JUMBO BACON AVOCADO HORSERADISH CHEESEBURGERS

Jumbo Bacon Avocado Horseradish Cheeseburgers image

The slight kick of the horseradish-mayo gives these a great taste, and using the absolute freshest bread you can find will make it all come together beautifully. The recipe calls for telera rolls, but ciabatta or any fresh and soft roll will do if you can't find telera. You need a roll that holds its shape... You will also need more than one napkin.

Time 1h6m

Yield 4

Number Of Ingredients 15

1 tablespoon kosher salt
½ teaspoon ground black pepper
½ teaspoon seasoned salt (such as Johnny's®)
2 pounds ground chuck
4 teaspoons canola oil
8 slices Monterey Jack cheese
¼ cup butter, melted
4 Mexican telera rolls, split
2 avocados, sliced into 1/4-inch wedges
8 small butter lettuce leaves
1 beefsteak tomato, cut into 4 thick slices
½ red onion, thinly sliced
12 strips cooked bacon
¼ cup mayonnaise
2 tablespoons creamed horseradish

Steps:

  • Mix kosher salt, black pepper, and seasoned salt together in a small bowl to make seasoning mixture.
  • Shape ground chuck into four 6-inch patties that are 3/4-inch thick. Press your thumb into the center of each patty to make an indentation. Brush 1/2 teaspoon oil over each side. Sprinkle 1/2 teaspoon seasoning mixture over each side.
  • Place seasoned patties on a plate lined with waxed paper and freeze until firm, about 15 minutes.
  • Fill a barbeque starter chimney with lump charcoal and ignite in an outdoor briquette barbecue grill; heat until charcoal turns white. Spread charcoal evenly on lower grate. Add upper grate, cover grill, and let heat for 5 minutes. Lightly oil the grate.
  • Grill patties, covered, until browned, about 5 minutes. Flip and cook until second side is browned, about 4 minutes. Place 2 slices Monterey Jack cheese over each patty; cook until melted, about 1 minute. Transfer patties to a plate and tent with aluminum foil.
  • Brush 1 tablespoon melted butter over insides of each roll. Place roll halves buttered-side down on the grill; toast until golden, 30 seconds to 1 minute. Transfer to a flat work surface.
  • Top the bottom half of each roll with 1/4 of the avocados, 2 lettuce leaves, 1 tomato slice, 1/4 of the red onion slices, and 3 slices of bacon.
  • Whisk mayonnaise and horseradish together in a bowl until smooth. Spread a thin layer of mayonnaise mixture on each burger patty and place over bacon slices. Cover with top halves of rolls.

BACON SWISS BURGERS WITH TOMATO AND AVOCADO

Yield Serves 4

Number Of Ingredients 13

8 slices bacon
1 pound ground beef chuck or sirloin
1 teaspoon Worcestershire sauce
1 or 2 dashes Tabasco sauce
1/4 teaspoon dried thyme leaves
Salt and freshly ground black pepper, to taste
Vegetable oil, for grilling
4 slices Swiss cheese
4 hamburger buns, toasted, for serving
Thinly sliced ripe tomato, for garnish
Thinly sliced red onion, for garnish
Sliced ripe avocado, for garnish
Boston lettuce leaves, for garnish

Steps:

  • 1. If you will be grilling the burgers, preheat a barbecue grill to medium-high.
  • 2. While the grill is heating up, cook the bacon on the stovetop in a large skillet over medium-low heat until it is just crisp, 6 to 7 minutes. Transfer the bacon to a plate lined with paper towels and set it aside to drain. (If you prefer to panfry the burgers, reserve 2 tablespoons of the bacon fat in the skillet.)
  • 3. Place the beef, Worcestershire, Tabasco, thyme, and salt and pepper in a bowl, and toss lightly with a fork to combine. Form the mixture into 4 patties, each about 3 inches in diameter and 1 inch thick.
  • 4. When you are ready to grill the burgers, oil the grill grate well. Add the burgers and grill for about 3 minutes for rare, 4 minutes for medium-rare meat. Turn them over and grill for another 3 or 4 minutes, topping the burgers with the cheese in the last minute of cooking. (Or panfry the burgers in the hot bacon fat over medium heat for 3 minutes per side for rare meat, adding the cheese as described.)
  • 5. Place the burgers on the toasted buns, and top them with the bacon, tomato, onion, avocado, and lettuce. Cover with the tops of the buns and serve immediately.
