Time 1h15m

Yield 4 to 6 servings

Number Of Ingredients 13

1 cup yellow cornmeal
1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1/4 teaspoon garlic powder
1 cup (2 sticks) unsalted butter
1/2 cup buttermilk
1/2 cup milk
1/2 cup honey
2 large eggs
1/4 cup chopped fresh jalapenos (about 2 medium)
2 tablespoons chopped green onions
1 1/2 cups grated Cheddar

Steps:

  • Preheat the oven to 375 degrees F.
  • Combine the cornmeal, flour, baking soda, salt and garlic powder in a bowl. Mix well and set aside.
  • Melt the butter in a large pan or cast-iron skillet over medium-high heat. Transfer the melted butter to a medium bowl, add the buttermilk, milk, honey and eggs and whisk until blended. Stir in the jalapenos, green onions and 1/2 cup of the Cheddar. Add the cornmeal mixture and beat until very few lumps remain.
  • Pour the batter into the hot skillet and bake for 25 minutes. Sprinkle the cornbread with the remaining 1 cup Cheddar and continue to bake until a toothpick inserted in the center comes out clean, another 10 to 15 minutes. Transfer to a wire cooling rack and allow to cool before slicing.

KARDEA'S EASY ENTREMET

Kardea's Easy Entremet image

I've become very familiar with a lot of cool baking terms and techniques since becoming a judge for several baking competitions, and one of my favorite desserts has become an entremet. This dessert can feature layers of different sauces, mousses and cake. My entremet has layers of pound cake, blackberry-mascarpone mousse and pecan praline.

Time 9h5m

Yield 8 to 12 servings

Number Of Ingredients 15

One 16-ounce frozen pound cake, such as Sara Lee, thawed
3/4 cup cold heavy cream
1/3 cup confectioners' sugar
1/2 teaspoon pure vanilla extract
Half an 8-ounce container mascarpone, at room temperature
Half a 13-ounce jar blackberry preserves
2/3 cup firmly packed dark brown sugar
4 tablespoons unsalted butter
3 tablespoons heavy cream
1 cup confectioners' sugar
1 teaspoon pure vanilla extract
Pinch kosher salt
1/3 cup finely chopped toasted pecans
Two 12-ounce packages lavender candy melts
3 tablespoons coconut oil or vegetable shortening

Steps:

  • Thinly slice the pound cake horizontally into 3 equal layers. Set aside.
  • Make the blackberry mascarpone mousse: Beat the heavy cream, confectioners' sugar and vanilla in the bowl of a stand mixer at high speed until soft peaks form. Add the mascarpone and beat until stiff peaks form. (Do not overmix.) Fold in the blackberry preserves. Cover and refrigerate until ready to assemble.
  • Make the pecan praline: Combine the brown sugar, butter and heavy cream in a medium saucepan over medium-low heat. Cook, stirring occasionally, until the butter melts and the mixture begins to boil, about 5 minutes. Cook, stirring frequently, for 1 minute, being careful not to scorch the mixture. Remove the pan from the heat and whisk in the confectioners' sugar, vanilla and salt. Beat with a hand mixer on low speed until the mixture thickens to spreading consistency, about 3 minutes. Fold in the pecans and set aside until ready to assemble.
  • Line a 9-by-5-inch loaf pan with plastic wrap. Place one layer of cake on the bottom of the plastic wrap. Top with the pecan praline, spreading into an even layer. Top with another slice of pound cake, followed by the blackberry mascarpone mousse, spreading into an even layer. Top with the remaining slice of pound cake. Wrap tightly with plastic wrap and refrigerate for 8 hours or up to overnight, or freeze until set, for at least 2 hours or up to overnight.
  • Remove the cake from the loaf pan, unwrap and place on a wire rack over a piece of parchment paper.
  • Make the glaze: Combine the candy melts and coconut oil in a heatproof glass measuring cup. Microwave on high in 30-second intervals until the mixture is melted. Drizzle the glaze over the cake. Let stand until set, about 20 minutes. Slice the cake and serve.

Categories     side-dish

Time 45m

Yield 6 servings

Number Of Ingredients 10

1 tablespoon unsalted butter
1 tablespoon olive oil
1/2 large onion, chopped
2 cloves garlic, finely chopped
1 1/2 to 2 cups vegetable stock
2 teaspoons peeled, grated ginger root
1 pound (2 bunches) collard greens, chopped
2 teaspoons honey
Kosher salt and freshly cracked black pepper
2 large beefsteak tomatoes, cored and chopped

Steps:

  • Melt the butter and oil in a large deep pot over medium heat. Add the onions and saute until slightly softened, 2 to 3 minutes, then add the garlic and cook for 2 minutes more. Add 1 1/2 cups vegetable stock to the pot along with the ginger and bring to a simmer. Add the collard greens in batches, stirring and adding more as they wilt down. Stir in the honey and season the pot with salt and pepper. Stir in the tomatoes, then cover and cook, adding more stock if necessary, until the greens are tender, about 20 minutes. Taste the greens and add salt and pepper if you like.

KARDEA'S ULTIMATE SKILLET BROWNIE

Kardea's Ultimate Skillet Brownie image

There's nothing better than an ooey-gooey brownie, topped off with vanilla ice cream, salted caramel sauce and hot fudge. Goodness, goodness, goodness! You know how I love to make recipes with contrast: salty and sweet; hot and cold. The secret ingredient to making the brownie super rich is a little bit of espresso powder. Adding it really enhances the chocolate flavor.

Categories     dessert

Time 1h15m

Yield 8 to 12 servings

Number Of Ingredients 14

Nonstick cooking spray, for the skillet
1 cup all-purpose flour
3/4 cup unsweetened cocoa powder
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, melted
1 cup firmly packed light brown sugar
1 cup granulated sugar
1 tablespoon espresso powder
3 large eggs
1 tablespoon pure vanilla extract
1 cup semisweet chocolate chips
1 cup toffee bits
Vanilla ice cream, for serving
Salted caramel sauce and hot fudge sauce, for drizzling

Steps:

  • Preheat the oven to 350 degrees F. Coat a 10-inch cast-iron skillet with nonstick cooking spray.
  • Whisk together the flour, cocoa powder and salt in a medium bowl.
  • Stir together the melted butter, brown sugar, granulated sugar and espresso in a large bowl. Gradually add the eggs and vanilla to the large bowl, stirring until combined. Add the flour mixture and stir just until smooth. Fold in the chocolate chips and toffee bits. Pour the batter into the prepared skillet.
  • Bake until the edges are firm and the brownies are set, 40 to 45 minutes. Remove the skillet from the oven. Let cool slightly. Top with scoops of vanilla ice cream and drizzle with caramel and hot fudge sauce. Serve immediately.
