Homemade Hot Pepper Sauce image

3 cups distilled white vinegar
7-8 hot peppers (sliced or diced, not seeded)
3/4 teaspoon salt
6 cloves garlic (smashed)
1 onion, chopped
2 tablespoons peppercorns
1 teaspoon sugar
1 teaspoon olive oil (makes hot pepper sauce hotter)

Steps:

  • Clean jar, lid, and band with hot water. Rinse thoroughly.
  • Get out and measure your ingredients.
  • Grab 7-8 hot peppers slice them up. Pick your favorite variety or use a mixture. You can also just slice them in half or slice the ends off.
  • No need to seed the peppers or remove the membrane. They will add lots of heat and flavor if that is what you are looking for!.
  • Heat your vinegar and sugar up until just starting to boil. Remove from heat.
  • Toss hot peppers in salt.
  • Toss until blended.
  • Cram as many hot peppers as you can into your jar or bottle. If adding any additional flavor ingredients, add them now.
  • Using a funnel if necessary, slowly and carefully pour your hot vinegar into your container until the peppers are covered.
  • Cover with lid and let sit at least 24 hours before using.

In the South, you usually find pepper sauce in the middle of the dinner table beside the salt and black pepper. Don't confuse this pepper sauce with a Tabasco-type sauce; this simple seasoning is made from vinegar and whole peppers. Over time the peppers will flavor the vinegar, and the longer it sits, the better it gets! Pepper sauce is used as a seasoning and an ornamental decoration. A few dashes will heighten the flavor of black-eyed peas, all types of greens, barbecue, and many other traditional Southern dishes. Pack your pepper sauce in glass containers of any size and shape. The aesthetic value of the glass combined with the color and variety of peppers creates a beautiful conversation piece.

Number Of Ingredients 3

1 bunch of mixed peppers (container size determines amount, desired hotness dictates variety)
2 parts white balsamic vinaigrette
1 part apple cider vinegar

Steps:

  • Warm a glass container by submerging it in hot water (this will prevent the glass from cracking when hot vinegar is added). Wash the peppers well and stuff them loosely into the glass container.
  • Pour both vinegars into a medium-size nonreactive saucepan and cook over medium-high heat. When it reaches a boil, pour the hot vinegar over the peppers, filling the container. Cap the jar and set it aside at room temperature for a few days to allow the vinegar to absorb the pepper flavors. Store the sauce in a tightly covered jar for up to 2 months at room temperature.

Number Of Ingredients 9

3 large green peppers, cut into 1/2-inch strips
1 cup sliced celery
1 small onion, thinly sliced
1 garlic clove, minced
2 tablespoons vegetable oil
1 can (15 ounces) tomato sauce
1/2 teaspoon dried basil
Salt and pepper to taste
1/2 cup crushed seasoned salad croutons

Steps:

  • In a large skillet, saute the peppers, celery, onion and garlic in oil until tender. Stir in the tomato sauce, basil, salt and pepper. Simmer, uncovered, for 8-10 minutes or until vegetables are tender and mixture is thickened. Sprinkle with croutons.
