spicier version)
2 tablespoons tomato paste (I use ketchup or even BBQ sauce)
1/2 teaspoon italian seasoning (salt-free) or 1/2 teaspoon taco seasoning (salt-free)
1 1/2 cups beans, of your choice cooked and mashed
2 teaspoons white vinegar, to taste
1/4 teaspoon salt
fresh ground pepper
fresh parsley
shoyu
fresh lemon juice
cumin
cilantro leaf
cayenne

Steps:

  • Begin by sauteing on medium heat the onion and garlic in the olive oil until soft.
  • Next add the celery and pepper if using and cook another 2 to 3 minutes.
  • Add the garlic, tomato paste, herbs of your choice. Simmer about 10 minutes. (*Alternately, you can add the beans into the pan with the celery, onion, tomato paste, etc. and simmer. Do not allow the beans to dry out, adding a bit of water or stock if necessary.).
  • Place the cooked, warmed beans into a serving bowl.
  • Add the sauce along with the vinegar, salt and pepper into the mashed beans and mix well. Bean mixture should be spreadable but not watery.
  • Adjust seasoning.
