A great way to use up some of the extra kale you might have in your garden! You can use other similar greens in this recipe - spinach, mustard greens, and arugula will all work. A mixture of greens is also quite good. Serve as a salad, as a side dish, or as a main dish with rice.

3 tablespoons olive oil
1 onion, chopped
3 cloves garlic, minced
1 cup bread crumbs
3 bunches kale - washed, dried, and shredded

Steps:

  • Heat oil over medium-high heat in a large frying pan. Add onions and garlic; cook and stir until soft.
  • Mix in breadcrumbs, and cook and stir until brown.
  • Stir in kale, and cook until wilted. Serve hot or warm.

1 lb kale
2 tablespoons avocado oil or 2 tablespoons sunflower oil
1 leek, chopped
1 small onion, diced
5 garlic cloves, minced (or extruded through garlic press)
2 large red bell peppers, cut into short strips
1 large carrot, coarsely grated
1 1/2 cups small broccoli florets
1 pinch red pepper flakes
1/2-1 cup low sodium vegetable broth
1 cup bean sprouts
1/2 cup toasted cashew nuts, chopped
1 pinch salt (or to taste)
1/4 teaspoon fresh ground white pepper (or to taste)
1 lemon, cut into wedges to serve

Steps:

  • Wash kale. Pull greens away from the stalks, discarding stalks. Shred by hand into small pieces.
  • Heat large wok . Add oil and swirl around. Add onion & leek and stir-fry 3 minutes. Add garlic, bell peppers & carrot. Continue stir-frying until onions are tender and peppers are beginning to soften but still crisp.
  • Add the broccoli and pepper flakes, if using.and stir. Add the kale, cover and reduce heat to medium. Simmer for 5 minutes or until kale is tender, but still crisp, not too soft.
  • Remove lid and let any excess liquid evaporates. Use two forks to mix the bean sprouts through the other ingredients. Add salt & pepper to taste.
  • Transfer to serving plate and scatter nuts over the top, and serve with lemon wedges.

Ginger and soy sauce give this dish an Asian flair. You may substitute spinach or bok choy for the kale.

1 tablespoon minced fresh gingerroot
1/2 tablespoon safflower oil
1/4 lb kale, chopped coarsely
1 teaspoon soy sauce
1/4 cup water
1 teaspoon toasted sesame seeds (optional)

Steps:

  • In a medium skillet, cook the ginger root in oil, stirring, over medium heat for 1 minute.
  • Add the kale and raise the heat to medium high.
  • Add the soy sauce and water, and stir-fry until the kale is wilted but still slightly crunchy, about 3 minutes.
  • Sprinkle with sesame seeds.
  • Serve warm or cold.
  • You may substitute spinach or bok choy for the kale.
  • Enjoy!

BUTTERNUT SQUASH AND KALE STIR FRY

2 tablespoons butter
1 tablespoon olive oil
1/2 butternut squash, peeled, seeded and diced.
1/2 teaspoon kosher salt
1/4 teaspoon chile powder (more to taste)
Freshly ground black pepper
1 bunch kale, leaves torn, stalks discarded

Steps:

  • Heat 1 tablespoon of the butter and the olive oil in a large skillet over high heat. Add the squash and sprinkle with the salt, chile powder and pepper. Cook for several minutes, turning gently with a spatula, until the squash is deep golden brown and tender (but not falling apart). Remove to a plate and set aside.
  • In the same skillet, melt the remaining 1 tablespoon butter over medium-high heat and add in the kale. Toss it around with tongs and cook it for 3 to 4 minutes. Add in the cooked squash and gently toss together.

Mushroom and kale stir-fry served over a bed of navy bean "hummus" with a kick. Every time I buy kale for that famous soup we all love, the rest of the bunch goes bad. I always say that I am going to do something with it but there isn't enough for a batch of kale chips and it just sits in the crisper until I have to eventually pitch it. I came up with this based off a recipe a saw a couple of months ago and what I had on hand. Serves 2 as a main dish or 4 as a side.

1 (15.5 ounce) can navy beans, rinsed and drained
2 tablespoons lemon juice
1 tablespoon extra-virgin olive oil
1 teaspoon minced garlic
¼ teaspoon crushed red chile flakes
3 tablespoons unsalted butter, divided
6 ounces sliced fresh mushrooms
3 ounces kale, stemmed and finely chopped
¼ teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • Combine navy beans, lemon juice, olive oil, garlic, and chile flakes in a blender. Blend until smooth and set aside.
  • Heat 2 tablespoons of butter in a large skillet over medium-high heat. Add mushrooms and cook until golden brown, about 9 minutes. Transfer mushrooms to a bowl.
  • Melt remaining tablespoon of butter in the skillet. Add kale and season with salt and pepper. Cook, stirring frequently, until wilted, about 3 minutes. Remove from heat. Add mushrooms back to the skillet and toss to combine.
  • Divide bean mixture between 2 serving plates. Top with mushroom and kale mixture.

2 tablespoons soy sauce

Steps:

  • Clean kale and remove ribs.
  • Spray wok or skillet with cooking spray.
  • Heat on high, add kale and onions.
  • Stir for 1 to 2 minutes.
  • Pour in rice vinegar, soy sauce and sugar.
  • Reduce to medium heat and stir until kale and onions are tender crisp.

1 sweet potato
2 tablespoons sesame oil

½ zucchini, sliced
3 cloves garlic, chopped
2 tablespoons peanut sauce

  • Lightly season chicken breasts on both sides with salt and pepper.
